I eat this about 3-4 times a week and I love it! I grab fresh herbs from Central Market or sometimes Walmart will have some good fresh ones. Keep them in a plastic bag covered with damp papertowel to keep them vibrant. Different herbs will change up the taste of the meal as well...so I keep a variety.
Take a piece of tinfoil big enough to make a pocket.
Put in a filet of any fish (I use haddock because I'm from Boston and to me it's worth the price! but I've been able to use Cod too) any fish will work
Cover with fresh herbs
Fresh Lemon Juice
Fresh Garlic
Salt/Pepper to taste
Scallion
Cover up tightly and put on a cookie sheet.
Now take tinfoil and make another pocket and half red bliss potatoes/diced onion/squash/zuccinni/peppers or any veggie, fresh garlic, herbs, olive oil and wrap tightly and put on the cookie sheet. I make one pocket of each per person and bake on 350 for 25 minutes. Potatoes or hard veggies like carrots may take a few moments longer.

When fish is done I top with a tsp of fat free sour cream spread over top, fresh diced tomatoes and a few crumbles of reduced fat feta cheese or grated parmesan. (for feta I pop back i the oven uncovered for 2-3 min until melted!)
