My family is getting sick of the same old way I cook chicken. Whill I could look in my cookbooks, it would still be a big crapshoot if it was any good. SO I turn you you wonderfull woman. What is your favort way to cook chicken? How do your kids like it...better yet....How dose the Hubby like it (Mine would onley eat beef if I would let him).

KFC ;0 honestly in realistic answers for home cooking chicken and dumplings are a huge hit in my house and I never half left overs and I make a huge pot. jiffy mix for the dumplings.

My family, especially my husband, loves Adobo Chicken. It is a Philippine recipe. I learned how to make it when I lived in the Philippines for 18 months. There are a few different ways to make it, but the spices are the same for the different ways. My favorite is to marinade the chicken first in Aloha Soyu, soy sauce a 1/8 of a cup per chicken. The soy sauce has to have sugar in it. Then you add coconut vinegar, it is usually sold at a asian food market, but if you can't find it apple cider vinegar will work 1/8 cup for each piece of chicken. You add about a 1/4 tsp to each chicken of each ingrediant of garlic, salt, onion pieces, and pepper. Then let it sit in the fridge over night or for at least 4 hours. You don't have to marinade it, but its my favorite way to cook it. You can either then cook it with the marinade adding about 1 cup of water in a frying pan with about 1 tbsp of oil. Or you can take each piece of chicken out and grill it or cook it in the oven. If you cook it in the frying pan with the marinade, it is really good over rice, like gravy over potatoes. My kids love their rice with the chicken cooked and the marinade like a gravy over rice. You can add hot sauce after if you like spice. Their are other complicated versions of this recipe on the web just search Adobo Chicken. That is just my favorite way to cook chicken. Hope this helps.

My sister just shared this recipe with me. I made it last night and it was very good! It's cooked in the crock pot.

Put frozen boneless skinless chicken breast in the crock pot.
Add a can of cheddar cheese soup
Add a can of Rotel (make sure you drain the Rotel LOL)
Cook for 4-6 hours on low

Serve over noodles or rice. If you need to thicken up the sauce, add a little flour. Its super yummy.

Here is a chicken casserole recipe:

cut up 4-6 boneless skinless chicken breast - pre cook the chicken in a skillet

Mix together in a large casserole dish:

cooked chicken
1 package of creamy chicken rice (I use the Litpon side dish, sold in a pouch)
can of mushrooms
chopped onion
3 cups of water

Mix it all together. Sprinkle the top with pepper and garlic powder, and a few small globs of butter. Sometimes I will slice up a red pepper and place on the top also. Bake at 350 degress for an hour. This is so easy to make and super yummy! Good luck and happy cooking :)

My family loves this:

Trim and butterfly chicken breasts and dip each in sour cream seasoned with salt, pepper and dried thyme, until they are coated. Then dredge them in crushed Ritz crackers until they are well coated. Roll them up and secure with a toothpick. Bake at 350 on cookie sheet sprayed with nonstick spray for 20-30 minutes, depending on the size of the chicken breasts.

One of my husbands favorite chicken recipes I make is Russian Dressing Chicken. You get the russian dressing, 1/2 packet onion soup mix, apricot preserve. Mix these 3 items together, put your chicken breasts in a 9x13 pan then pour the mixture over the top. Cook @ 350 degrees for 30 to 35 minutes. Serve over white rice. Also what is fun is homemade chicken nuggets. Cut your chicken breasts in chunks. This next part is way messy. You will have 3 bowls, one with flour, one with egg (but in my case just water, because my husband is allergic to egg), and last bread crumbs. Have your electric fry pan ready with some melted butter. The process is take chicken coat with flour, put in egg, then bread crumbs, then in pan. Cook them for 20 to 25 min until no longer pink. We also buy the whole chickens and cook them in a deep pan in oven as per the package. Season them up how you wish. It really turns out well and everyone at my house loves it. Good luck.

I cut it into chunks, saute it in olive oil with some onion, garlic, S & P. Towards the end of cooking, I add soy sauce & spicy mustard. This mixes with the olive oil & natural juices to make a glaze.....which is absolutely yummy! I serve this with a salad, cooked brocc. & any pasta, rice, or potato goes well with this!

I also use fat-free Caesar salad dressing for a marinade & either grill or saute it (like in the recipe above). Lemon pepper really enhances the Caesar marinade!

Do you like to eat chicken when you go out to eat? That's the best place to start. What do you and husband order? If he always orders Chicken Alfredo when you go to Olive Garden, then figure out how that's made. You can go to Allrecipes.com. You can usually google the name of the place and find a good recipe. That's going to get you a lot better reaction than trying this and that from a cook book. Cook foods you already like.
I like chicken fried rice - it's a breeeze to make. diced chicken sauteed in a pan, add cold cooked rice, peas and carrots, and soy sauce. Add prescrambled eggs at the last minute. No recipe necessary.
Chicken Alfredo - noodles, alfredo sauce (jar, packet, or homemade) and chicken
dust chicken with olive oil and dry seasonings and sautee, bake, or grill - any seasoning and it will be good. cajun, italian, lemon pepper, garlic, something differant everyday.
fried chicken tenders are way better than the mcnuggets you buy in the drive through. just dredge flour, milk, flour and fry. Serve with honey mustard and bbq sauce.

