I have a bunch of shrimp and dont know what to make with them. Does anybody have any yummy recipes? I am not much of a cook so something simple with minimal ingredients would be best :) Thanks!

Toss shrimp (shelled or not) in olive oil, chopped garlic and a fresh herb (thyme and oregano work well). Sprinkle with a bit of cayenne pepper. Skewer and grill or stick under the broiler for 3-4 minutes (avoid overcooking). Serve over cooked leafy greens and rice.

I like to sautee in a little butter, a little oil, garlic, sri racha chii sauce, and ginger. I serve that with garlic buter and herbed angel hair pasta or lomein. It's a spicy asian flare. This is one of those POW Exciting dishes.

Shrimp is wonderful in gumbo. Saute the holy trinity, make a rouxe, add chicken stock, tomaotes, garlic, sausage, okra, cajun seasoning, and rice. Simmer until rice is cooked, add shrimp and simmer until shrimp is done.

It's so good with a lemon and white wine sauce. Just reduce white wine, add lemon, butter, and fresh herbs, add shrimp. Add cooked pasta and toss, add a little pasta water if it's too dry.

OH, I love shrimp. I've done this recipe a couple of times and it is really good! It's lite and very tasty. Here's the recipe:

Melt 1/2 butter 1/2 olive oil in a non-stick pan. Toss in some minced garlic and mined onion. Toss in shrimp and let them start to cook, tossing frequently. Add in chicken stock or white wine, let cook down until shrimp are pink all the way through. Serve over pasta or grits or rice.

Or, pour several cans of beer into a large pot. Add butter, rosemary, cajun seasoning. Bring to a boil, add shrimp and cook until completely pink. Serve shrimp in the broth with a green salad and french bread. (Google "southern barbequed shrimp" for a more detailed recipe. Very easy.)

If your shrimp is without any shells and is cooked, its easier.

Shrimp Alfredo.
Cook pasta shells according to package instructions. You need 5-6 cups of cooked pasta.
Drain the water.
Pour in one 16 oz jar of alfredo sauce.
Add, 1 lb of cooked shrimp without shells
2 teaspoons of garlic granuels
1 teaspoon onion powder or granules
Stir and serve.

We like to marinate shrimp and serve it over pasta or rice.

Marinade:
3 cloves of garlic, minced or 2 tsp dried garlic
1/4 cup tomato sauce (or ketchup)
1/4 tsp cayenne
1/3 cup olive oil
2 T red wine vinegar
2 T fresh basil or 1 tsp dried basil
1/2 tsp salt

Mix all of the ingredients and add peeled, deveined shrimp. Marinade for an hour.

We usually just pan fry (sometimes we grill) for a few minutes.

One time I sauteed the shrimp in a little olive oil and garlic, then I added a can of plain tomato sauce and added spices, oergano, rosemary, thyme, garlic powder. I added some broccoli to it and served it over bow tie pasta, it was yummy.

I love to make shrimp salad. I grill the shrimp with either olive oil or a low fat butter. Then when cooked I put it on a bed of lettuce. Not the iceberg kind but the really green kind. Then I add walnut pieces, croutons, cheese, cut up grapes, tortilla strips for salads, salad dressing of your choice. Anything you want to add to it. Tastes yummy!

My basic shrimp recipe is:

Seared Shrimp
______________

Peel & devein

place in bowl w olive oil, chopped garlic, salt, pepper, pinch of italian herbs

marinate for 15min-1hr

Get pan smoking hot, get shrimp in 1 layer across pan (i use a slotted spoon to get them from bowl 1 to pan), flip w fork almost immediately, remove to bowl 2, do next batch (this keeps juices from froming).

