Okay--I LOVE cookie exchanges! So, I signed up for one that is taking place on the 9th. We are to take a 1/2 dozen cookies for each person participating. I just checked the evite, and there are 20 people participating! 20! And the sign-up doesn't close until Saturday, so there could still be more! So I am looking at making at LEAST 10 dozen cookies... HELP!!! Last year I made Buckeyes (which I love love love) and while the recipe is simple, dipping all the balls in chocolate took forever, and then I was only making 5 dozen. So I am wondering if anyone out there has any advice on a good cookie to make that won't take too much time and won't break the bank on ingredients? I do currently have a TON of pumpkin, so any recipes using that would be a bonus. :-)

This is a recipe for Hello Dollies. They are also called Magic Cookie Bars, or (if you add butterscotch chips as well) 7 Layer Cookie Bars. There is litterally no mixing, no bowl. They're easy peasy lemon squeezy. Oh, and they are absolutely delicious.
4 -6 tablespoons butter, melted (many reviewers prefer the higher amount)
1 cup graham cracker crumbs
1 cup chopped walnuts or 1 cup nuts, of choice
1 cup semi-sweet chocolate chips
1 cup flaked coconut
1 (14 ounce) can sweetened condensed milk
Directions:
1) Preheat oven to 325 degrees Fahrenheit.
2) Spread melted butter in a 9 x 13 pan.
3) Sprinkle with graham crumbs.
4) Add the nuts, chips and coconut, sprinkling evenly over crumbs.
5) Cover all with condensed milk.
6) Bake for 25 minutes.
7) Allow to cool and cut into squares.
Each recipe makes a 9x13 pan. Make two at a time and you have 40 cookie bars at once.
The BEST oatmeal cookie I've ever eaten!!! Found in a magazine, and is considered one of the healthiest cookies out there.
3/4 cup butter (melted)
Add 1 1/2 cup light brown sugar (or Splenda version)
In separate bowl:
2/3 cup flour
2/3 cup wheat flour
1 1/2 teaspoon baking soda
3 cups old fashioned oats
1 teaspoon salt
Now mix in butter/sugar mixture to the flour mixture.
Add 2 eggs &
2 teaspoons vanilla
Mix well, add 1 cup chopped walnuts (optional....but yummy) &
9 oz. chocolate chips (dark or semi-sweet).
Spoon out onto pan.
Bake at 350 degrees for 12 minutes or until tops are dry to the touch.
They should stay very mounded and are super sturdy....great for packing.

When I double the batch and use a cookie scooper, it makes about 80 cookies.

Snickerdoodles are REALLY yummy and easy. I used to make them all the time when I was a kid, although I don't have a recipe on-hand.
Basic ingredients are:
granulated sugar
cinnamon
vanilla extract
flour
eggs
Sounds fun!

These are my all time favorite family Christmas cookies. At Christmas I put in the optional peppermint candies. Can also put in any nut you like, if allergies aren't a problem. :) Super easy and makes a lot!
Snowball Cookies!!!
Prep: 25 mins. Bake: 8-9 Mins. Cool: 30 min.
About 2-3 Dozen Cookies (depends on size of cookies)
1 Cup of butter (2 Sticks) softened (not melted)
½ Cup powdered sugar
1 Teaspoon vanilla
2 ¼ cup of flour
¼ Teaspoon of salt
Powdered Sugar for rolling
Pre-heat oven to 400 degrees. Beat butter, powdered sugar, and vanilla in a large bowl on medium speed. Stir in flour and salt. Mixture will be a little tough.
Shape dough into 1-inch balls. Place about 2 inches apart on un-greased cookie sheet. Bake 8-9 mins until set but not brown. Immediately remove from cookie sheet roll in powdered sugar. Place on wire rack and cool for 30 mins. When cool roll in powdered sugar again.
When placing into airtight container, sprinkle a little more sugar on them, layer with plastic wrap or wax paper in between layers.
Optional: crush ¾ cup of hard peppermint candies (round red and white ones, or can use candy canes) in a food processor. Stir in ¼ cup of the candies with the flour, reserve remaining candy. Bake as directed then immediately roll baked cookies into powdered sugar, wait ten minutes then roll in remaining crushed candy. Re-roll in sugar if desired (I usually do!).
For using your pumpkin I love Pumpkin Choc Chip Cookies. I use this recipe and add a cup (or so) of chocolate chips. It's an awesome flavour combo. Good Luck.

