I have about 6 banana's that are going soft and I wanted to know if any of you Mama's knew a good recipe that I could use them in so they don't go to waste.
Thank you to everyone for the great suggestions. I decided to try Josie M's banana cookie recipe. I tried a few as cookies, but they didn't have any rise to them. So I put the batter into a cupcake pan and they came out delicious. My husband ate 3 before I could even take them out of the pan.:)

bannana cookies. 1 box french vanilla cake mix 2 eggs, 1/4 cup oil , 4 ripe, mashed bananas, 1/2 chopped nuts. mix all together until just blended drop by spoonfuls onto greased cookie sheet bake for 15 minutes at 400 degrees
Banana bread, smoothies, banana pancakes, and frozen bananas dipped in chocolate come to mind off the top of my head. You can find a lot of delicious recipes on www.foodtv.com . Just enter "bananas" in the search field and you'll have endless recipes to choose from. :)

Everyone kept asking how he makes it so we finally posted his secret recipe. Ohhh sooo good! Its packed with walnuts, raisins and ofcourse, bananas!
Stick them in the freezer NOW - you don't need to peel or bag them - they will keep until you can bake. I have an excellent banana bread recipe already typed out - my kids' favorite for over 20 years - if you want to send me your email address I will attach it to a reply.
They work great in banana nut bread! The softer the better! Let me know if you need a great recipe. i went to culinary school and have a great one.
I love to make Banana Blueberry Bread with my old bananas. Just use your normal banana bread recipe and add blueberries. Everybody that has tried it loves it too.
Banana Bread or Muffins
Preheat oven to 350. Grease or spray loaf pans or muffin tins.
For the Wet ingredients:
Mash 3-4 large, very ripe bananas (almost black is OK)
with 1/2 c. brown sugar
1 large egg (or 2 small)
1 tsp Vanilla
Measure dry ingredients:
1 1/2 c. flour (I mix flours all the time, half unbleached white with brown rice)
1 tsp Baking soda
1 tsp Baking powder
1/2 tsp salt
1 tsp cinnamon (optional)
1 tlbsp flax seed (optional)
1 C chopped nuts (optional)
Melt 1/4 C butter/margarine (or use Grapeseed or a vegetable/canola oil)
Blend all together
Bake in loaf pans for about 45 minutes, in muffin tins about 12-15 minutes or in 13x9 about 30 minutes.
When you don't have time to make banana bread, you can place the entire banana with skin right into the freezer and use later. They become very liquidy when defrosted and still work great for banana breads.
If any of the receipes you want to try, do not use up all of the bananas, you can freeze them as they are since they have their own wrapper : )
The skin will turn black in the freezer, but the banana is fine. When you need it, you just let it thaw for a while and then take an end of. The banana will just sort of slide out. You will basically have to use it as mush, as you would anyway for Banana Bread or muffins.

Layer a cookie sheet with foil or seran wrap.
Peel the bananas. Slice them in thin slices (so you have a bunch of circles). Spread teh slices in a single layer on the foil. Cover with another layer of foil (and continue layers if you have a lot of bananas) on top. place in the freezer. When you want to have smoothies or milkshakes, pour a little juice or milk in the blender and then throw in some of those frozen banana slices... YUMMY! I add those to my protein drink and it really packs a nice potassium punch!
