Fish Recipes Please

I have never been a big fish eater, probably because I did not grow up eating it in my family. I do order fish out at restaurants and
it's hit or miss if I like it. If it is too fishy tasting I don't like it. I would like to start offering fish as an alternative family meal. I have looked on line for recipes but almost all of them are some form of soy sauce and ginger. We would probably like that but I would like to have more than one recipe. So I am hoping to get some advice about fish, recipes, rubs or spices, which fish are mild tasting and how do you fix it. I have been steaming a lot of vegetables lately and it would be nice if I could also steam the fish. Help!

A great seasoning and very easy to use is Old Bay seasoning. I place frozen Talipia in a baking pan drizzle with olive oil and sprinkle Old Bay over it. Bake for 30 mins at 350. Super easy and very yummy!

The Legal Sea Food cookbook is fabulous. The ingredients aren't crazy and there are plenty of recipes of multiple kinds of fish and shellfish. They even have a leftover section so you know what to do with the leftover ingredients. It also offers suggestion and some recipes for side dishes. Even if you aren't a fish lover this cookbook will give you ideas that incorportae seafood without it being all you taste.

Like another person said, I buy the pre-packaged tilapia fillets from Costco or Sams. These are easy to unthaw (put them in hot water when you get home for 10 mins). This recipe is my daughters (3 years old) favorite!

Ingredients
1/2 cup Parmesan cheese
1/4 cup butter, softened
3 tablespoons mayonnaise
2 tablespoons fresh lemon juice
1/4 teaspoon dried basil
1/4 teaspoon ground black pepper
1/8 teaspoon onion powder
1/8 teaspoon celery salt
2 pounds tilapia fillets

Directions
1.Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil.
2.In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.
3.Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.

THE BEST FISH EVER! I make it with wild rice or rice pilaf and steamed veggies! Hope you like it too!

OKAY SORRY! Here is one more that I have made and it is easy and YUMMY!

Ingredients
4 (4 ounce) fillets tilapia
salt and pepper to taste
4 tablespoons butter
3 cloves garlic, pressed
4 fresh basil leaves, chopped
1 large tomato, chopped
1 cup white wine
Directions
1.Preheat a grill for medium-high heat.
2.Place the tilapia fillets side by side on a large piece of aluminum foil. Season each one with salt and pepper. Place one tablespoon of butter on top of each piece of fish, and sprinkle garlic, basil and tomato. Pour the wine over everything. Fold foil up around fish, and seal into a packet. Place packet on a cookie sheet for ease in transportation to and from the grill.
3.Place foil packet on the preheated grill, and cook for 15 minutes, or until fish flakes easily with a fork. Open the packet carefully so as not to get burned from the steam, and serve.

Now I am done :)

This is one of my family's favorites. Sweet and spicy - Cajun Maple Fish...YUM! I don't know if you can steam it though.

You can you use whatever kind of fish you wish. I prefer tilapia, but mahi-mahi okay too.

I use tilapia. I line a cookie sheet with foil. (easier to clean) I place the fish on the sheet and sprinkle cajun seasoning on it. You can make it as hot or mild as you want depending on the amount of seasoning you add. Bake at 350 for 20 minutes. When you place it on your plate, add a little spray on butter.

This works with either frozen or fresh tilapia. If it is frozen, I do allow it to thaw prior to baking. You can place the frozen bag into hot water to get it to thaw quickly.

