Banana Recipes

Hello all. I have a ton of bananas that I keep in the freezer because I can not bring myself to throw them out. Whenever I buy bananas I stick them in the freezer before they go bad and will usually use them to make banana pancakes or banana bread.

I was wondering if any of you have a good recipe I can use them for other than banana bread/muffins. I had to take them out of the freezer because I needed to make room so I would like to use them up quickly.

Once defrosted they will be more of a banana puree consistency rather than a solid banana.

Any recipes will be greatly appreciated. Thanks!

What can I do next?

I like to make something like banana ice cream. Take really ripe bananas, peel them, break them into chunks and freeze them for a couple days. Put the chunks in a "magic bullet" with a little milk and a dash of vanilla. It takes a bit to get the milk just right. If you don't get enough milk, it won't blend. If you get too much, it's not thick enough. If the bananas are ripe enough, you don't even need any sugar.

Make smoothies! Pretty much every smoothie I make for my kids involves bananas with other fruit. I use lowfat or fat free vanilla yogurt, vanilla soy or almond milk, a good shake of wheat germ, frozen bananas, and then whatever else you like. Strawberry banana is a classic, but my kids also really enjoy mango, raspberry, blueberry, pineapple & coconut. If the fruit is frozen you'll find that you don't need to add any ice. Nice delicious & healthy breakfast in about 26 seconds!

Fruit smoothies. I would throw some in there with a couple other fruits. Frozen bananas would work great for smoothies.

They also make a good snack on their own frozen. My mom used to freeze bananas and we'd eat them that way in the summer as a treat.

Smoothies are perfect! I also add a mashed banana to pancake batter to make banana pancakes and they are yummy. I know you didn't want muffins, but weelicious.com has a recipe for apple banana muffins that are good and healthy. I think she also has a raspberry banana puree on there too. I've never looked at the recipe, but maybe you could incorporate the puree into crepes or over top of ice cream.

I made muffins this week and put a crumble on top and they were delicious! I chopped walnuts and mixed with cinnamon and brown sugar, then topped the batter in each muffin cup. They were a little different than the usual...

wonderful pancake/crepes recipe!

PB Banana Pancakes
1 banana
1/4cup peanut butter (natural works better)
2 eggs
1tsp baking soda

mix and pour onto griddle or pan, flip like regular pancakes. they'll come out thinner, so I sometimes add strawberries and blueberries with a little honey or my kids love them with yogurt and rolled up OR more sliced bananas + cinnamon and rolled up!! They are SO good and gluten free too.

Banana Popcicles
1 banana
greek yogurt (or any kind) flavor your choice
crushed up cereal (your choice)

cut bananas in 1/2 and stick a kabob holder in each, up the center (you can get a bunch of those wooden kabobs) then dip the banana in the yogurt and then roll into/over the crushed cereal. Put into freezer for at least 3 hours until banana & yogurt is frozen. Best when left over night!
Then eat like a popcicle! They really are good! I use strawberry greek yogurt and crushed granola.

Banana soy milk smoothie. Add the frozen banana to the soy milk and blend. you could just use them in fruit smoothies, but the soy milk and straight banana are a suprisinly delicious combination.

You can use frozen bananas to make ice cream, here is a link. I really liked it with blueberries and strawberries and it was really low calorie. I am not a huge fan of banana-flavored things but it only has a mild banana taste.

I do the same thing and actually just last week made banana bread w/mine from the freeze & it was terrific. I used a recipe from allrecipes.com. and you can make several loafs at a time & freeze them as well.
