I am looking for universally appealling fish recipes...my husband is the pickier eater, not the kids! Something easy would be great...
P.S. We have shellfish allergies in our family. Thanks!!

BROILED TALIPIA PARMESAN

Ingredients
1/2 cup Parmesan cheese
1/4 cup butter, softened
3 tablespoons mayonnaise
2 tablespoons fresh lemon juice
1/4 teaspoon dried basil
1/4 teaspoon ground black pepper
1/8 teaspoon onion powder
1/8 teaspoon celery salt
2 pounds tilapia fillets

Directions
Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil.
In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.
Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook

This recipe is easy and delicious. It's a hit with my family of picky eaters.

My Family eats alot of fish. Our favorite way is to cook it on the grill. I either season it like a steak or use Lemon pepper. (I also have a pickie husband). I usually cook it untill it flakes. We use salmon, tilapia, catfish, whiting, ect...
I also bake tiliapia with olive oil salt pepper, garlic crushed peacans and sun dried tomatoes. Easy and taste great. (350 untill flakes)

Fish " corndogs"
2 cups corn oil in pan ( start heating this on med high while you make the batter)
2 pounds firm white fish cut into lengths about the same width as a hot dog
1/2 cup corn meal
1/2 cup regular flour
1 tsp baking powder
2 tsp salt
1 egg
3/4 cup milk

mix the dry ingredients then add the egg and milk. Beat well. Shove popsicle stick or shish kabob skewer into the pieces of fish. Dip in batter. Place 2-3 sticks at a time in the pan and turn as they brown.

Sauce
1/2 cup ketsup
1 tsp lemon juice
2 tsp horseradish grated fine
1 tsp salt
Mix all ingredients well and serve with the fish corndogs

My favorite "easy" fish recipe is to essentially make tilapia "parm"-
- Italina breadcrumbs
- {Parm cheese
- 1 T of Italian seasoning
- S & P
* combine like you would to coat chicken and do the same with the fish (light egg wash to stick)
- bake the fish at 400 for 15-20 minutes and you will get crispy fish with tons of flavor
* I serve it either on toasted bread with sauce and melted cheese or with pasta a sauce!

All of my picky eaters love baked salmon filets. I make it in our toaster oven but a regular oven works just as well. Salmon steaks (cut across the fish) are usually dry, as are wild salmon filets. If you get farm raised fresh salmon filets, they melt in your mouth. Put the filets in a lightly greased casserole dish or other pan with sides. Dot with butter. Sprinkle some dill (or if your picky ones won't eat dill, you can use something like Season-All, but don't over do it because it has a lot of salt), then squeeze on some fresh lemon. Pop it in the oven at 375. It takes about 10 minutes. When you see white stuff coming out, check that it flakes easily with a fork all the way through. Salmon has a lot of Omega 3's which is really good for you.
