Have you tried a cornmeal coating. There is one online by Paula Dean. It is in her fried Okra recipe but I use it for everything.
Anyone have a good recipe for baking chicken strips that isn't fattening? I tried a buttermilk mix with herbs and flour, but it never browned and the chicken was done. I'd like it to be crispy.

All I do is dip it into egg, then Italian seasoned breadcrumbs, bake on foil-lined, Pam sprayed cookie sheet....Bake at 325 for about 20-30 mins for the tenderloins.
This is my recipe and my whole family loves it.
Annies Natural Mustard dressing (lite)
Organic pear juice sweetened corn flakes (whole foods or similar)
fresh ground pepper
onion salt
Marinate your chicken in the dressing (covered in the fridge)
crush your cornflakes up to your liking (I throw mine in the food processor and pulse it a few times)
Poor crushed cornflakes in a baking dish and add salt and pepper. Roll your marinated chicken in the cornflakes and place on parchment lined pans. Bake at 350 for 20-30 minutes or until done.
I use Shake-n-Bake Extra Crispy and I place my chicken on a cake cooling rack which is placed on a cookie sheet. I can't stand when the bottom of the chicken gets mushy so this helps it stay crispy all the way around. For extra flavor sometimes I dip the chicken in BBQ sauce before coating it with the Shake-n-Bake. Yummy!

You can put them on a foreman grill or panini press with just olive oil and herbs. Or drizzle in olive oil, garlic salt, and pepper and bake on a cookie sheet.
I don't care for breading things in the oven, but it can be achieved with panko bread crumbs, they are much crunchier and bigger than regular bread crumbs. I've seen recipies that call for corn flakes too. Shake and bake is an old standard that works too.
I haven't tried it yet, but my sister swears this recipe is her new favorite. Her hubby raved too.

olive oil with about a table spoon of garlic (i buy the kind in a jar) and italian seasoning. about 1 tablespoon mix it all up bake it til its done super easy and good. we dip ours in ranch i know knot the healthest but sooo good!
