Any Good Whole Grain, Non-oil Muffin Recipes?

Hi, I'm looking for muffin recipes that don't use oil, and preferably uses whole grain flours. I've found a few online and made them, but I'm getting bored with them. If you have good (preferably simple) recipes (can be a URL to an online recipe), please share. Thank you!

replace oil in recipe with applesause. I think you have to double the amount of applesauce though.

go to cooks.com they have hundreds of recipies for any one thing you are looking for. alot of times,i know you can substitute apple sauce for oil.

I substitute applesauce for the oil and it works well. In fact, it makes muffins/breads/cakes more moist and delicious!

I make whole wheat banana bread muffins:

3 ripe bananas
2 eggs
2cups flour
3/4 cup sugar
1 tsp salt
1 tsp baking soda
1/2 or so of chopped nuts (optional)

Preheat oven to 350 - butter or spray your muffin pan. Mix bananas and eggs, then stir in the rest of the ingredients. Bake 25 min or until toothpick comes out clean.

Really good with cream cheese! To make a loaf, use same recipe and bake for 50-60 mins.

You should check out the website weelicious.com. I love it because it is a mom blogger and she is always trying to create healthy, homemade recipes. I just made banana apple muffins delicious. I do remember seeing other muffin recipes but I can't remember if they were whole grain. It's worth checking out though.

I just made these over the weekend and they are fantastic! I've made them a few times and my 3 year old loves them.

The recipe calls for all purpose flour and oil, but I sub half whole wheat flour and half applesauce. You can check the reviews to see if anyone has used all ww flour or all applesauce with good results.

I made 16 muffins yesterday with this recipe, there are only 4 left today, and only 5 ppl in this house!

Uses flax meal + water in place of some of the oil, applesauce and pumpkin puree in place ot the rest. I subsitiuted 1/2 brown sugar and 1/2 white, as well as using all pumpkin in place of pumpkin and applesauce, also, I used 1/2 white flour and 1/2 whole wheat....turned out great still! As muffins, I baked them for 18-20 minutes rather than the longer "loaf" time.

I have had good luck making oat flour from oatmeal & substituting it 1 for 1 for white flour in muffin recipes. I use the regular chopping blade in my food processor & pulse the oats until they are a flour consistency.

I have a recipe for chocolate bran muffins from when I went to Weight Watchers. I'm not sure if you'd consider it 'whole grain' but I'll give it to you anyway:

Chocolate Bran Muffins

3 c All Bran Original
2 ½ c water
1 box lowfat brownie mix
1 ½ t baking powder

Soak cereal in water for 10 minutes. Add remaining ingredients and mix. Bake at 350 degrees for 20 minutes in muffin tin. Makes 24-30 muffins.
