Whole Roasted Chicken


1/4 cup olive oil
1 envelope GOOD SEASONS Italian or Garlic & Herb Salad Dressing & Recipe Mix
1 large roasting chicken (6 lb.)

PREHEAT oven to 350°F. Mix oil and salad dressing mix; brush under skin and on outside surface of chicken.
PLACE chicken on rack in roasting pan.
BAKE 1-1/2 to 1-3/4 hours or until chicken is cooked through (180°F ), brushing occasionally with the salad dressing mixture.
Serve this juicy chicken with mashed sweet potatoes and a steamed vegetable.

Lemon Mustard Roasted Chicken

1/4 cup GREY POUPON Dijon Mustard
2 Tbsp. lemon juice
1 Tbsp. olive oil
1 broiler-fryer chicken (3-1/2 lb.)
1/4 tsp. salt
1/8 tsp. pepper

PREHEAT oven to 425°F. Mix mustard, lemon juice and oil in small bowl until well blended.
PLACE chicken on rack of broiler pan or on roasting rack in shallow baking pan; brush with mustard mixture. Season with salt and pepper.
BAKE 40 minutes or until cooked through (180°F).

you can add chopped rosemary and garlic for more flavor.

This is my favorite whole chicken recipe...& especially good for the summer b/c it uses a crock pot, so you don't heat up the kitchen with your oven!

Crockpot Roast Chicken:

3-4 lb whole frying chicken
half an onion, chopped
1 rib celery, chopped
salt to taste
pepper to taste
1/2 tsp poultry seasoning
1/4 tsp dried basil

1. Place chicken in crock pot, cavity up. Sprinkle inside the cavity with salt, pepper & poultry seasoning.
2. Put onion & celery inside the cavity, & sprinkle the outside of the chicken with the basil.
3. Cover & cook on low 8-10 hours or high 4-6 hours.

**I use a spatula & large spoon to lift it out of the crock pot onto a cutting board when finished cooking. It will literally fall off the bone! My family usually only eats the white meat, so I pick off the rest and use it in recipes like chicken spagetti or chicken & dumplings. Yummy!

Here's the world's easiest way to cook a whole chicken....

Items Needed:
1 whole chicken
salt/pepper
seasonings to taste
slow cooker/crock pot

1. Rinse and pat chicken dry
2. Wad three pieces of aluminum foil into 3 to 4 inch balls, and place them in the bottom of the slow cooker.
3. Place chicken in crock pot on top of foil and top with seasoning.
4. Cook on low 8 - 10 hours (juicies will run clear)

What's great about this is you can have with veggies & rice the first night. Then the next make something totally different like chicken tacos or chicken salad with the leftovers.

The previous poster had a recipe using dry salad dressing mix; I think that would be great with this recipe too!

OK here is our favorite. You can do it on a grill or in the oven. Take a can of beer, soda, fruit juice, or whatever (has to be a can) empty about half of the contents and place the can (1/2 full) into the cavity between the legs. Stand the chicken upright on the grill rack (if in the oven stand the chicken up on a cookie sheet with sides to catch any liquids. In the oven cook at 375 or so until tender and juices run clear, on the grill until tender and juices run clear. This will be the moistest chicken ever! Enjoy!

The corck pot recipe looks great- you can also boil the chicken and then shred it up by hand and use i8t in chicken enchaladas. Just follow the recipe on the back of the Enchalada Sauce!

One recipe that I have found and my family absolutely loves is so easy. Depending on the size of your chicken (I usually get a 3 or 4 pound bird) you put 3 or 4 big basil leaves, a couple of cloves of garlic (minced or whole) and about 1/2 of an onion (sliced) inside the cavity. Then drizzle the outside of the bird with a little bit of olive oil, honey, salt and pepper. Then put in the oven at 350 degrees for about two hours. After the first 45 minutes or so you need to baste once every 30 minutes or so. The first time I made this my kids kept asking for more. So now I make it almost once a week.

Beer Can Chicken! It is awesome and we always get compliments! Take the whole chiken, rinse it, pat it dry. Take a can of beer any kind or even soda if you want. Use a church key to open the top of the can and empty can to about 3/4 full. Stick the chicken on top of the can. Rub chicken down with olive oil and seasoning, we use Tastefully Simple's Garlic Garlic. Heat BBQ up and cook chicken for about 1 hour. YUMMY!
