when my baby was 1 she either got baby food or bits of whatever we were eating, I never made her anything different.
My son just turned one and he's been eating baby food and mashed up food for the past six months. I am ready to start him on table food so he can learn to eat food with texture. We tried feeding him what we eat from time to time but he is very hesitant in letting us put food other than baby food in his mouth.
I just want to get some ideas from you mamas out there to see what kinds of food you cook your one year old that's just started to eat table food. Also if you don't mind giving me a sample menu for the day of food that you feed your one year old. Also how much does a one year old actually eats when he first starts eating table food?
Another thing is that he doesn't really know how to feed himself yet and only has 2 teeth on the bottom.

He can eat a whole range of foods. Just put them on his plate and even if he doesn't try it the first, or even fifth time, he will eventually.
"Remember not to give him liquids; i.e. milk or fruit juices just before meal times. If you are breast feeding, whole milk will not need to be offered as frequently. Serve no more than 24 ounces of milk per day by one year of age. This will promote an increase in the amount of food your baby eats. Too much milk and too little food may lead to iron-deficiency anemia. "

If your baby is hesitant to have it put in his mouth for him, cut up small bites of whatever you're feeding and put 2 or 3 bites on his highchair tray and let him feed himself.
Any of the foods he's eating now you can do--if he's used to mashed/pureed carrots, cook some carrots until soft and cut into bitesize pieces, etc.
My one year old eats blueberries, small pieces of strawberries, green beans, peas, carrot slices, cut up chicken or pork chops (beef is too tough to chew), toast with peanut butter and jelly, cheerios, cut up cheese slices, So Baby yogurt, baby puffs...just about everything. He eats three square meals a day, 2 snacks and drinks about 2 cups of whole milk daily.
Here's a daily menu:
Morning: 8 oz. whole milk in a sippy cup, oatmeal, and toast in small bits
Morning snack: 1/2 cup of cheerios or blueberries
Lunch: 1/2 a turkey sandwich cut up in bits with applesauce and slice of cheese cut up
Afternoon snack: 4 oz. whole milk and slices of bananas
Dinner: Cut up chicken, veggies, and 4 oz. whole milk
Night time snack: Cheerios or yogurt and/or 4 oz. whole milk
My little guy has 10 teeth, so no problems with chewing, but I'm still there when he eats just so he doesn't choke.
I AVOID these foods because they can cause a baby to choke: Potato chips, popcorn, peanuts, Doritos or tortilla chips, and raisins.

At 1 year, our daughter was basically eating what we ate. I just cooked without salt and remove all choking hazards and raw honey from the menu. I would cut the food in very small bites to avoid choking and she was good to go.
At this age, she was already refusing baby food or being spoon fed. So she could feed herself: peas, carrots, beans, chick peas, lentils, rice, pasta, potatoes, cauliflower, broccoli, spinach (very well cut), ham, soft chicken, fruits, tofu, ....
Put the food on his plate and let him experiment with it (smash it with his finger first...). Don't try to feed him. Let him do what babies do: putting stuff in his mouth!

well i let my baby (just turned one) feed herself, its messy for sure but its the easiest way to get her to try stuff, if its cut up small on her tray & she gets to pick it up she'll eat about anything! mostly she eats what we eat, but if it's too spicy or whatever then i make her a little something...i always have a little leftover chicken to cut up & some leftover steamed veggies
typically for breakfast my baby will have a glass of milk first thing in the morning (she doesnt like to eat right when she gets up) then a little later she will have a piece of fruit (banana, orange, mango, kiwi even apple cut up very small) with a little dry cereal like cheerios or sometimes i break up a piece of whole wheat bread
then for lunch its usually some leftover steamed veggies (anything i have left from dinner the night before, green beans, squash, asparagus, broccoli etc) with some chicken & sometime a little string cheese (or mozzarella, i use it most because its made from skim milk)
snacks are usually some fruit or maybe some cheese & crackers, sometimes yogurt
then for dinner its whatever we have, even if its spaghetti, i just cut it up small & she eats with no clothes just a diaper & a bib, but its into the bath after dinner anyway (sometimes it into the bath after every meal! lol!)
I think you have some great responses here on what to feed and sample menus, etc. So I am going to answer your question on how much. The only thing that I always made sure to remember is that your baby's tummy is as big as his/her fist.
