I don't like fish. But, everyone else in my family does and, since it is a healthy option, I would like to incorporate it into our weekly menu. Do you have any fish recipes for me? I would prefer some options that do not use salmon. Aside from the very occasional tuna salad sandwich, I don't cook fish (and tuna salad involves no cooking so I can't really mess that up). So are there any tips for preparing fish? Isn't it extremely easy to over cook it? I do have an allrecipes membership so I'll check out their recipes but I thought I would ask for some tried and true family recipes here. Thanks.

The easiest, go to recipes for us and my kids love it it is:

Any white fish
Spray the pan
Rinse and pat dry the filets.

Place in glass pan, or any pan sprayed with non-stick spray if you use, or drizzled with EVOO.

Sprinkle with Lawry's Season Salt and Garlic Powder, Or Garlic salt and paprika, depending up which seasonings you have on hand. Basically you want the garlic and the paprika combo.

Squeeze fresh lemon juice over it all.

Pat with butter and drizzle with EVOO

Broil for 10 minutes, pre-heated 425 degrees.

I usually just use frozen cod, sole, tilapia or whatever is on sale. I brush some olive oil and lemon juice on it, sprinkle it with lemon pepper, and bake in a covered dish for about 20 minutes. Simple, tasty, and my husband and kids like it. Sometimes I'll throw in some frozen scallops or shrimp. If I have fresh pickerel I pan fry.

This is so, so yummy and EASY.

Halibut with Tomato Lime Tapenade

1-1/2 lbs fresh or frozen, thawed Halibut steaks ( or any other firm white fish)
1/2 tsp salt
1/2 tsp fresh ground black pepper
1/4 c fresh lime juice
2 med ripe tomatoes, chopped
1 tsp grated lemon zest
2 Tbs fresh basil, chopped
2 Tbs fresh Italian parsley, chopped
1 Tbs extra virgin olive oil
2 Tbs capers, drained
2 cloves garlic, chopped
Cooking spray

Lightly coat crock pot with cooking spray. Season the halibut with the salt and pepper, and place in the stoneware. In a small bowl, combine the lime juice, tomatoes, lemon zest, basil, parsley, olive oil, capers, and garlic. Pour the sauce over the halibut. Cover; cook on low 2 to 3 hours. Spoon sauce over steaks before serving if desired.

i do tilapia or haddock filets.. fresh or frozen dosent matter...(if theyre frozen defrost them) .. i coat them in dijon mustard n then panko breadcrumbs n fry them in a little bit of oil in a pan on the stove .. fish cooks quick! .. depending on how thick or skinny the pieces are they could cook in 2 min perside .. i just wait til the breadcrumbs look a little bit crunchy n take them off

We have frozen tilapia at least once per week. Tilapia is a very light and flaky fish, doesn't have the heavy fishy taste that some fish does. I generally take a piece of foil, put one filet on it, put about a teaspoon of real butter on it, sprinkle with salt and pepper, seal up the foil and bake at 425 for about 15 minutes. You can vary the spices according to what goes with it. If you like spicy food, cajun spices are so yummy on it. I often serve it with fresh spinach, lightly sauteed with mushrooms, or with roasted asparagus with parmesan.
