What was for dinner last night? What is for dinner tonight? I am hitting a brick wall on new or old idea's for dinner. I have a lot of fresh ground beef, because my father runs a cattle farm.

yesterday, I was attending a job fair to see if I could get new candidates...i had dinner cooked before I left - I made beef enchiladas...

Tonight? Have a choice between chicken breasts and beef...can't make up my mind as I am still full from lunch today....another candidate/networking luncheon and it was VERY FILLING!!! So my taste buds are waiting for my husband to get home and let HIM decide...the kids just want Mac 'n Cheese....man I love my kids!!

This week's menu:
Kung Pao chicken with stir fry veggies and rice
Chicken breasts marinaded in Italian dressing, grilled, on green salad with feta, tomatoes and olives
Spaghetti & green salad
Sloppy Joes, jello, leftover salad
Maple BBQ chickn, corn on cob, roasted potatoes

My FIL runs a cattle farm as well, so we have a freezer full of ground beef. Here are the recipes we usually do with ground beef:
Meatballs (many different variations. Love the Italian meatballs from Bon Appetit, love the sweet and sour meatballs from ourbestbites.com.
Meatloaf
Hamburgers or Italian burgers (with mozzerella and marinara on them)
Taco salad or taco soup
Sloppy Joes
Spaghetti with meat sauce
Hobo dinners (any meat including a raw ground beef patty) in tin foil topped with potatoes and any chopped veggies and herbs or seasoning you like, close up the foil, bake around 400 for 45 min.

Well, it is about 55 here and raining. And I just spent an hour standing in the rain, at my son's football game. I can't believe they play football in the pouring down rain. So I changed dinner plans from chicken breast, to soup!! Yep, I'm waiting for my husband to get home with the potatoes. It's corn chowder tonight!! Last night was whole chicken breast from Whole Foods (so yummy when its from behind the counter) and rice.

Last night I breaded Perdue chicken tenders in Panko bread crumbs and shallow fried them in olive oil. I took new red potatoes and little blue potatoes and sliced them very thin, (I didn't peel them), tossed them in olive oil and salt and pepper and oven fried/roasted them. I then felt incredibly guilty for not serving a salad, but had another glass of wine and quickly recovered. Tonight, I am fixing stir fry with-chicken broccoli, red onion, garlic, spinach. I fried the onion, then the chicken then-added the veggies. I make a sauce with equal parts of rice wine vinegar, chili sauce, sugar and soy sauce-use a little crushed red pepper flakes, cayenne OR sriracha sauce for kick. Do not use all three unless you like it hot, hot, hot! Serve over brown rice-the green veggies are in there-so have a glass of wine-and forgettaboutit! Bon Appetit! When I have a lot of fresh ground beef-I stuff peppers or I make a big pot of meatballs for meatball subs. I open the rolls, brush them with olive oil (buy this in seriously large tins), toast them and then I put the saucy meatballs on and melt cheese all over a third of the county-they are so good! Hand everyone a vitamin pill, pour yourself a glass of wine, and to hell with the..............salad!

Last night we ate out due to soccer and dance falling on the same night. (making frowny face as I type). Tonight, though, nothing to do so we are having Shepard's Pie. It's a nice, easy recipe that takes about half an hour. If you're interested, I can type it up later when I'm at a keyboard.

I have another easy recipe for beef and sweet potato turnovers:
Brown half pound ground beef with 2 cloves garlic. Add one grated sweet potato and two cups baby spinach (I use 1/2 cup or so frozen peas - my kids don't like spinach); season with salt and pepper. Cut 2 sheets frozen puff pastry (thawed) in half. Divide beef mixture and 1 1/2 c grated cheddar among the 4 pieces of dough; seal the edges. Bake @ 375 until golden, 25 - 30 min.

Ginger pork chops, rice, brussels sprouts and salad.

Tonight is chicken .... probably in a stir fry to use some veggies we have in the crisper. Or a vindaloo with potatoes.

Actually, DH made his own dish with chicken breasts, fresh lemon basil from our garden, tomatoes, two kinds of cheese, and various seasonings and vinaigrette. Next time he might use onion, too. It was pretty good.

I was lazy last night... grilled cheese and soup! It was good though, I had good bread, deli sliced roast chicken and havarti and pepperjack cheese. I slathered them up with real butter and busted out the griddle so they toasted up perfectly. I served TraderJoes butternut squash soup with it but what it really needed was Campbell's tomato.

I planned another low prep meal for tonight... since I was at Trader Joes I am pretty much duplicating what they had at the sample stand whole wheat pasta, jar of Alfredo sauce, jar of sundried tomatoes, parmesan cheese, and their chopped cooked chicken. I have a bag of romaine and a some salad dressing and whatever other veggies are left in the fridge for a salad. I'll probably copy another trick I learned from Trader Joes, putting their pitta chips on a salad when you have no croutons. God bless Joe, whoever he is.

I made this the other day, and it was really quite good!

