I don't have a recipe really, but I bake my chicken TWICE as long as normal. Its really soft and practically falls off the bones and everyone loves it. I hope you find something that he likes. Good luck!
I am hoping some of you can give me a great, but basic baked chicken recipe.
My son is a very picky eater, but loves the chicken at Dickey's and Chipolte. I would love for him to like chicken that I make.
I've tried cooking chicken at home and he never likes it! Do you have any suggestions?

We grill our chicken.
Spray thighs or legs with P., salt and pepper it, and cook it over indirect heat for an hour. It comes out perfect, and I find that kids like to be able to pick up food.
My hubby makes the best "Honey Bunches of Chicken" ever.
Crush up Honey Bunches of Oats in a baggie and smother the breasts in it (we use boneless skinless extra tender)
Bake in oven until done. (at 350 for 40 min)

I have two:
Very Basic
Spray baking dish with non-stick spray
Dredge skinned, trimmed chicken in flour seasoned with salt and pepper (add a little poultry seasoning or sage, if you like)
Cut up a whole stick of butter, and place pieces on top and around the chicken.
Bake.
Chicken Parmesan
Spray baking dish w/ non-stick spray.
For coating: bread crumbs or corn flake crumbs, mixed with shredded parmesan cheese.
Dredge chicken in beaten egg and then coating mixture.
Place coated chicken in dish, bake, covered.
Serve with noodles and sauce of your choice.
I place each chicken breast on a sheet of foil, spray with a little cooking spray or olive oil, add a tbsp of water, a spread of dijon mustard on top then wrap up the foil into a little packet. Bake at 350F for about 45 min. My family goes crazy for it, and it comes out so moist and tasty. Of course you can use Italian seasoning or whatever you want instead of the mustard.
I guess by the Chipotle's chicken, you mean the pulled chicken that they add to fajitas, etc? A crockpot recipe with some salsa, or mexican seasoning will probably help you accomplish that.

What about buying a roasted chicken at the grocery store? My kids love it! My favorite chicken recipe is: Take chicken breasts and marinate them overnight. The marinade is 2/3 vegetable oil to 1/3 soy sauce to cover and garlic salt, thyme, pepper and a teaspoon of ground ginger. Then cook on the grill or grill in the oven. It is very tasty, tender and juicy.
When I need a recipe and my recipe books don't satisfy the needs, I go to allrecipes.com. They have a paid portion and a free portion. I'm on the free part and it works great.

If I am roasting a whole chicken I stuff half an onion in the cavity, then baste it with butter and season with poultry seasoning, or I stuff it with half a lemon and a couple cloves of garlic and baste it with lemon juice and olive oil and season with oregano or Greek seasoning.
Chicken pieces (with or without skin) I marinade in lemon juice, olive oil, garlic and Greek seasoning, then bake, or grill.
One of our family favorites that my kids really like is to marinate the chicken in Italian dressing, we like the zesty italian & just bake it that way. It's super easy and tastes really good.
Also check pinterest there are TONS of awesome recipes on there. Another kid friendly site is Weelicious, she has lots and lots of kid friendly recipes on there. My girls love the chicken nugget recipe I got off of there.
I have the most simplest and yummy baked chicken recipie ever. Everything I cook is simple, tasty and prep time is no longer than 5 minutes. Sometimes my kids cook dinner. Train them young. lol. Here is a simple, tasty chicken recipie that my kids love to make.
Season the chicken with accent salt, light salt, garlic powder and pepper.
Place chicken and baby carrots in a baking dish. Pour on some italian salad dressing. Add water to bottom of dish. Top chicken with sliced green bellpeppers and onions. Cover with foil. Bake at 350 until done. Chicken will be tender, moist, a little sweet and very tasty!
