What Would You Do? Cooking Question

I pulled out chicken for dinner...however, I didn't READ the bags prior to pulling them out (chicken legs and chicken breasts)....URGH!!!

I was going to marinate the breasts and then bake them....now....I'm thinking a corn flake crust on both the breasts and the legs...

what you would do?

Oh yeah - we are having rice and spinach with the chicken....

ETA: Would you batter the chicken with flour and eggs and bake? Would you just fry it?

THANK YOU LADIES!!!

I ended up coating them and frying them - I used the crushed corn flakes with garlic and onion!! FAB!!! I used olive oil too!! YUM!!

I will check out the bread crumbs...thank you!!

Is the skin still on?
If yes I would toss it all with olive oil, fresh crushed garlic, salt and pepper and ROAST it (turn the pieces over at least once so they roast evenly) maybe add a little lemon juice an thyme to the mixture if you have it on hand :)

we like Shake and Bake
I also fry chicken on occasion
I used to have a recipe with Lipton onion soup, cream of mushroom, chopped onion and rice and bake all together

It's 5:10 here and I still don't know what I'm cooking for dinner.. at least you are on the ball...

ditto Mamzita. If you are going to roast anyway, I would also cut up some potatoes, onions, and carrots to go in the pans, as well. I'd save the rice for another night.

Or.....you could do the old standby - cambles "cream of whatever you've got" soup, chicken, and rice casserole.

May be too late but if you have shredded cheese you can mix with the bread crumbs and then cover the chicken and bake it.

I just cover mine in bread crumbs drizzle with a bit of italian dressing and then bake them in the oven. no egg etc just bread crumbs

If you have at least 8 hours, Giada has a great balsalmic chicken recipe, but you really need to marinate them at least 8-12 hours. All the other moms gave great advice.

Cheryl, have you heard of panko bread crumbs? I just discovered them the other day, and they are fabulous!! My MIL says they are potato, but I never checked to make sure. Anyway I was thinking that fried chicken made with these would be fabulous. Hope your dinner was good!!!
