Does anyone have a tried and true (low fat/calorie) recipe for Mahi-Mahi?

My husband does it on the grill in foil packets (use heavy duty), about 10-15 mins per inch thickness:

My husband's grilled version:

heavy duty foil
one fillet per piece of foil
about 1/2 cup shredded carrots over top
3-4 Tbsp (Tastefully Simple) Vidalia Onion Dressing
grill

I bake, and this one translates well from Orange Roughy to Mahi Mahi, just increase the bake time 5-15 mins depending on thickness of fillets:

Baked Orange Roughy Italian Style

¼ cup Italian bread crumbs
2 Tbps grated Parmesan Cheese
2 Tbsp grated Romano Cheese
1 Tbsp Garlic Garlic™ (Tastefully Simple)
¼ tsp Seasoned Salt, if desired (TS - lower in sodium & lots of seasonings in addition to the sea salt)
1 pound Orange Roughy fillets (or other, white, mild fish)
¼ cup light butter, melted (or spray each side of fillets with cooking spray before coating)
1 Tbsp chopped fresh parsley, if desired

Preheat oven to 400 . Spray medium baking dish with cooking spray. In shallow bowl, mix first 5 ingredients. Brush both sides of fillets with melted butter, and dredge in the dry mixture. Arrange fillets in a single layer in dish, sprinkle with parsley and bake 10-15 minutes until fish flakes easily with fork.

This one, too, translates well from Tilapia to Mahi Mahi, but definitely increase the baking time (I increase the temp to 425, too) because of the difference in thickness... Dried Tomato & Garlic Pesto Mix is the one I cook with the most, in addition to our Garlic Garlic...

Dried Tomato and Garlic Tilapia

4 tilapia fillets
3 Tbsp. Dried Tomato & Garlic Pesto Mix (Tastefully Simple)
1 cup Italian-seasoned breadcrumbs
2 Tbsp. olive oil
1 lemon

Arrange tilapia in greased baking dish; sprinkle with Dried Tomato & Garlic Pesto Mix. Top with breadcrumbs; drizzle with olive oil and juice of lemon. Bake at 375° for 25 - 30 minutes or until fish flakes easily. Makes 4 servings.

I am not a fish person and i don't know how low fat this is....

On vacations my inlaws grill it in tinfoil with butter, lemon juice and salt/pepper. Everyone seems to love it.

Mahi mahi is excellent! Not sure about the nutrician info, but it most likely depends on how it is prepared.
