Substitute turkey for the chicken --simple as pie ;-))

You can also freeze some of the meat and gravy to use at a later time.

Don't have a pot pie recipe, but we like to put cooked stuffing on the bottom of a pan, layer it with all the left overs and some gravy and bake. Yummy casserole.

I would use the chicken recipe and just substitute turkey for the chicken.
It will be fine!

There is a bisquick pot pie where you could cook the bisquick with turkey or chicken or beef is even good, layer veggies, cream of chicken soup and some milk and cover it for about thirty minutes at 350 or so...yum I do not have the exact recipe at the moment, but I'd say that's pretty close.
but I would like to hear yours...

Easy peasy.... Use your turkey instead of the chicken!!!

No need for a separate recipe.
