Vegetarian Thanksgiving

Just wondering if anyone has any Vegetarian Recipes for Thanksgiving? I would like to try some. I do not eat meat, but I do consume eggs, milk and other dairy.

I'm glad to hear that some people dug the Tofurkey. I've been a vegetarian for 20 years and frankly, think it's rank. We've had some luck with the Quorn brand "turkey" roast, but that too has to be cooked with plenty of root veggies, and mushroom gravy to be really tasty.

A couple of things that we tried last year were a mushroom torte thing, and veggie empanadas. The veggie empanadas are really easy. I use potato, carrot, celery, onion,mushroom (i use shitake, but any kind will do), red bell pepper and corn--all diced and cooked on medium heat with garlic, olive oil, thyme, sage, basil and a pinch of salt and pepper until the potato and carrot are soft.
Then I put them into circles of pastry dough (i make my own pastry dough--just a basic dough with soy margarine sticks, pastry flour, and unbleached flour), fold over the circles so that you have a half circle shape, and bake at about 375 until they're brown.

We LOVE LOVE LOVE the Tofurkey feast! I usually make that with some mashed potatoes (the Tofurkey feast comes with some delicious gravy!)carrots and sweet potatoes.

i find tons of great veggie recipes on the internet- googling is the best. i have gotten a few cookbooks, but have not had success with any one of those that is trule awesome and full of stuff that i consider good. there are so many cool things you can do with tofu, but because i don't eat meat i'll do squash and salad and my own dairy free version of green bean casserole- and stuffing with alternative- grain bread. we have just found out that my entire family is allergic to wheat and dairy, so it's a challenging thanksgiving this year! anyways, check the internet out! it's a vast recipe book! (this is probably redundant because you most likely already thought of that!)

I am also a vegetarian...I don't have any special out of the ordanary recipies...but have you had a tofurkey? (tofu turkey), my sister introduced me to the idea, and its really not that bad.

For our Holiday meal, I use Bryanna's Marinated breast of Tofu, make a small mound of it (after pan frying it) on a cookie sheet, then I layer prepared stuffing over that. Then lay phyllo dough over all. Cut out decorative leaf shapes from any leftover and just lay them at the base of the mound. I bake covered for maybe 40 mins, uncover and continue baking for 10-20 mins to brown the dough. There was something similar to this in a very old Vegetarian Times magazine, that I have tweaked over the years to our preferences. I just fix regular side dishes with this and again Bryanna's Yeast gravy for the potatoes.
