Can't Eat Beef anymore...need Some New Recipes!

I recently discovered that I am allergic to red meat. In the past our family ate mainly ground beef/beef dishes throughout the week with some chicken and fish dishes mixed in. I cook a lot and make a lot from scratch but I do tend to make a lot of QUICK oven dishes (casseroles, etc) and crockpot stuff or soups due to a busy schedule. I am needing new recipes. I can eat turkey, fish, beans, chicken and some pork (though our family doesn't care to eat a lot of pork). I need recipes that are QUICK AND SIMPLE, WITHOUT A LOT OF FANCY INGREDIENTS, AND KID/TEEN FRIENDLY. I would love to have dishes that are meatless and more easy soup and casserole dishes. Anyone have any recipes that are favorites of their families that they would share? I love Rachel Ray but a lot of times her recipes really take a lot more time than I have and ingredients that I do not have in my pantry/freezer. I frequent allrecipes.com and some of those sites but I am looking for recipes that you all feed your families a lot...your good ol' standby's! :) Look forward to hearing from you mommy chef's out there! :) Thanks!

So What Happened?

Ah! Thank you to each and every one of you who posted to give me ideas. I had already been sub ground turkey for most dishes that called for hamburger...I probably should have included that info in my request. BUT, I am still very grateful for all of you who took the time to give me recipes and new ideas. I plan to try quite a few of them. I hope if you see this post and have more to share you will message me - this is a lifestyle change so I will always need new and fresh ideas! THANKS TONS N BUNCHES :)

Quick and Easy Chicken and Dumplings:

I bake a chicken the previous night for this recipe. You must use some of the juices from the baking pan to make it right.

Ingredients:

chicken (some of the juices from baking it)
carrots (whole baby ones)
1 can of Chicken and Stars soup (small)
1 cup frozen peas
1 cup frozen corn
salt and pepper
2 cups Bisquick
2/3 cup milk
butter

Take one baked chicken (small is fine) and tear all the meat off into small, bite size pieces. Place the chicken pieces in a large, deep covered pot with about 4 inches of tap water. Add the carrots, can of soup, salt and pepper to taste and bring to a boil. Once it begins to boil, I crack the lid and lower the heat so the water can cook down a bit.

While waiting for it to boil, mix together the Bisquick and 2/3 c milk in a bowl. (dumpling directions are on the side of every Bisquick box). Set aside.

Add the frozen peas and corn to the pot. After the liquid has boiled down to 3 inches, I take a tablespoon and add the dumplings to the pot just dropping them in the soup in big dollops. The entire pot should be full of them. Lower the heat to low and cover for about 10 minutes then remove the lid and cook another 10 minutes. The dumplings should have swelled up really nice and big.

Serve in a bowl with a dollop of butter on top to melt.

My kids and friends go absolutely nuts over this ridicuously easy recipe!

Note: The Chicken and Stars soup is an absolutely necessary ingredient. You will have to experiment with the amount of water you use. Sometimes, if I cook it too long, I wind up not having enough liquid to serve with the dumplings.

Hi Roxanna!
This one takes a little bit of time, but can be assembled one night and cooked the next!

Chicken, Broccoli & Rice Casserole

Boil and drain 2 or 3 chicken breasts, cook 4 servings of rice, and one bag of frozen broccoli (I like chopped broccoli). Then, in a small sauce pan, heat one can each of cream of chicken and cream of mushroom with 8 oz Cheez Whiz. Chop the chicken into bite-size pieces, and combine all ingredients in a 9x13 pan. Cook on 350 for 30-45 minutes until heated through.

Tips: I boil the chicken, then remove the chicken and use the same pan/water to cook boil-in-bag rice. Then I use a medium saucepan to steam the broccoli, set it aside, then use that pan to heat the cheese mixture. This saves on dishes!

We use ground turkey in anything that calls for ground beef. It's just way healthier anyway, and in a casserole, it's hard to tell the difference.

Here are two of my favorite recipes. (The second one is vegan.) Oh, and I only cook easy.

Tamale pie:
Brown ground turkey. Add some taco seasoning (to taste). Once cooked, add canned tomatoes, frozen corn, pinto, black, or other beans. Pour into a pan and top with shredded cheese. Mix up some jiffy corn muffin mix and pour on top. (2 boxes works if you're using a 9x13 pan.) Bake (temp. on box) until corn bread is cooked. Put a little butter on top to melt.

Black bean and sweet potatoe enchiladas:
Combine canned sweet potatoes (you can use fresh, this is just easier, and it doesn't seem to make a difference) and canned black beans (we like a 2 to 1 ratio, but you can adjust for your family's taste ). Mash slightly.
Pour canned enchilada sauce in 9x13 pan. Flip corn tortillas in it so both sides are covered. Put mixture into tortillas and wrap up. Bake at 350 until slightly crunchy and warmed (approx 30 min.) You can do this with flour tortillas as well. If you don't need to do vegan, you can add cheese as well.

