I love my grandmother's recipe. I wish she were here to know how often I make her bread! It's one of my favorites. And I don't bake much!
1 3/4 C flour, 1/4 tsp baking soda, 1 C ripe mashed bananas, 2 tsp baking powder, 1/4 tsp salt, 1/3 C butter (softened), 2/3 C sugar, 2 well-beaten eggs
sift together (I just stir I have never, ever sifted) flour, baking powder, baking soda and salt in one bowl. In another bowl, cream butter and sugar, then add eggs. In another bowl mash bananas.
Add flour mixture to the sugar/butter/egg mixture alternately with the bananas. Turn batter into greased loaf pan. Bake at 350 for 45 minutes or until done.
As soon as it comes out of the oven, I turn the pan over and dump it out onto a cooling rack.
(fyi - super over-ripe bananas make the bread too dark. I use ripe bananas but not overly mushy ripe.)
And now that I write this I see I have ripe bananas, so..... I think I'll make some too!
