I want to make some cookie probably choc chip or chocolate chocolate chip to bring to a picnic this Saturday.

today is the only day I have time to bake,

I know you can freeze them but do I need to? and if I do how do I go about defrosting them in time for Saturday, and why don't they got soggy when they defrost?

Why don't you make the dough today and bake them off Saturday morning or Friday night? Dropping them onto cookie sheets and putting them in the oven takes almost no time at all.

Put them in an airtight container and they will be fine. No need to freeze them.

We freeze tons of cookies all through November to get ready for the holidays. The secret is to make sure the cookies are totally cool after baking.

Then place them in ziploc bags, make sure to squeeze out as much air as possible.

To defrost, open the bag until they totally defrost or you can take them out of the bag and defrost on baking cooling racks. We also freeze un iced cupcakes, muffins, brownies, tea breads.. cheese balls. All sorts of things. The secret is making sure they are completely defrosted.

I would put them in a cookie tin, not an air tight container. Chocolate chip cookie will be fine come Saturday. I freeze some cookies, like shortbread freezes well and retains it's texture, but chocolate chip is never the same after freezing. While not exactly soggy, it does lose some of it's crispness that sets homemade cookies apart from store bought.

Don't freeze - a Ziploc bag or airtight container will be fine.

Air tight, I agree. You can refrigerate them if you have room. Put some wax paper between the layers if you do freeze them, and they won't stick to each other. It doesn't take cookies long to defrost, by the way, especially if you take the layers you packed them in and separate them (that's why wax paper is so useful).

Air tight container.

I've never frozen the actual cookies, the dough-yes.