What about those cake mix cookies that you use a cake mix but make soft cookies instead. Also, I just bought a mix that is just like that . They are chocolate peppermint and sugar cookies. Spritz cookies are pretty easy. I love those rolo pretzel things but sometimes people get made if you don't make a true cookie for an exchange. have fun !
These aren't really cookie-cookies, but soooooo yummy and super easy!
Saltine Toffee Candy:
1 cup butter
1 cup light brown sugar
1 (11 oz) pkg of chocolate chips (or you can use white chocolate and butterscotch chips)
40 saltine crackers
1 cup chopped nuts (optional)
Line jelly roll pan with foil and spray with non-stick spray. Lay crackers out flat on the foil. Melt sugar and butter until foamy (3 min). Pour over crackers and spread to coat. Bake 10 min. in 350 degree oven. Remove from oven. While hot, sprinkle with the chips, let soften and melt, then spread. Sprinkle with nuts. Let cool. Refrigerate until hardened. Break into pieces like peanut brittle.
I would go with Snickerdoodles for one as well, you get a LOT of cookies for the amount of ingredients you use, it's the baking powder that expands them.
Another good one with basic ingredients is Peanut Butter cookies, not very holiday-like, but simple and people like them. Use crunchy PB to bump them up.
Gingersnaps are good, I admit I use the mixes for these.
Chocolate Chip cookies with chopped up peppermint candy mixed in the dough before baking are good. You can drizzle them with melted chocolate (I use CandQuik) to make them more festive.
Mix in some chopped up dried cranberries to sugar cookie dough, bake and drizzle with white chocolate (again, CandiQuik) and they are yummy! I sent some to my son a couple of years ago along with about a dozen other types of cookies (I got all out) and he said when he saw them he thought. "What the heck are these?" But he said when he ate one he loved them and they were his favorite of all.

You really can't go wrong with a sugar cookie.
Just press them down with colored sugars to make them more festive. That's my 'go to' cookie when I need to make a ton of them.
I didn't look at the rest of your responses, so I'm sorry if this is a repeat :o) I *love* these pumpkin chocolate chip cookies - using the small pampered chef cookie scoop I usually end up with 6+ dozen with the recipe as it's written. I leave out the nuts because of allergies and I switch out the semi-sweet for milk chocolate chips (I just don't like how semi-sweet chips taste).

A quick easy cookie that even young children could make.
Lemon Cake Mix Cookies
1 Box Lemon Cake Mix (dry powder)
2 eggs
1/2 cup vegetable oil (scant)
1/2 teaspoon lemon extract (optional)
Mix ingredients together (will be slightly stiff but easily rolls into balls)
Dip by teaspoon, roll into a ball, place on cookie sheet about 2 inches apart.
Bake 350 degrees about 8 to10 minutes.
These cookies are slightly chewey and they freeze well.
Since it doesn't make a lot of cookies, I have doubled the recipe and used 1 Lemon cake mix and 1 French Vanilla cake mix. Or two lemon mixes.
We like them plain and undecorated.
These cookies can be made with chocolate cake mix too, but use dark chocolate for richer flavored cookies.
I have not had a day off in over a week and so my stepfather is going to make Pralines for me to take to a cookie exchange this weekend! I LOVE Buckeyes! Last year one of the moms made them and we loved them.
In the past I have made Kahlua Brownies.
I purchase an inexpensive brownie mix and add a 1/4 cup of Kahlua to the mix and 1/4 cup less water. I also add an extra egg..When completely cooled, I cut them into 1/2 inch wide 2 inch long brownies..
I also like to make a good shortbread but add some rosemary to the mix. The secret is to chill the dough overnight..
