I don't know if this would be like banana bread but what about banana pancakes?
anyone have an idea of what to do with 3 ripe, near overly ripe bananas? we're burned out on banana bread and not much for smoothies. any other breakfast food ideas?

I had the same dilemma last week...I had SIX very ripe bananas! I mashed them up and added them to buckwheat pancake mix. I just quadrupled the recipe (minus the honey), using the bananas as sweetener. We ate them for breakfast all week. Very yummy, and it made morning mealtime easy...YEA! Hope this helps!
I'm always looking for ways to use up my ripe bananas also. I've made the bread, muffins and the smoothies. I saw a recipe on food network for a banana stuffed french toast that I may try next. Another idea is not for breakfast, but how about banana pudding?

I have peel my banannas and cut them up to put into a freezer contatiner and when I need a little bit of bananas for cereal to go on peanut butter/honey or syrup sandwiches I use them.
this way they do not turn black like they can when you leave the peeling on and freeze it.
Banana pudding if you use the box kind of homemade banana pudding slice some of it into the pudding
fruit salad with can of fruit cocktail and slice bananas up in it and other kinds of fruit with whipped cream mixed it all up with. yummy
for school lunches, if they are frozen then by the time it lunch time it will not be frozen.

You can freeze your ripe bananas--just throw them in the freezer with peel and all--and leave them there until you are ready for banana bread again.
I made a breakfast cereal with oatmeal, blueberries and strawberries with our over ripe bananas. My husband and 7 month old loved it. You could freeze the extra bananas till you need to use them.
If you're looking for a breakfast item, try banana muffins. The recipe I use is for "anything muffins"--basic muffin recipe that I use is
1 1/2 cups flour
1/2 cup sugar
1 1/2 teasp baking power
1/4 teasp baking soda
1/4 teasp salt
1 stick melted butter
1 cup sour cream
1 egg
Mix dry together, then wet in separate bowl. If I were using bananas, I'd mash them up and put them in the wet bowl. Then mix wet with dry (don't overstir) bake at 400 degrees for about 20 mins.
I love this recipe because you can change it to use whatever you have on hand. They also freeze really well.
