I just saw Jenna's question about how other's cook ribs, and I immediately got the same feeling as I do when anyone posts about cooking - besides hunger, that is - ENVY. I soooooo wish I could cook! That is one area in my life where I feel totally inept. I know that it's probably not all that difficult, since hey, most people do it, don't they? But I'm so intimidated by cooking! I will be a SAHM come February, and I plan to cook all the time at home, so I will be forced to learn! But that's my envy. I envy those that can cook.
Whenever I see one of the many, "Am I pregnant" posts, I see a little green. While I am happy for them, I wish they would just wait a few days and take a test and trust the test results without asking everyone. I have taken multiple tests over the last 3 years and still hope for the day I see a +. Again, I am happy for them and I am blessed with my 1 bio son and many foster kids so I can usually get over my upset pretty quickly but it is still frustrating!

As horrible as I feel inside for admiting this, I envy SAHM's who do not live paycheck to paycheck. I know I am very lucky to be able to be a SAHM.
There is never any money left after payday. Usually not even a few dollars. But we make it work somehow and some weeks I don't know how we manage. But we always do because we know it is what we want for our kids.
Oh, and I envy those who have husbands that aren't complete slobs like mine.

Other than that, I can't say I envy, but I wish I put more time and effort into the way I look. Some women make it look like it's nothing, but OMG it takes soooo much to look 'put together'!! I'll never make it there, but I HAVE been making an effort to put a little mascara on daily ;)

I work from home managing the financials of our company, I substitute teach, I am on the board with daughter's cheerleading and I cannot for the life of me keep my house the way I would love to keep my house.
I envy those who naturally have a house that is ready for anyone to walk in and walk anywhere in the house at any time. GEES... I try so hard but with 3 dogs and my 16 yr old and managing all her cheer clothes and schedule, the housework is not a up to par as I would like.
Don't get me wrong, it is not a pig sty, I do laundry daily, sweep, etc but everytime I dust, I look around and I need to do it again already.
My hubby is quite anal about the house and sometimes he just has to pitch in and he does. However, I am very anal over my bookkeeping, financials, files, etc and he knows if he ask about a receipt from 10 yrs ago, he will be looking at it within 10 minutes!

I was watching a documentary TV show yesterday and there was a man, buck naked living in a tree house in Papua New Guinea. Everything he owned, everything he ate... he or his family/village made themselves. He had no "modern things", heck not even clothes!
Talking to the cameraman (who probably had a cell phone, a pack with food and millions of dollars worth of gear) he looked out at the forest around him and said "Look at this beautiful forest I live in, I could not be more content"
I envy him.

The best advice I have for you about cooking is that it's YOUR kitchen - don't be afraid of it. I was where you are a few years ago. I would not even attempt to cook something that didn't come in a box and have instructions, because I was scared that 1) it was going to suck, or 2) I'd make someone sick. I was literally terrified to cook for other people!
So I started looking up recipes for specific dinners I wanted to make, and started practicing making new and different dishes from scratch with a recipe. Sometimes they were good, sometimes they sucked. :) But I kept trying...every now and then I'd hit on something I could do really well, so that got worked into a weekly rotation in our house.
Don't laugh at me, but what really made a difference in my cooking was that I started watching the Food Network. When you watch a chef cook, and they talk about what they are doing while they are cooking, you pick up TONS of valuable knowledge. Ideas of what flavors go well together (like fresh sage and butternut squash, or fresh nutmeg grated into a cream sauce, or a hint of lemon in a pesto pasta dish). Anyway that knowledge begins to stick, and before you know it, you don't HAVE to consult every single line of a recipe - you can just refer to the highlights because you already know what temperature the saucepan should be on and how much (and type) of oil to use to saute your mushrooms, for example. I do all of the cooking now in my house and I've found that I LOVE it. Don't be scared of it, just start trying it.
And I envy women who don't have fat arms!

I envy all those parents out there who have their parents (grandparents) that their children get to visit, or to babysit or just to spend time with family. I envy all those parents whom have family they get to see, and that their kids get to see. even if they only get to see family members once a year that's still more than what my kids get. we have no family within 3,000 miles to the east and west of us.
I see how much my kids want to see the family they have never know. I miss them a lot too (too expensive to fly to either place right now) I see how my daughter cries for her grandma she will never know. (my mom died 16 years ago) that is something I see so many people take for granted and not fully appreciating. (IMO) For that I am envious very much.
