Hi Mamas, Do you have a great banana bread receipe that you would be willing to share? I would prefer the "healthy" kind, but I am happy about any receipe you think is great.

Hi C.,
I have been making an old Betty Crocker recipe for years that is very close to Kim C's except you use vegetable oil instead of shortening (you can use safflower oil to make it a bit healthier). Also, I play around with adding more mashed bananas and less oil and sugar which seems to work out fine as it is still sweet and moist.
Chopped Walnuts are a great addition.

I have a great oatmeal banana bread recipe. It's not super sweet because the sugar content is low, but it's really good!

1 1/2 cups all purpose flour
2/3 cups sugar
1 1/2 tspns baking powder
1/4 tspn baking soda
1/4 tspn salt
3/4 cups regular oats
1 cup mashed ripe banana (2 large)
1/3 cup lowfat buttermilk
1/4 cup vegetable oil
1 tspn vanilla extract
2 large eggs, lightly beaten

1. Preheat oven to 350 degrees.
2. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next four ingredients (through salt) in a large bowl, stirring well with a whisk. Stir in oats.
3. Combine mashed banana, buttermilk, vegetable oil, vanilla extract and eggs; add to flour mixture. Stir just until moist.
4. Spoon batter into an 8X4 inch loaf pan coated with cooking spray. Bake at 350 degrees for 55 minutes or until a toothpick comes out clean. Cool 15 minutes in pan on a wire rack. Remove from pan and cool completely.

This is a Cooking Light recipe, so it's relatively healthy! Enjoy!

This was the one I grew up with....

1 loaf
1 cup sugar
1/2 cup butter
2 eggs
1 1/2 cup mashed ripe bananas ( 4 )
1 T lemon juice
2 cup of sifted flour
3 t baking powder
1/2 t salt
1 cup of nuts ( optional )

Cream sugar with butter. Add eggs one at a time beating well after each addition
Stir flour with baking powder to salt.
Add to mixture quickly .

Stir in nuts.

Bake in Greased 9X5X3 loaf pan @ 350 for about an hour.

Banana Bread

1 1/2 cups sugar
1 cup applesauce
6 ripe bananas
4 eggs (or Egg Beaters)
2 1/2 cups whole wheat flour
1 tsp. salt
1 tsp. baking soda
1/2 cup walnuts, optional

• Mix sugar and applesauce.
• Add bananas and eggs. Mix until blended.
• Combine dry ingredients and add to the banana mixture. Add nuts, if using. Do not overmix!
• Grease and flour two 7.5x3.5” pans or one 8x5” pan.
• Bake at 350 for 45 minutes to 1 hour.

o.k. here's my old Betty Crocker recipe that everybody loves with my "tweaks" to it.
You need 1 large bowl and 1 smaller bowl to start & electric mixer
Pre-heat oven to 350'
grease bottom only of loaf pan 9x5x3 - use REAL butter!
blend 1 cup sugar and
*1/3 cup butter until it looks crumbly
add 2 eggs and blend until smooth (30 seconds)
in smaller bowl use your mixer to mash up 4 bananas and 1/3 cup WATER.
Use ripe bananas not old brown ones - makes a big difference!
Add banana mixture to your sugar etc. and mix until well blended
now for the dry ingredients - gently stir in:
1 2/3 cups all purpose flour - unbleached is fine
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
Mix until well blended
add 1/2 cup nuts if you like - sliced almonds are my favorite
trail mix is a fun addition too!
pour into loaf pan and bake for approx. 55 minutes
120 calories per slice

* you can substitute 1/3 cup unsweetened apple sauce for the butter and add approx. 2 tablespoons additional flour for a very low fat version - make sure you still butter the bottom of the pan or it will really stick!

Banana Banana Bread
Ingredients
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
3/4 cup brown sugar
2 eggs, beaten
2 1/3 cups mashed overripe bananas

Directions:
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.

3/4 c butter, softened
1 8 oz pck cream cheese softened
2 c sugar
2 L eggs
3 c flour
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
4 bananas smashed
1/2 tsp vanilla extract
2-3 tbsp cinnamon
Beat butter and cream cheese, add sugar, then eggs. Combine flour, baking powder, baking soda, and salt then stir in bananas, vanilla, cinnamon and your choice of nuts.(I prefer chopped walnuts). Pour into greased and floured pans. Bake @ 350' for 1- 1 1/2 hours.
I always add extra cinnamon to mine, which you can use it or not in the recipe.

This was my grandma's recipie (without the chocolate chips). I added the chocolate chips & did not put in any nuts. I love this stuff & it is a great use for the uneated & blackening bananas that I have in my house.

1 c. sugar
½ c. shortening
2 eggs
1 c. bananas (rotten / black) - mashed
1 tsp. baking soda
½ tsp. salt
1 c. flour
1 tsp. vanilla
½ c. nuts (optional)
¼ c. chocolate chips (optional)
Preheat oven to 350.
Sift together flour, salt & baking soda. Cream: shortening, sugar & eggs (1 egg at a time). Add bananas & dry ingredients all at once & mix together. Add nuts & vanilla last & mix together. Spray 1 loaf pan & pour the batter in.
Bake for 55 minutes or until a toothpick comes out clean.
Makes 1 loaf.

We have just started making this healthy banana bread recipe from Whole Foods - a great source for kid-friendly healthy recipes. My daughter loves it and it comes out moist and yummy ... and very tasty. Has flax seed, yogurt, etc.

Oh, we also use whole wheat flour for the whole thing ... no all-purpose at all and have had no issues.

Light-n-Luscious Banana Bread
1 1/2 cups unbleached all-purpose flour
1/2 cup whole wheat flour
1 teaspoon baking soda
2 tablespoons ground flax meal
1 tablespoon ground cinnamon
1/2 teaspoon salt
1/2 stick (1/4 cup) unsalted butter, softened
1/2 cup granulated sugar
2 eggs
1/3 cup fat free or low fat plain yogurt
3 very ripe bananas, smashed (about 1 1/2 cups)
2 teaspoons vanilla extract
1 tablespoon turbinado sugar
Method

Preheat oven to 350°F. Spray an 8-inch x 4-inch metal loaf pan with cooking spray; set aside.

Whisk together both flours, baking soda, flax meal, 2 teaspoons of the ground cinnamon and salt; set aside.

Cream together butter with sugar using a mixer. Add eggs, one at a time, beating well after each addition. Mix in yogurt, bananas and vanilla. Fold in flour mixture and mix until just incorporated. Spoon batter into loaf pan.

Stir together turbinado sugar and remaining 1 teaspoon cinnamon. Sprinkle over the top of the banana bread. Bake 55 to 60 minutes or until a knife inserted in the center of the loaf comes out clean. Allow to cool slightly, then remove from baking pan.

Chef’s Tip: If using a glass baking pan, decrease cooking time by 5 to 10 minutes.

There is a recipe on the Banana Nut Crunch cereal box that is really good. If you can't find it on the box google it. It was delicious, and healthy.
