Shred it and freeze in freezer bags. Pull out as needed for BBQ sandwiches, BBQ pizza, Tacos, Enchiladas, fried rice, chilli, soup or stew.
So I roasted a 5# pork loin and we have a lot left. What can I do with the leftover meat? Will it reheat and how do you recommend reheating it? I thought sandwiches but would imagine you'd want to jazz it up somehow. Any suggestions?

shredded pork BBQ sandwiches or
shredded pork "street" tacos - shred up the pork put it in a crock pot with spices- garlic- red pepper- a little taco seasoning- black pepper
make some Pico- guac- and lime
handmade taco shells - my family loves them
You can put it in a large pot, cover it with water and cook for a few hours on low. Add some diced onions. Then, once very soft, drain water and shread. Add BBQ sauce and stir up for a few minutes in the pot. Put in a crusty roll for pulled pork sandwiches. Yum!
Stir fry!
Or pork sandwiches (try a little barbecue sauce).
Make a couple of meat pies. Dice the pork in small pieces. (set aside) Dice carrots, potatos and celery in same size pieces. (steam veggies or par boil slightly). Chop some onion (set aside) or use the packaged pearl onions...
Use pre-made pie crust (if you don't make your own).
Make a gravy using chicken stock (or your own), season well but NOT too much salt
Mix meat and veggies together. season with salt, pepper, garlic powder (maybe a little Itilian seasoning or your favorite pork seasoning)
Bake bottom pie crust for about 5 - 7 minutes....then add mixture and gravy.
Put top pie crust (brush with egg wash) put a few vents, and bake as directed. 3250 - 350 degrees.
You will have a good supper or lunch...serve with a nice salad.
There are lots of meat pie receips on line.....a very good use of left over meat or chicken.

Put it in dinner size portions in zip locks in the freezer. Then pull out a bag, and have tacos! Just reheat it on the oven with some cumin, garlic powder, etc.
We do pork roasts all the time to have taco meat in the freezer.
I have made sweet and sour pork and pork fried rice from it.
On a sandwich with cranberry sauce?
shredded BBQ pork...the list goes on and on!! You can do anything you want with it!!

you could make a soup out of it thats what i do with my left over roast meat:) that sounds good i may need to make some lol..enjoy:)

BBQ sandwiches on toasted buns with mozz or provolone cheese.
Nachos - Shred it, spice it and put on top of tortilla chips, top with ched cheese. Bake at 350 until cheese melts and chips and meat is warm - I use a cookie sheet lined with foil.

You can also freeze some, so if you wanted to make it all into BBQ, you could freeze what you don't think you'll eat at the next meal.
We go the "pork fried rice" route. :)
-tacos (put shredded meat in a pan, add salsa, s&p). Serve with your fav taco toppings
- heat chicken broth (a little). Add some shredded meat. Add a jar of tomatillo salsa. Pour on top of rice.
- enchiladas - we like the green chili sauce and jalepeno jack cheese
Caribbean sammies! (I usually start from raw thin slice pork loin, but cooked would work with a twist). Cut thin slices (about 1/4 inch). SAUTE w/ cinnamon, garlic, sour orange juice (or 1/2 orange, 1/4 lemon, 1/4 lime), and oregano until you've got a bit of caramelizing going on. Serve on a baguette with garlic mayo, broiled jalepenos or banana peppers, grilled onions, and a bunch of cillantro!
Tacos!
Shred it, add some pico de gallo or mango salsa, shredded cabbage or lettuce, some avacado. Serve with spicy black beans and red or green rice.
(EASIEST OPTION) Similarly ; Quesadillas
Slice cooked pork into strips about finger sized. Lay out tortillas on a baking sheet. Cover HALF of the tortilla with shredded cheese (mexi 3 or 4 blend is bestest). Put pork strips on half w/ cheese. Add pico de gallo or chopped tomatoes, green onions, cillantro, on half with cheese. Turn on your broiler. Slide under broiler for 1-2 minutes (keep an eye on them, these go faster than lightning). Pull out. Fold in half. Use pizza wheel to cut into triangles.
Chili!
Chop pork and add to chili. I'd do it when the bacon, onions, and peppers are sauteeing.
It heats well in the microwave, but could slice and heat in skillet with your favorite barbecue sauce.
There are many sauces that are good with pork, cranberry, cherry. Gravy. Serve with baked sweet potatoes and a nice tossed salad or cole slaw, fried or baked apples or nice apple dessert.
I would probably do a stir fry with a ton of fresh veggies over rice. Or maybe make pork quesadillas with a lot of cheese & onions & mushrooms that have been caramalized. Or you could dice it & turn it into chili.
Shred it and put it in the crockpot with a little chicken broth. Serve (with slotted spoon) on hamburger buns with BBQ sauce. Or add a few spices and make carnitas (pork taco's). It freezes well but you will need some kind of liquid to reheat it or it gets really dry. Chicken broth works great. You could also make sweet and sour pork.
I would shred it, mix BBQ sauce & apricot preserves, cover and have pork sliders! (About equal parts BBQ sauce & preserves..)
I read all of the wonderful suggestions and wanted to add something different to the mix.
cut it up into bite sized pieces, throw it in a large pot add a little oil, some onions, peppers, and saute. Add water and let cook down for at least 1 hour. Add some additional seasonings, potatoes, turnips, parsley, carrots and any other kinds of veggies. Let cook for another hour and you have soup.
I love soup. It just tastes like love in a pot. FYI adding left over veggies is great. You get all that delicious flavor for less work.
Make sandwiches with barbecue sauce.
Mmmmmm. Cuban sandwiches. Roasted pork, grainy mustard, a slice of ham, and swiss cheese. Serve it on cuban bread or a load of italian bread. Yummo!