I make fish for our family 2 ways....

baked - put fish in a glass baking dish
add a tiny bit of water just to give a little moisture (not even covering half of the bottom)
sprinkle with lemon juice (not a lot)
season with paprika and a little black pepper
dot with butter/margarine - I use a little of both
Bake at 350 until done - approximately 15 minutes little longer if fish is frozen

baked fish another way-
put fish in glass baking dish
add little water (as above)
coat fish with miracle whip
sprinkle (to cover) cracker crumbs all over fish
sprinkle with a little lemon juice (as above)
season with pepper and either paprika or parsley or both
dot with butter/margarine (I use both)
Bake 350 or 375 for approx. 15-30 min. (until done)

Place a FRESH white fleshed fish (whole or filleted) in a tinfoil and sprinkle extra vergin olive oil and salt. Close the tinfoil and cook in oven for about 20' depending on how big is the fish. If you want you can add black pepper or rosemary but you don't have to, you'll be surprised how delicious it's gonna be just as it is (provided it is SUPER fresh). Add diced potatoes roasted in oven with e.v. olive oil, salt and 2 cloves of garlic if you want a good pairing with a filling side. Serve the fish with thin slices of lemon and a good white wine. Buon Appetito Italian style!

Baked Basil Salmon

2 tsp. basil
4 cloves garlic, minced
12 Tbsp. olive oil
1/2 tsp. salt
1 tsp. pepper
2 Tbsp. parsley
2-16oz. cans salmon (fresh would work too)

Remove bones from salmon. Place salmon in an 8x8 baking dish. Set aside. Mix remaining ingredients pour evenly over salmon cover with foil (make a slit in foil for steam to escape) Bake at 375 degrees for 20 minutes. Serve over pasta (I prefer linguine)with Alfredo sauce (below)

Quick Alfredo Sauce

1/4 c. butter
1 c. heavy cream
1 clove garlic, minced
1-1/2 c. Parmesan cheese
1/4 c. fresh parsley(or 2 Tbsp. dried)

Melt butter is sauce pan add garlic, cook 2-3 min. Add remaining ingredients bring to a boil and reduce heat, simmer 5-6 minutes. Sauce will thicken as it cools.

This is how I fix salmon, but it would work with any fish. Take a sheet of aluminum foil big enough to enclose your fish, brush the foil with olive oil, layer thinly sliced onions and lemons, fish, then more onions and lemons, sprinkle with dill. Wrap fish in foil, you may then either grill, bake or steam the foil wrapped fish.

Good old lake Erie Perch is good baked in the oven with a little beer in the pan or put fish in foil. Can also use Panko bread crumbs.

The milder fish are: Tilapia, Mahi Mahi, and perch.

Salmon will taste very fishy and smell the house up for days. :-{

You can make fish cakes too. 1/2 to 1 cup crushed corn flakes, 1 egg, 1 tablespoon flour and 1 can tuna or salmon (boneless) mix up and form into cakes. (if the cakes fall apart, add a little bit more flour until they hold together) Fry in pan or bake in oven.

My favorite is catfish---firm texture, not "fishy", and not expensive. It doesn't require any oil in the pan just spray, I cook it quickly with just seasoned salt and lemon pepper on each side----delicious.

My husband doesn't like fish but he actually requests this meal, and I don't mind making it because it's so simple. Take some BBQ potato chips and crush them up into crumbs. In a baking dish, spray the fish (our favorite is tilapia) with a little bit of Pam. Cut some potatoes into fourths and put in the pan with the fish. (Squash is also good if you have some.) Sprinkle with pepper & sea salt, then crumble the BBQ chips on top to cover everything. Bake at 425 for 30 minutes or until the fish pulls apart easily with a fork.

I tend to buy the prepacked frozen salmon or tilapia the grocery store offers. One quick recipe that is a go to for me is with either Tilapia (very mild) or Salmon (I find I don't like the taste of Atlantic salmon very much on it's own, but I wouldn't use this recipe with Wild Salmon - which is more expensive anyways). I am guessing on these measurements for this recipe. It's one of the few I just "wing" it.

