I like a traditional green salad with tomatoes, onions and cucumbers with balsamic vin dressing. And garlic bread.
I am making spagetti tonight. I am sick of just having that though. Does anyone have some goodies that will go great with it? We are trying to watch our "fat stuff" intake so anything rather healthy would help/

Salad is great with it - - you can get the boxes of 50/50 mix (spinach and spring mix) to feed 4 easily - balsamic vinegar dressing or just V & O - yum!
Garlic bread or a good crusty italian bread
Broccoli and dip - for some reason, it really works well with spaghetti!
Any fresh raw veggie and dip. I usually serve these with most meals!
I also like to doctor my spaghetti by either making my own sauce or adding to a jar sauce - ie basil pesto, fresh mushrooms, diced tomatoes, fresh garlic!
Caprese salad - fresh basil, mozz, tomatoes, balsamic vinegar (if you wish) - so good
And don't forget the parmesean cheese!
We always have it with a green salad and garlic bread, though I no longer eat the garlic bread myself, due to the "fat stuff" intake you mention :(
Do you do meatballs too? If not, that's fun and different and kids love helping make meatballs!
My favorite thing is to chop up some fresh zucchini and add it to the sauce. It comes out perfect and it's so tasty. You can add yellow squash too.

fish is pretty good - especially fish sticks for little ones

Garlic bread, salad, steamed roasted asparagus, fresh peaches. I usually add in seared sausage, mushrooms, bell peppers, and sometimes squash in our sauce.
We will do a garden salad with it. Do you like pepprocinis? I have to have a few w/my spaghetti. I will drizzle the juice on top and parmesan cheese of course. I now use spaghetti squash in place of noodles, though the rest of the family eats regular noodles. I love the squash and have eaten it this way for over a year now. Only 5 calories a serving vs. 200 for noodles. That way I don't feel guilty having a slice of garlic bread. =)
You could aslo do a grilled chicken with sauce and a slice of swiss on top, kind of a chicken parmesan without the breading. =)
We always have veggies with ours.
I really like green beans tossed with a little olive oil and Italian seasoning (sometimes add grated Parmesan) with our spaghetti.
A nice green salad with mixed lettuces, arugula, red bell pepper - tossed with fresh herbs and olive oil - no heavy dressings.
How about eggplant or cauliflower.
Now I will have to make a pot of sauce this weekend! LOL
my mom makes spinach and cuts up slices of sausage (she usually uses linguini but i dont see a difference w/ spaghetti) &makes a light garlic&oil sauce &mixes it all together

fresh veggies (cucumber, carrot sticks, celery, radish, broccoli, cauliflower, cherry tomatoes) with ranch dressing ( you can make healthy versions of ranch very easily. 1/3 c light mayo, 1/3 cup plain yogurt, parsley, bit of garlic or garlic powder, cilantro if you like it, any other dried or fresh herbs like basil oregano, salt, pepper- throw in blender or food processor)

I like to serve a side of broccoli with spag & meatballs are always yummy!!
To add some extra zing to your sauce you can puree blanched or roasted bell peppers in the blender and add them to your sauce.
I like a good salad.
One thing I do to liven up my spaghetti is to add sliced mushrooms, diced brown onions, sliced green onions, celery leaves, hamburger, garlic granules and sliced or diced black olives. When I serve enough that I need two jars/cans of spaghetti sauce, I sometimes substitute one can of red enchilada sauce for one can of the spaghetti sauce.
If you don't mind the carbs, take a loaf of french bread and slice it down the center. Put it in your broiler and let it "toast". When you have a nice rough toast, take and peel a clove of garlic and rub it across the crusty part of the french bread. It make wonderful garlic toast/bread. Add butter if you aren't watching calories. I sometimes add sharp cheddar cheese in addition to the fresh cloves of garlic. Then put it back under the broiler just long enough to melt the cheese. You can also add parmasean cheese.

Italian Salad and Garlic bread.
I buy specialty Hot Italian Sausages from my butcher and I usually just cook 1 for the 3 of us.
You could skip the traditional sauce and add a little olive oil and sauteed veg (peppers, squash, mushroom). Garlic bread on whole wheat or use whole wheat pita instead. Use it as a base for a veg-ful chili. We almost always serve a side like a salad or broccoli.
We go the simple way with garlic bread and veggies or a salad.
Salad. Turkey meatballs. And we usually add a bunch of chopped up vegetables to our sauce - onions, peppers, garlic, broccoli, peas, etc.
I like meatballs, Caesar salad and garlic bread with my spaghetti.
Try different sauces.
Tomato marinara type is usually lower fat than alfredo type (but both taste wonderful) and don't forget pesto (Newberg sauce or any number of French sauces).
You can also lightly oil the noodles with olive oil or butter and sprinkle with basil or other herbs.
Instead of meatballs, try pieces of chicken breast or shrimp or scrambled eggs (works like fried rice) (some people like tuna but I don't care for it with pasta myself).
Play with adding veggies - peas, onions, peppers, onions, asparagus, roasted garlic, eggplant, mushrooms, etc.
We've been getting away from long noodle like pasta and doing more with different shapes (shell, bow, rotini, penne, etc) and whole wheat.
Give rice noodles a try!
The combinations and possibilities are limitless!
I do a spinach salad with tomatoes and broccoli. I also use a balsamic/olive oil dressing. It goes well with spaghetti..Try ground turkey instead of using ground beef with sauce. It's healthier, too.

you can try this also.. its really good.. and really easy to make. You can put your spaghetti in it and not have to follow the spaghetti recipe given. (Thats what I do ;) )

I found a recipe where you add pepperoni, scrambled egg, sliced green peppers and onions and pamersian cheese to the cooked spaghetti and toss to warm really yummy.
Also have your green veggie salad add spinach to it.
Make your meal colorful as you also "eat with your eyes" as well as your mouth.

I make garlic butter green beans. I only use cut or whole green beans. The other just don't taste as good.
I open the can and drain the liquid out then dump the green beans in a bowl. I spread some real butter over the top and sprinkle some garlic powder on that. As the microwave heats them the butter melts and the garlic covers the beans evenly.
I fix Great Value brand garlic bread on the griddle and have a green salad if I want one.
