Quesadillas using leftover chicken, peppers, onions, and shredded cheese (salsa on the side), veggies, and nachos!
Rotisserie chicken from the grocery store for the picky ones (hubby included), teriyaki salmon in the oven for me, rice and stir fried veggies I am going to make using leftover veggies from veggies and dip on Sunday. The last time someone asked this question and I answered it was also rotisserie chicken..........hmmm.......maybe I rely on that too often!!

I am having a big ole slice of whatever humble pie my wayward husband is making while in the dog house tonight! Probably burgers and sweet potatoe oven fries.
Baked eggplant parmesan! it's going to be my first time making it and soo far it's looking great! And I will probably make a salad on the side along with some Itlian turano bread....Man am I starving! lol..I'm drooling while typing this!
chicken and salad. it's leftovers and we are going to the gym anyways as soon as hubs get home from work.
We're doing baked chicken breasts, frozen veggie medley, and some stuffing. We use 99% fat free cream of chicken soup over the chicken the last 15-20 minutes of baking and it makes a nice sauce for it.
I defrosted chicken breasts and they have been marinating in BBQ sauce all day so my husband (hopefully) will put them in the oven before I get home - I will still have to give instructions. Vegetarian baked beans and some veggies.
OR - if you don't have anything yet - get a roasted chicken (pull it from the bone) from a grocery store, some pita bread with olives and greek yogurt - yum.

cubed pork,corn, homemade mashed potatoea and gravy, melon, cherries and bananas
Roast, cooked cabbage, homegrown tomatoes, and probably some brown rice. Watermelon for dessert.
well it's just me and the twins tonight, and they are 8 months old so they just have their bottles and baby food, so i wont be cooking dinner. our toddler is staying the night @ the in-laws and hubby is at work. For lunch though I took some boneless porkchops, seasoned them and then used the tenderizer on them, put them in flour adn then shook off the excess and cooked them in the skillet with some onions and olive oil, make velveeta shells and cheese and some corn. it was yummy, first time i cooked pork chops in something other that the forman grill, ours sadly died a few weeks ago....you could do fried chicken or baked chicked, spaghetti or lasagna, smoked sausage and fried taters, or tater tot casserole(we love that around our house), tacos, meatloaf, homemade soup, steaks, chicken alfredo, shrimp alfredo, sloppy joes, order a pizza......i could probably go on and on, but then i'll start getting really hungry...lol
I have hot dogs buns in the fridge we need to eat and frozen dogs in the freezer so I may do that with some mac and cheese and bananas....lolololol! The kids will love it but luckily hubby is pretty easy going and never complains about what I cook!!!

I told my SIL i was craving indian food(darn preggo cravings), she told me today she made some and wants to bring it to me. Im super excited...........no one ever cooks for me unless i pay a waitress to get it!
Some leftover roasted chicken, Totally stuffed baked potatoes and a HUGE salad..
Tonight was pork chops but some of our favorites are:
1. Chicken, stuffing, and cream of mushroom mixed together. Just cook chicken til done on stove, then add stuffing ( make just before chicken is done completly), and finally the cream of mushroom.
2. Cupcake meatloaf. Make meatloaf in the cupcake pan. Cook time is about 12-15mins. The tops get browned and its cooked all the way. Put a pound of ground beef in bowl, add stuffing mix straight from the box, cup of water, and pureed sweet potatoes (baby food is a my cheat to add more vegetables without family tasting it). Mix together . Set aside and spray the holes with cooking spray for easier removal and clean up. Now fill cupcake holes 3/4 full. Use a spoon to make a indent on the top of every loaf and swear spagetti sauce on top of loaf. When cooked all the way, top with mexican 4 cheese and put back into oven for a couple of minutes to melt. Its not greasy like other meatloafs. Its fast
I made manly stew in the crockpot with egg noodles.
we just ate fried potatoes.
3 red potatoes
1 sweet potato
1 red onion
1/2 green pepper
1/2 red pepper
1 zucchini
1 summer squash
1 can of black beans
1 can of corn
1 bag of frozen broccoli
1 bag of frozen corn
makes enough for 4 to eat and I have leftovers for homemade veggie pasties for lunch the next day.
Leftovers! I made hash from the leftover Sunday roast beef. It was yummy! : )
Twice baked potatoes and salad.
Pot roast in the crock pot, mashed potatos and gravy, and broccoli cheese casserole.
We had flank steak marinated in a Kalbi sauce, baked potatos, and peas. For appetizers (or for the kids) we had grapes, carrot sticks, and cut up cucumbers.
We had guests for dinner or it would have been tacos. :) lol
Honey mustard glazed chicken breasts that will be served on a whole wheat bun (Probably with lettuce, tomatoes, whatever people want on it), and a fruit salad on the side.
