Thought these would be a nice treat. The recipie I came across boasts that it doesn't include any flour. Is that a plus? Have you made these? If so, is the dough super sticky? Should I cool it before working it into balls?

I'm not sure what recipe you have but my sister made flourless peanut butter cookies with my mom and said they were really easy to make. My mom didn't mind doing it again so it must not have made a huge mess or been a problem so maybe not too sticky. The plus is gluten free, which is why my sister wanted to try them. They just spooned the "dough" onto the pan, no shaping.

I have never made pb&j cookies, but Ina Garten has a recipe for pb&j bars that is great--always a hit with kids and adults.

I would think that your plan to chill the dough would work well if it turns out to be sticky.

I've made peanut butter cookies that were just peanut butter, sugar, and an egg. I dropped them by spoonfulls onto a buttered cookie sheet and then pressed them down a little with a fork before baking.
They came out great and super easy.

I had been requested to make them twice this past year for school. They were a huge hit. I found them to be very sweet but good. No need to cool, after the "forking" they were just right. If it's the same recipe (Uncle somebody or another), be sure to double it.