Wash and dry bowl #1

Round 2, pan smoking hot. Shrimp out in one layer. Let sit without moving for 30-60 seconds. Flip w/ fork (should be golden crispy/seared). Let sit to sear the other side. Remove to clean bowl. Repeat w/ rest of batches

All in all it takes about 7 minutes to double cook 2lbs of shrimp, and you end up w shrimp on the barbie taste that get added to anything pr popped in you mouth like candy

Beyond the basics, you can marinate the shrimp in ANYTHING. Ginger, garlic, soy.... Chimichurri... tandoori spices.... bourbon and brown sugar... sriachi...raas el hanout... chinese 5 spice....cuban mojo....

Just make sure if you marinate in citrus to pull after 5 minutes, because the citrus will cook the shrimp

QUICK & EASY SHRIMP SCAMPI WITH PASTA (p.43)
1 pound of shrimp, shells removed and butterflied
2 cups of uncooked rotini pasta
3 Tb butter
3 Tb olive oil
3/4 tsp salt
1/2 tsp oregano
1/8 tsp basil
2 Tb minced garlic
A large handful of chopped parsley
Fresh ground pepper to taste
Grated Italian cheese (Romano and/or Parmesan)

Cook pasta in salted water. While pasta is cooking, combine butter, oil, seasonings, in large frypan (or wok), and heat to sizzling, but not burning. Add shrimp and stir until cooked.

Turn heat to low. Add parsley and grind in a bunch of pepper.

Turn off heat until the pasta is done. Drain pasta and toss with the shrimp. Serve immediately, passing grated cheese.

Can be doubled. And butter to olive oil ratio can be altered as well for the more health-conscious.

shrimp (deveined, no tail)
fresh spinach
crushed tomatoes (we love crushed Fire Roasted Tomatoes...you can get them at Giant Eagle or Walmart)
Angel Hair pasta

Start the water for the pasta

If the shrimp is frozen begin thawing it by running cold water over it.

While the shrimp is thawing, tear and rinse the fresh spinach...I do this in a strainer so when it's clean all I do is squeeze the excess water out. Place the spinach in a pot with olive or canola oil and wilt the spinach over low heat.

Cook the pasta (angel hair only takes about 4-5 minutes)

Add the crushed tomatoes to spinach and heat. Add the shrimp and cook for 1-2 minutes to heat the shrimp (if it's already cooked).

Mix everything together and add a sprinkle of parmasan cheese if you like.

This recipe takes less 30 minutes and my entire family (including 5 picky kids) LOVE it!

I have a simple recipe for you! :-D I just made it the other day and it went over very well with my kids and my hubby and parents!

Set OVEN at 400 degrees
2 lbs of shrimp _peeled, deveined and UNcooked. (tail on or not)
Defrost the shrimp under running cold water for about 5-7 min until
thawed.
Put the shrimp in a bowl, drizzle Olive Oil, Salt and Pepper (I use kosher salt, but you can use the fine table salt if you wish)...about 1/2 a TBLSP of each of the salt and pepper, and mix well.

Line a cookie sheet with the Easy Release Foil, and spread out your shrimp evenly on the cookie sheet.
BAKE at 400 degrees for 8 minutes. (Ina Garten from Foodnetwork does this and she calls it 'roasting shrimp'). She's the Barefoot Contessa. :-)

The shrimp will be pink and that will show that they are done.

While the shrimp is cooking, Make some Minute white rice from Uncle Ben's, and when that is done, put butter ( I use Land O Lakes Butter), in the rice to make it a buttery taste. No salt, no pepper in the rice.

Lay a bed of rice down on your plate, place some shrimp on top and WHA LAH.... :-) YUM-O! Real easy.

Shrimp cook very fast so be careful not to overcook. Like in 3 to 5 minutes they will be done. If you overcook they get rubbery.
If you really have ALOT of shrimp like over 3 lbs. Just boil it. Get the shrimp boil box at the seafood counter at your grocery store. Get a big pot, like you would boil spaghetti noodles. Fill it 3/4 full. When it starts to boil add the pack from the box. Let it simmer a few minutes then add the shrimp and boil for 3 to 4 minutes. Until the shrimp are pink all the way through. Drain and put in another pot with cold water and ice to cool. Once they have cooled, peel and eat. YUMMY!!