I know you said you didn't care for pork, but this is a great recipe and you could probably substitute chicken for the pork.

Pulled Pork Burrito's or Taco's

2lb Pork Roast
1 Can Original Rotel or salsa
Garlic Powder
1 Bag Frozen Southwestern Veggies (Hyvee)

Put Roast or Chicken Breasts in Crock Pot
Pour Rotel over Roast sprinkle with Garlic Powder
Cook for 8-10 hrs-use forks to pull meat apart-
1 Hour before it's done add the southwestern veggies
After done drain juice- Make Burrito's or Taco's

Oven-Baked Chicken Parmesan

4 boneless skinless chicken Breast halves
1 egg slightly beaten
3/4 cup Italian seasoned dry bread crumbs
1 Jar of Ragu or Favorite Pasta Sauce (I prefer homemade)
1 C shredded Mozzarella Cheese

Preheat oven to 400* dip chicken in egg then in Bread Crumbs, coating well.

In 13X9 glass baking dish arrange chicken. Bake uncovered 20 minutes.

Pour Pasta sauce over chicken, then top with cheese. Bake an additional 10 minutes or until chicken is no longer pink.
Serve over favorite pasta. Spaghetti or Angel Hair is great

Hope you enjoy

if you like spicy chicken this is a great recipe and easy... i usually make this for taco/mexican night. take 2-3 pounds of frozen chicken breast (boneless and skinless) and put in crock pot. one packet of your favorite taco seasoning (or make your own). 16 oz of favorite salsa. put on low and let go all day. before you are ready for dinner shred the chicken with a fork (this should be really easy since it's been cooking all day) and add a small tub of sour cream and stir all together. add lettuce/cheese/tomatoes/refried beans/onions on the side and you can have tacos/tostada whatever you like. you might want to double the recipe and you can have leftovers.

you can also use the same premise for creamy chicken and mushroom. use frozen chicken again with cream of mushroom soup. towards the end of cooking shred the chicken again and throw in some frozen veggies. you can make some pasta to put it over or it tastes great with mashed potatoes too.

hope this helps...

If you can eat other types of meat (ie: venison of all sorts...) you could do that for one thing. Most venison cooks up just like beef and as far as I'm concerned there really isn't a difference, despite peoples complaints that it tastes "gamey" to them. The health benefits far outweigh that! For example, beef contains 12 g of fat while buffalo contains only 4g...

Otherwise, I guess going to any of the online recipe sites would be very helpful! AllRecipes.com, leftoverchef.com, and many others for wonderful ideas!

Hope this is some help! And here's my fave chick pot pie recipe (quick and easy-peasy!)

one box refrigerated pie crusts
one can chicken gravy
one can chicken breasts in water (or use leftovers from another nights roast chicken)
one bag frozen veggies (your favorite variety...dont be afraid to experiment!)

pre heat oven to 350F. cook veggies per bag instructions, then drain excess water from the veggies and the canned chicken. Mix canned chicken and veggies together, set aside. Take one of the refrigerated pie crusts and place on bottom of pie pan, fill with the chicken and veggie mix, put the gravy on top, then place the second pie crust on top. Crimp the edges together or get all sorts of creative with the top crust (it's up to you again!) and then cook for about 40 min or until crust is golden brown.

I hope your family loves this as much as mine does!

I don't eat beef. I don't really have any recipes, but I eat a pretty well rounded diet. I make normal casseroles, meatloaf, tacos, enchiladas, spaghetti with meatballs, etc., I just sub out the beef for chicken or turkey. Ground turkey is great, I use it often. You can also occasionally find ground chicken, or you can ask your butcher to grind up some chicken for you.

I like to make turkey loaf. I use a pound of ground turkey and mix it with a pound of turkey italian sausage. Mix in some breadcrumbs, an egg, some cheese (I use a blend of parm, romano, and mozz - it's in the shredded cheese section, it's called Italian mix or something by Kraft), and then bake as normal.

I tried a good bbq chicken recipe the other night. It's fantastic! http://allrecipes.com/Recipe/Baked-Bar-be-que-Chicken/Det...

I also like to marinate chicken in a mixture of italian dressing with worseshire sauce (about 1/2 and 1/2) which some garlic powder, onion powder, and cracked pepper. Let it set for 30 min to an hour and throw it on the grill. Really tasty.

Turkey breakfast sausage and bacon is good too. You can find turkey and chicken sausages like brats also, they are pretty tasty. Whole Foods has a really big variety.

You shouldn't need to worry about finding entirely different recipes, just make the substitution and use a little creativity. I really don't think you can tell that big of a difference between ground beef and ground turkey when it's seasoned.