This old recipe is basically a company one, but your family is just as good as company. It does take time because it cooks slowly.

8 large chicken breast halves - skin removed
8 slices bacon
4 oz. chipped beef
1 can mushroom soup (condensed - as is)
1/2 pint sour cream

Cover bottom of 8" x 12" x 2" greased (or sprayed) pan with chipped beef slices. Put chicken on top, in a single layer. Spread bacon slices over the top of the chicken. Mix soup and sour cream, and pour mixture over. Bake, uncovered, at 275 degrees for three hours. Serve with tossed salad and hot rolls (or French or Italian bread).

You can used thigh pieces (skin off) if you prefer, preferably big ones. You'll need two thighs per person. You may wrap each piece of chicken with the beef slices if you like - it makes the dish a little easier to serve.

The recipe may be made in advance and refrigerated until you need to bake it. Leftovers may be reheated by adding 1/4 cup of chicken bouillion, covering, and heating (this is important) slowly!

Lemon Chicken: 4 Boneless chicken breast.= 1 juiced lemon= 1/4 c. parmasen cheese= 1/4 c. bread crumbs= 4 eggs

cut the breast into chunks. Beat the eggs together in a bowl. Mix bread crumbs and cheese together in a seperate bowl. dip chicken chunks into eggs, then crumb cheese mix. fry it in butter on about medium high. The outside will get a brown color. about 5 min. before its done cooking pour lemon juice over the top. Let finish cooking. Great with salad and french bread.

baked chicken: 8 chicken legs= catalina dressing= pkg of italian dressing mix
mix italian dressing in catalina and pour over chicken.. bake till done great with rice and salad

chicken and olive kabobs: (kids and husbands like this) boneless chicken, teriyaki marinade, whole black olives.cut chicken into chunks. marinate chicken in marinade over night. place chicken and olives on kabobs every other and bbq. great with rice

Roasting chickens. Stuff with apple and onion. Rub with salt, pepper, and oregano. Place in roasting pan with carrots (potatoes, if you want) and an onion, quartered, and about a cup of water or stock. Cook until done according to directions. You can use the broth in the bottom to make gravy. I then use the left over bones, etc. to make my own stock for the next time around. To quote my husband on this one, "Wow, Babe! You really knocked it out of the park with this one!"

I like to do an easy version of Cx parm. by cooking the cx, and then covering with tomato sauce and parmesan and mozzarella cheeses and baking until melted. Serve with spaghetti.

Cx noodle soup. Two cooked breasts cut up (or leftovers from whole cx) cooked noodles, onions, carrots, celery, and spices. Cook in crock pot until hot (or all day on low if you do it early).

Marinade -- 1/4 cu lemon juice, 1/4 cup olive oil, 3 T garlic, 1 T Dijon mustard, salt and pepper. Makes a thick marinade. Really yummy. Especially good for grilling.

Lemon juice and pepper for lemon pepper cx. Or you can buy the mix at the store, but I like this better.

Stir fried with veggies. Then add (already mixed together) 2T honey, 2T oj, 1 T vinegar, 1 T soy sauce, 1 T cornstarch. Serve over rice. I like this one because it doesn't take a lot of cx to have a really yummy meal, but you can really add whatever veggies and cx in any combination.

The easiest is 1 cup brown or wild rice, 2 cups water, cx on top. Cover and cook until done (can use frozen). Use a can of soup and half a can of milk or water to make a sauce to cover. My family's favorite sauce is cream of asparagus, although they don't know that. :) They'd tell you it's cream of mushroom or cream of cx. I do this one for Sundays. I put it in the oven at 275 while we're gone, and dinner's ready when we get home.

So that's all that comes to mind right off. Hope you find something you like. I really like the book "The Joy of Cooking" because it explains the reason certain things work, spices, cooking, etc., so you can feel confident with experimenting. GL! Have fun trying new recipes.

lots of casserole stuff I've done with it....our favorite is put some chicken breasts in a dish, open your favorite spaghetti sauce and toss over it and bake 45 mins at 400 then add mozzerella to top and bake another 15 mins...serve with spaghetti noodles.
chicken with butter, lemon pepper and potato's baked same way.
chicken with mushroom soup baked same way and can add some cheddar to the top.
Chicken Spaghetti (can also use leftover Turkey) made with cheese whiz or generic cheese sauce, chicken, spaghetti noodles, cream of celery and cream of mushroom soup.

We were visiting my IL's a few months back, and they grilled chicken using 'Grill Mates Baja Citrus Marinade', and it was some of the best chicken I've ever had. Hubby agreed, and he sounds a lot like yours - I swear he could eat beef, beef, beef every day, all day. If you don't have, or don't like to grill, you can still bake or broil it with this same marinade. It's probably very similar to the lemon chicken idea some have suggested, but super duper easy!

Chicken spaghetti - cut up the spaghetti and cook it then add like you would ground beef.

Chicken pot pie. Easy to make and I love the crust. I'm making this next week!