Chopped Almonds (I use roasted whole salted almonds - you can use whatever you prefer) - perhaps 1/2 cup?
Dijon Whole Grain Mustard (probably a tablespoon or less per fish)
Salt/Pepper
Olive Oil - use a little bit on the baking sheet so the fish doesn't stick

I rub the mustard on the fish (you can do both sides) - you can add some pepper too if you like (and salt if you don't used salted almonds). Then I coat the fish in the chopped almonds (both sides if you put the mustard on both sides). Bake at 400 for 20 minutes. It's very simple and if you don't like the taste of the fish, this can cover it up if you coat both sides of the fish with almonds/mustard. My son year old loves this (nearly 2 years old). I find we've also used this on Chicken (okay) and pork tenderloin (great!).

This recipe is wonderful and easy!

Pecan Crunch Alaskan Salmon
2 TBSP. Dijon mustard
2 TBSP. melted butter
4 tsp. honey
1/4 cup fresh breadcrumbs (I use canned crumbs)
1/4 c. finely chopped pecans or walnuts
2 tsp. chopped parsley
4 (4-6 oz.) Alaskan Salmon flliets

Mix mustard, butter and honey in a bowl; set aside. Mix breadcrumbs, pecans and parsley in a bowl; set aside. Season each fillet with salt and pepper. Place on a lightly greased baking sheet. Brush each fillet with mustard mixture. Pat top with breadcrumb mixture. Bake at 450 degrees for 10 min. per inch of thickness. Serve with lemon wedges.

Hawaiian Fish

Any type of white fish you like, lay on big piece of tinfoil (enough to wrap fish in)

Mix 1/2 C. Mayo, 1/4 Black Bean Sauce, 1/4 Hoisen Sauce and spread all over lightly salt and peppered fish. Cut one lemon in thin strips and arrange over fish. Cut up some gr.onions and a couple tomatoes and sprinkle on top. Fold tinfoil up tight. Bake at 350 for 20-30mins. Or throw on barbecue until done. Very tasty!

cesar croutons
salted crackers
eggs
lemmon pepper sasoning

mix the egg with lemon pepper and dip the fish(tilapia) and blend the croutons and the crackers and pass the fish and then fry in little olive oil

i love ceviche

2 lbs of firm, fresh red snapper fillets (or other firm-fleshed fish), cut into 1/2 inch pieces, completely deboned
1/2 cup of fresh squeezed lime juice
1/2 cup of fresh squeezed lemon juice
1/2 red onion, finely diced
1 cup of chopped fresh seeded tomatoes
1 serrano chili, seeded and finely diced
2 teaspoons of salt
Dash of ground oregano
Dash of Tabasco or a light pinch of cayenne pepper
Cilantro
Avocado
Tortillas or tortilla chips

In a non-reactive casserole dish, either Pyrex or ceramic, place the fish, onion, tomatoes, chili, salt, Tabasco, and oregano. Cover with lime and lemon juice. Let sit covered in the refrigerator for an hour, then stir, making sure more of the fish gets exposed to the acidic lime and lemon juices. Let sit for several hours, giving time for the flavors to blend.
Serve with chopped cilantro and slices of avocado with heated tortillas for ceviche tacos or with tortilla chips.

Serves 4-8.

i use tilapia filets i just broil in the stove and then i drain the water mix everything with enough lemon nad let it stand in the refrigerator for about 30 min least

Fish are simple to make and very healthy. My kids' favorite recipe is very easy.

I usually use salmon fillets or tilapia but have used many kinds over the years for variety. Put bit of oil in grill pan (any pan/skillet will do) and heat over med-high heat. Sprinkle salt and pepper on both sides of fish, lay in pan. Cook on 1 side for a few minutes (really depends on thickness, it doesn't take long, less than 5 min per side) until about half-done. Flip it over and cook until done. Remember with fish you only turn it over once and it's really easy to overcook it. Once you can flake the middle easily with a fork, it's done. Just before it's done, I'll squeeze lemon juice over it. Sometimes I'll put thin slices of lemon on the top of the fish as it cooks.

That's it. Quick and easy. And you can taste the fish, not sauces. It's done about the same time as veggies and rice.
