What Are Your BEST Concert in the Park/picnic Recipes?

We are going to a summer concert - without the kids (YAY!) - and I need to pack a picnic dinner.

My husband LOVES bocincini caprese salad with our garden tomatoes! But I am looking for some substantial dishes for sides and an entree that will travel well.

We are packing wine, plastic wine glasses, candles and a big blanket! So now if I can just decide on the food I'll be set!

When we do jazz in the park, we take: Simple salad (freshly cut roma tomatoes or sliced cherry tomatoes with sliced freshed mozzarella drizzled with olive oil with fresh basil); roasted red pepper hummus with either wheat flatbread or cucumbers, rotisery chicken-sliced up served on a bed of spinach/mushroom risotto, and for desert minature lemon-tarts. We drink Sparking apple juice or Sparkling pear juice.

Why not just take a baguette, a couple of great cheeses, prosciutto, some fruit and a few chopped up fresh veggies?

It's really hot in Texas so substantial is not what we go for! We prefer light and cooling. I like fruit - strawberries, grapes and cheese to nibble with the wine as desert or appetizer. Maybe a whole wheat wrap or pita full of chicken and baby spinach with feta, black olives and tomatoes for the entree. I plan things that are super simple, taste good at room temperature and are not heavy, and require no plate or utensil. It's no fun if it's a lot of work or too fussy. Yall have fun and dont forget to take pictures!

I like hummus and pita or ciabatta bread, brusetta, pasta salad, chicken salad with crusty bread, a variety of cheeses with bread or crackers, marinated veggies (olives, cucumber, grated carrot) just to name a few.

You have some wonderful ideas already.

My 2 cents would be cold fried chicken, potato salad and cold seedless watermelon. If you want an effortless dinner for you, go by Sams and get their rotisserie chicken, cut it up at home and let it sit in the frig over night.

(For dinner another day at home, save the juices from the rotisserie chicken add a can of chicken broth, bring to a boil and add one cup of rice. Makes a delightful rice pilaf.)
