Im looking for a stuff bell pepper recipe, that is kid friendly. Any suggestions.. Also we don't eat red meat. Thanks ladies!!!!!!!!!!!!!!

Since you don't eat red meat,why not try ground turkey instead.just brown it like you would hamb.theres not as much fat in it.then mix it with long grain and wild rice.stuff your peppers,put in your baking dish.cover with tomato sauce.Iuse one that has like roasted garlic and basil for flavor.(also i blanch my peppers for about 3-5 min.they will cook quicker in oven.then just bake till fork pokes into them.Hopes this helps ...S. b.

You can take any stuffed bell pepper recipe and substitute chicken, but I would suggest using ground turkey instead.

Can be made with ground turkey instead of beef:

Stuffed Bell Peppers

6 firm green bell peppers
1 pound ground meat/turkey breast
½ onion diced
1 large tomato chopped
1 can of corn (drained)
10 chopped garlic cloves
1 ½ - 2 cups of cooked rice (equivalent of 1 cup of uncooked rice)
1 can of tomato sauce
2-3 fresh basil leaves
1 can of Rotel
7-10 sprigs of chopped cilantro (including stems)
1 jalepeno pepper (chopped)
dash of crushed red pepper
salt to taste
dash of black pepper
dash of cumin
Pam cooking spray
Shredded cheddar cheese

Cut the tops and seed the bell peppers (without tearing them) and boil them in water about 7-10 minutes….until semi-soft, take out and drain, set them aside to cool off. Saute onions and garlic in Pam for about 2 minutes, then add meat, and all ingredients (except for corn, rice and Rotel)…..but only ½ can of tomato sauce. Keep flame on medium-high and let the meat brown, stirring occasionally (about 15 minutes). Then add corn and Rotel to the meat mixture and mix. Lastly, add cooked rice. Mixture will be slightly mushy. Carefully fill the bell peppers. Pour the other half of the tomato sauce into a pan and place peppers on it. Bake at 350 degrees for about 15-20 minutes. When there is about 1-2 mins left in cooking time, take out and sprinkle the cheddar cheese and let melt for the remaing time. Done! (You can omit the jalepeno pepper if you want…..Rotel already makes it spicy).

I make them w/ground turkey. I blanch the peppers, brown the turkey, if I'm in a hurry- cook the rice too. Mix it together w/Rotel and stuff. I bake in the oven for about 25 min if all is cooked first about 45 if not. Blanching the peppers just speeds up the process.

I made these recently and not only are they low in calories... they are DELICIOUS! Even my 2 year old loved them. You could probably substitute chicken for the ground turkey if you wanted to, but they are really good with the turkey meat.

Southwest Style Stuffed Peppers

4 large green sweet peppers
8 ounces ground turkey
1/4 cup chopped onion
1 14 1/2-ounce can diced tomatoes undrained
1/2 cup water
1/3 cup long grain rice
1 4 1/2-ounce can diced green chili peppers, drained
1 teaspoon chili powder
1/2 teaspoon garlic salt
1/4 teaspoon ground cumin
1 cup loose-pack frozen whole kernel corn
2 tablespoons shredded cheddar cheese

Remove stem ends, seeds, and membranes. Immerse sweet peppers into BOILING WATER for 4-5 minutes. Invert on paper towels to drain well.

In a large skillet cook ground turkey and onion until meat is brown and onion is tender. Drain off fat. Stir in undrained tomatoes, water, uncooked rice, chili peppers, chili powder, garlic salt, and cumin. Bring to a boil. Stir in corn. Return to boiling; reduce heat. Simmer, covered, for 15 to 18 minutes or until rice and corn are tender.

Place peppers in a 2 quart square baking dish. Spoon meat mixture into peppers. Spoon any remaining meat mixture into the dish around the peppers. Bake peppers, covered, in a 375 degree oven for 20 minutes or until heated through. Uncover; sprinkle with the cheddar cheese. Bake 2 minutes more. Makes 4 servings.

You might try using red, yellow or orange bells to stuff, as they are sweeter than the green ones!
