Go to www.food.com and use the recipe sifter. It will allow you to find recipes that can be made with the ingredients that you have on hand.
I use a broiler pan when I bake my thighs so that the fat can drip to the bottom and it's not swimming in grease.
Srinkle chicken with salt and pepper, marinate in olive oil, lemon juice and seasonings of your choice, or Itallian dressing if you have it. Place on a broiler pan and cover with garlic and onion. Bake uncovered at 350 for an hour.
Cook pasta and set aside.
Saute frozen veggies in olive oil, with garlic, onion, oregano, basil, and whatever spices sound good. Toss in pasta with a tiny more olive oil and whatever cheese you have like, parmesan or feta.
Voila! Dinner.
