Peppers Out My Ears!!!

I love my neighbor. She is so sweet.
She had a bumper crop of peppers this year.
So now I have a huge bag loaded with all sorts of peppers.
THey are all different kinds, banana, green, jalepeno, habenero, chili

So mamas, any ideas? What do I do with so many peppers.

Can you freeze them or dry them?

So What Happened?

Keep the ideas coming.
My daughter just walked in from school, she is very excited and is looking up candied jalapenos right now.
We will defintely freeze some and can some.
My house smells really good right now. :o)

blanch them before freezing and try using a vacum sealer. You can dry them in a dehydrator and make pepper flakes.

I am planning on making pepper jelly for Christmas gifts. You put it over a slab of cream cheese and dip crackers into it..it is sweet and spicy...oh..so delicious. I found an easy recipe on allrecipes.com. I wish I had a crop cuz I am gonna have to buy my peppers. You have a wonderful neighbor!

Make a stir fry or chili! But I'm not sure how to dry them. I'm sure you could. I see dried peppers all the time in the store.

This restaurant that we go to gave us a bunch of green peppers just the other day so I made stuffed green peppers. They were good.

Yes, you can freeze and dry them. Every year I buy a bushel of green peppers. I cut some in long pieces for stir fry, 1 in. chunks for kabobs, and take the tops off of some and leave them whole. That way when my husband is hungry for stuffed peppers I take the frozen whole peppers out, stuff them with the meat and stick in my crockpot. My MOL decided to try some this year for stews and soups. You dont have to cook them to freeze them up. You can also can the peppers. Have fun and good luck!

I worked for a Hindu woman that would cut the stems off jalapenoes and put them in a blender with garlic, salt and pepper. Wear a mask and gloves. It makes a really great condiment to serve on the side, or to stir into soup, stew, sauces, stirfry, beans, whatever you want to add a little kick to. She froze it in ziploc bags laying flat so she had enough for the whole year. I'm sure you can do that with any kind of peppers.