Pressure cook chicken breasts. In a seperate pot, put 2 or 3 cans of chicken broth, bring to a boil, & add egg noodles. Cook until broth is absorbed in the noodles. Add chicken to noodles & mix. Then serve!

Pressure cook, or place in crock pot, ham(ham steak), potato halves, & green beans. Let pressure about 5-10 minutes. Then it's done! Serve

Pork ribs & sourkraute in the crock pot. Cook until done & serve!

Cut up potatoes. Either pour ranch dressing on, or put in a plastic bag with a little oil to coat & add Ranch seasoning. Cook for about 30 minutes. Serve!

That's about all I can think of off the top of my head. I hope this helps. If you do a search for quickie foods, you might find others.

Here is a favorite in our house.
you will need tator tots, 2 cans of cream of chicken soup, 2 pieces of boneless chicken breast or thighs, broccoli or your favorite vegetable, shredded cheese.
preheat oven to 450
In a 9x11 pan fill pan with tator tots. I usually line them up by rows. Bake tator tots for 25 minutes
While tator tots are baking
cook the chicken (you can boil it, fry, or how you prefer to cook chicken) after the chicken is done cut it up in small pieces.
I steam the broccoli in the microwave for 5 minutes.
After the tator tots are done.
cover the tator tots with the 2 cans of cream of chicken soup.
layer with the chicken and vegetable. Sprinkle top with shredded cheese.
Put back in oven for 5-10 minutes or until cheese is melted.

You can also make this with tator tots, chili, and cheese.

or tator tots, cream of mushroom soup, polish sausage, and cheese.

another dish we make is macaroni and cheese, turkey sausage, and broccoli. We use the velveeta shells and cheese and add 2 more cups of noodles to make it family size, add the cooked turkey sausage and cooked broccoli and mix it all up and you have another meal.

I call myself the 30 min cook so most of my cooking is less than 30 minutes and a lot of different types of casseroles. These are easy and favorites in our house. I have also fixed these for church dinners and the kids can cook them easily too.

Hi...here are two easy recipes that my family enjoys.

1--Mix two Jiffy cornbread mixes according to package directions.Spread in a 13x9 pan. Top with a can of turkey chilli that has been heated through (we like Stagg brand).Top with shredded cheese (we like colby/jack, but shredded cheddar or even mozzarella is good too). Bake in a 350 degree oven til the cornbread is done. Cut into squares and serve with shredded lettuce and salsa.
2-- Cut up turkey kielbasa sausage into one inch slices. Add 1 or 2 cans of shelley green beans and 1 or 2 cans of sliced white potatoes and simmer for 15 to 20 minutes. You can also use fresh potatoes instead of canned and cook until the potatoes are done. Another variation is adding shredded cabbage if you like cabbage. You really can't mess up this recipe...we usually make cornbread to have with this meal.
Hope your family enjoys.

My family's favorite is something we called Baked Pasta. It tastes a lot like lasagna but is MUCH less work.
Boil 1 box pasta noodles (any kind) about half the normal time called for (about 6 minutes). Drain. Add 2 jars pasta sauce such as Ragu. Stir in one large container cottage cheese. Spread in 9 x 13 baking pan and top with mozzarella cheese. Bake 350-400 degrees until cheese is melted and bubbly--we like ours to be browned as well--about 30-45 minutes. Serve.

I use kraftfoods.com a lot! You can create your own recipe box to save the good recipes you find so that when you are ready to make them, they are easy to find. You can even specify the type of recipe you are looking for, such as crockpot recipes. That being said, I rarely cook anything with red meat. You know, a lot of times you could probably even substitute with the recipes that you already use. Use ground turkey instead of ground beef. I personally don't like the flavor enough to make tacos out of it, but in caseroles, I don't notice a difference.

I have some recipes that I have found and liked typed into an email. If you want to send me your email address, I will forward them to you. I also have some tried and true family recipes that I can share. I hate to type them in here though because they would take up so much space. Another suggestion would be to check out some cookbooks like "Cooking Light Weeknights." It has some great non-beef recipes and a whole section devoted to make ahead type stuff (caseroles). And they use easy ingredients because "weeknights" are so hectic.

Good luck!

Why not substitute ground chicken or ground turkey in your favorite recipes. My husband recently discovered the joys of using the meat grinder attachment on my mixer. We were surprised to learn that ground chicken burgers on the grill are tastier than the beef burgers we've always made. Cabela's sells a stand-alone meat grinder for $100. In fact, we're going to pick one up this weekend so my husband doesn't wear out my grinder! Next up is buying a turkey breast and grinding it to keep on hand. Good luck to you.