Chicken Enchiladas with cream of chicken soup, velveeta and cut up chicken. I have yet to try this but love the sound of it!

Had this at a restaurant recently - and am going to make it next week. Could use a whole chicken but I'll use boneless skinless chicken breast - coat with a little olive oil, thyme, greek seasoning (if you have this) or greek salad dressing then bake in the oven. At the end, coverally top of chicken liberally with feta cheese and lemon juice. Serve with wedge of lemon. Serve with potatoes (or rice) cooked with olive oil, olives and pimentos and a greek salad.

Chicken tacos

Italian Dressing / Soy Sauce (by far my fav). Marinade chicken for (longer is better). Can cook on the stovetop or oven but the best is on the grill. So juicy!

Season salt and lemon pepper - bbq. Cut it up and put it on top of homemade alfredo and angel hair.

Marinate in italian dressing (also marinate mushrooms, squash, bell peppers in the dressing). Cook on the bbq.

Orange chicken - recipe from America's test kitchen.

Teriyaki chicken - recipe from America's test kitchen.

Penang chicken - recipe is in a random Thai cookbook, it is a great peanut sauce. The recipe is actually for beef, but we use chicken.

Pound chicken thin, sprinkle lightly with sage, add proscuitto or something similar, then grated fontina cheese, bake. Goes great with a mushroom gravy/sauce.

I vertically roast chicken (turkey, duck and goose, too) on a Spanek rack.
I rub it with different seasonings (or mix a few different ones up)(the Spanek Asian seasoning rub is one of our favorites), and occasionally push some garlic cloves under the skin.
It's impossible to over cook it. The fat drips off into the pan. And it comes out moist and tender every time (and the meat almost falls off the bones).
I started cooking birds like this about 17 yrs ago and I'll never go back to any other way. My husband and son get upset if I go more than 2 weeks without cooking up a chicken.

One of the easiest and best recipes is to just add a good cup or so of italian dressing to chicken and marinade for a few hours. Grill it. Tastes sooo good and is super easy!

Chicken Marsala - http://www.foodnetwork.com/recipes/tyler-florence/chicken... I alter it by subbing 8 thighs for 4 breasts and not pounding them, 1/3 lb bacon + 1/3 lb dry italian salami, add 2 cloves of garlic, enough chicken stock to just barely cover the thighs (my son really like the soup part) and doubling the rest of the recipe.

Curry!!!! - I use mild Golden Curry for the sauce and stir fry whatever veggies I have in the crisper and chunks of chicken. Serve with rice.

There is also a Melissa D'Arabia recipe on Foodnetwork.com that we love - Honey and Orange glazed chicken. It involved chicken breasts, condensed orange juice and honey.

Since we only eat poultry and seafood ( an my son prefers poultry) I rely on allrecipes.com and foodnetwork.com for new ideas.

Our favorite way to eat chicken:

We prefer dark meat, skin ON. White, skinless dries out too easily.

I sprinkle the outside of chicken thighs and drumsticks liberally wtih Tony's, garlic powder (NOT garlic salt), onion powder (NOT onion salt), celery seed (NOT celery salt), and paprika, and bake covered until it's almost done. When it's almost done, I uncover and let it finish cooking, so that the skin gets all crispy with the spices baked into it.

My hubby won't eat birds. So if I make chicken for the fam instead of just for the kids and I, I "hide" it in things like soup, so it isn't the "main feature". (Think crock pot homemade chicken noodle soup on a chilly fall day)

Also, my fav dish recently is Chicken Parmesan. I found a great recipe on allrecipes.com. It is great, and better yet, easy. If you use a homemade sauce and good cheese (not processed nasty store cheese) it is even better!

Make chicken cacciatore, search food network and allrecipes.com for recipes, modify it to your liking.
You can search allrecipes.com for anything...look up chicken ... LOVE that site...and look at the ones with the highest ratings or more reveiws. Modify to our liking, also read the reviews, they are a big help in making the dish better.

Lawry's makes really good marinades and they are relatively inexpensive. Put frozen chicken breasts in a plastic bag at night, pour half a bottle of marinade in the bag and put it in the fridge. By dinnertime next night they're defrosted and they've been marinating nearing 24 hours. Grilling is my favorite, but you can broil or bake them too. Then come up with some fun, creative sides and you can create hundreds or different meals.

Are you cooking whole chicken or chicken pieces?

We love Beer Butt Chicken in the oven. It doesn't taste like beer, but it makes the chicken so juicy and delicious. You can use Sprite too.

For a whole chicken, I like to rub the skin with olive oil and seasonings. You can use whatever floats your boat, or even buy chicken seasoning premixed. I pull the skin away from the meat and make sure to get good seasoning directly on the meat. Stuff the inside with onions and garlic and bake.

For chicken breast (or pieces) marinate in Italian dressing and grill. Or cook in a skillet with Italian dressing instead of oil.

Panko breaded chicken is a HUGE hit for my husband and my kids. I buy the chicken tenderloins, coat in honey mustard (instead of using an egg wash), then roll in panko bread crumbs. I cook mine in a little oil on the stove, but they're really good baked too.