It's a greek dish, and pretty unusual based on what my family usually eats. I was a little nervous looking at the recipe, since my culinary skills are limited... but it was really easy to make. :)

I'm a day late in answering but last night was leftovers. Wednesday was burritos. I have been trying to use my crockpot more. Monday I had a pork loin (got it for so cheap at Wal Mart !) that I cooked. 1/2 was used for pork tacos and 1/2 was eaten as sandwiches for lunches during the week. Tuesday I put some chopped steak in the crockpot with cream of mushroom soup and Lipton soup mix and cooked all day. Served over rice. As far as hamburger meat goes we eat: tacos, burritos, hamburgers, goulash, spaghetti, chili.

Wow. Everyone cooks a lot more than I do. Last night was leftover rotisserie chicken. Tonight we had marinated pork tenderloin with rice. My husband is out of town. I had stir fried broccoli and tomatoes from the farmer's market (yum), one kid ate the broccoli raw and one kid just had a Colorado peach. Your state's peaches are the best. With ground beef we would probably just have hamburgers or tacos. I have a fussy group. If you want to be a little more creative Rachel Ray (spelling?) has a really good recipe for Chipotle Sloppy Joes that you can probably find on her website. I make them periodically for the cabin.

My Grandma used to make this stew !

Coat bottom of pan w/ non-stick spray
In a big pot, pour in 3 large Campbell's tomato soups.
Roll chop meat (1/2 lb (or more if u want thick stew) into small meatballs and add into soup.
Wash and cut up 6 -8 potatoes into 2 inch cubes and add to pot.
Mix every few minutes to avoid it sticking to the bottom of the pan !!!

Simmer on medium until meatballs/potatoes are done.

Turn off heat. Stir in already cooked and drained green beans.

It's pretty simple !

Hamburger "steaks" with a really good mushroom gravy, mashed potatoes, and stewed okra & tomatoes was last night.
Tonight: chicken and sausage gumbo, with french bread.
Tomorrow: shepherd's pie, steamed green beans
I looked through your replies and there are a lot of good thoughts. There are a ton of ways to make burgers to make it NOT just the same ol' same ol'. I do "firecracker burgers" made with curry and a yogurt based sauce that's neat. Sometimes it's just plain "normal" burgers seasoned with montreal steak seasoning, sometimes a ranch burger with ranch seasoning and loads of veggies, or sometimes with lipton onion soup mix, but our favorite is taco burgers (add chopped onion, jalepeno, shredded cheddar, some rotels, and taco seasoning to the meat before making patties, and once cooked serve with lettuce, tomato, and guacamole).
You could make a big pot of homemade chili and if there's leftovers serve it over grilled (outdoor! nothing beats the outside taste) hotdogs, or if there's enough you could make a frito pie (I haven't had a proper one made in years...I think I'll do that in a couple weeks!)....while we'll eat regular meatloaf sometimes, mexican meatloaf is an interesting variation. (2lbs of beef, 1 packet of taco seasoning, onions, cheese, egg, however you normally do it but instead of breadcrumbs use ground up cornchips and instead of ketchup, use salsa. The last 10 minutes pull it out and top with a little more cheese).
A couple things that weren't already listed: dirty rice and SOS. I have a fantastic stuffed eggplant recipe that usually uses ground lamb, but I bet it'd be ok with ground beef as well. If you're interested I'll send the recipe.

Last night we had grilled beef tenderloins with mushrooms and baked potatoes. It was a rare treat--the tenderloins were in the clearance section of Kroger for just $7.
Tonight were are having protein smoothies with beets, banana and apple.
One of the few ways I like ground beef is in chili. Have you had that?

Last night I made rigatoni with sausage and garlic bread. I have to admit I've been in a real slump lately as far as cooking. We get home late Mon-Thurs so we usually get take out or it's something really simple (sandwiches or salad). After we ate my 8yr old son said "thanks Mom, that was delicious"...lol! So, now I'm going to have to make more of an effort to cook a real meal everynight. Tonight, we're having roast, noodles, mashed potatoes and green beans.

Last night we had a new dish...it was long grain and wild rice, chicken, and Asian seasoned steam veggies in a casserole type dish. It was yummy and fairly healthy! Everyone in my house loved it.

Tonight we had taco's in a pasta shell - yum! I made that last night too since we were out so late with kids activities tonight.

Last night was salads with imitation crab meat. Hubby made our version of sheppards pie for dinner tonight (ground beef, spaghetti sauce, corn, green beans - throw in a lasagna dish, top with instant mashed potatoes and cheese and line the edges with raw biscuit dough. Bake for 30 mins).

I found a recipe using biscquick for making sloppy joe pie, italian pie and buffalo chicken pie. Those would be worth looking up!

Spagetti tacos? Lettuce wraps? Taco salads? Nachos? Next week we're having waffles and chicken...EASY meal..chicken nuggets and premade frozen waffles drizzled with syrup. Not the healthiest but throw in some juice, milk and fruit and we're set!

Last night we had home made chicken fajitas.

For the ground beef, have you ever made tater tot caserole? Super easy, and a ton of different ways you can do it. I just brown the beef, drain, mix in a can of cream of mushroom soup. Place in a caserole dish, cover with any kind of cheese you like that melts good (my kids prefer easy melt, I prefer cheddar), cover with tater tots and bake until the tater tots are done and cheese is melted. I prefer my tater tots crispy, so I always bake them on their own first, then put the whole casserole in the over just long enough for the cheese to melt. Add a veggie on the side, and supper is done!
