It is cold and rainy and raw here today.
I've got two dinner options. Which one would you prefer?
Chicken and dumplings or
White chili with chicken and white beans and rice (it will be spicy)
I have everything I need for both. And both take about the same length of time (which is forever) to make.

I love white chicken chili. One of our favs around here....
Here's my recipe:
2 poblano peppers, diced
1 red bell pepper, diced
1 med onion, diced
2 garlic cloves, diced
saute for about 6 minutes in a big pot, in 2 TB of olive oil, stirring constantly
Then, add:
2 cans diced tomatoes with chili (I use del monte)
1 can navy beans
1 can black beans (drained/rinsed)
The meat from one rotisserie chicken, pulled (about 3 cups)
1 pkt McCormick white chicken chili seasoning
1 bottle beer
Bring to a boil, then reduce heat to low and simmer for an hour. 5 minutes before serving, throw in a half can of white corn.
Serve with shredded cheese, sliced black olives, and tortilla chips.
Leftovers often are made into burritos. :)

It depends on if your serving the white bean chicken chili with corn bread or not! If you're going to serve with fresh corn bread and butter, maybe some sour cream and shredded cheddar, I'll take the chili.
If not I'd love the chicken and dumplings...what time should I be there?

Chicken and Dumplings. My husband used to make white chili so much that even the thought of it makes me nauseated any more. :/
Roasted Turkey dinner, mashies, carrots, stuffing, gravy, cranberry sauce, green beans, egg nog..........oh sorry that was not the choice, just dreaming!!

White chicken chili for sure! That is my favorite rainy day food ever!!
I like both. I've never make white chili, but I have a chicken chili that I've won some chili cook offs with. I've seldom had chicken and dumplings so I'd vote for that. But if I'd had the dumplins last I'd vote for the chili next. (I've posted my chicken chili recipe several times here on Mamapedia. If you want it pm me.)
Congratulations on being skilled enough to be able and willing to cook from scratch. It takes a lot of practice and love to do that.

Both sound wonderful but right now the Chicken and Dumplings sounds really good! I sure wish it was cold here.....We are going to be in the 90's here today. Ugh! I am so ready for some cooler weather! Enjoy your dinner whatever you decide to make! :)

I would do chicken and dumplings (if I knew how). I wish that was on my list of options today as even if I knew how to make it, it would be a no go. It will be almost 100 today. Is summer over yet?

I'll go for the chicken and dumplings, because I'm not a spicy-food fan. However, my husband will take both his and my share of the white chili, thank you very much.