I have taken my family off of beef due to my husband having a strong family history of colon cancer and both families having heart disease. I have substituited ground turkey for those recipes calling for ground beef. We use 93/7 turkey from sloppy joes to tacos. My kids think that hamburger helper is a treat, and I use the ground turkey in those as well. A lot of times I throw in a 1/2 cup of pureed carrots and/or can of diced tomatoes with the turkey in various dishes. For hamburgers, I like to mix a batch with a packet of dry liptons french onion soup mix and some garlic and make them into patties. You can either grill and freeze or freeze and grill when needed. This is a fantastic and easy recipe that was always my kids' favorite:

CHICKEN & RICE CASSEROLE

1 can cream of chicken soup
1 can cream of celery soup
1 can cream of mushroom soup
1 cup rice (uncooked white)
1/2 soup can water
1 cut-up whole raw chicken, skin on

Stir together soups, rice, & water in a bowl. Pour into a 9x13 pan (glass or metal). Arrange chicken on top with skin side up (this protects the chicken from drying out--you can take the skin off before eating, if desired)--pressing chicken down about halfway into rice mixture. Bake at 350 for about an hour. serve with salad and rolls, if desired.

Hi Roxanna have you tried ground turkey? You can use it in any recipe that you would normally use ground beef in. It's cheaper and even tastes better in some dishes than ground beef. This is a really good recipe with or without the ground turkey I'm just os into meat that I have a hard time doing without it. The notes at the end was made for a gal at work that wanted the recipe for what I took to work.

Cheesy Chili Soup

1 can (28 oz) diced tomatoes, undrained
1 can(15 oz) Kidney beans, rinsed and drained
2 can (14-1/2 oz) chicken broth
1 onion, chopped
2 stalks celery, chopped
2 tsp. chili powder
1 cup Kraft Mexican Style shredded Cheese, divided

Bring all ingredients except cheese to boil in medium saucepan
Reduce heat to low; simmer 25 min. or until vegetables are tender. Stir in 1/3 of the cheese
Ladle into bowls. Sprinkle with remaining cheese.

Ok for the changes that I made. For one to fill the crock pot I tripled the recipe but I didn’t notice that it called for a bigger can of tomatoes I just used the same size can as I did the Kidney beans. First off I took two lbs of ground turkey and browned it with my onion and some minced garlic. I replaced one of the three cans of tomatoes with rotel tomatoes. I also didn’t notice when I bought my tomatoes that the second two cans were actually chili ready tomatoes, which means they already had chili seasoning with them so when I got everything mixed together I just sprinkled a little chili powder in it instead of using the whole amount that I would have for tripling the recipe. I didn’t bother with measuring out the cheese when I tripled it I just used my whole package of cheese and I forgot to bring some to our dinner so no one got it sprinkled over their cheese. I think this recipe would also be good with chicken instead of ground turkey

One of our fast simple, favorite meals: (sorry, i don't measure) Cook penne pasta. Cook sweet italian turkey sausage in microwave or stovetop, slice into thin slices. Put pasta, sausage, jar of pasta sauce, throw in some seasonings if you like, add some shredded cheese (usually use co-jack, or italian, or mozz.), put in casserole dish, sprinkle extra cheese on top if desired, bake till heated through! So fast, and it makes so much!

Hey Roxanna,

I just made this a few days ago and it was WONDERFUL! My son even said it's very close to being his favorite meal.

Basically it's lentils and rice flavored taco style that you fix and eat in taco form. Totally yummy. I doubled it (sso I could have leftovers and some to stick in the freezer) and cooked it in the crock pot on low for 6-8 hours. It was probably done at 6-7 hours but we didn't eat till 8 hours (at that point the lentils were more done than I like them).

This was originally from the hillbilly housewife (I think www.hillbillyhousewife.com) website but I got it from my frozen assets yahoo group. The notes below are from that person.

Taco Style Lentils & Rice

3/4 cup dry lentils
3/4 cup brown rice
4 cups water
4 beef bouillon cubes
2 teaspoons chili powder
1/2 teaspoon cumin
1 teaspoon onion powder
1/4 teaspoon garlic powder

In a 2-quart saucepan bring the water to a boil. As the water is heating, add the lentils, rice, bouillon, chili powder, cumin, onion powder, and garlic powder. Bring the whole thing to a nice fat boil. Reduce the heat to low. Place a lid on the lentils and allow the mixture to simmer for about 45 to 50 minutes. The water should be mostly absorbed. You may serve this as it, topped with a little cheddar cheese if desired. Or you can use it to fill burritos or tacos
instead. Both ways are very tasty.

If you have never tried lentils and are looking for a way to make them acceptable to the kids, this one is a good bet. Our favorite way to eat it is as a taco filling. If you are having a busy day and don't have time to cook this on the stove, it can cook in the crock pot on low for about 6 to 8 hours instead. I've never cooked it on high, so I'm not sure how quickly it would cook that way. I suspect about 3 hours would be enough.

Take care!

Amanda

You can continue to make a lot of the recipes you used to make by substituting ground pork or ground turkey for ground beef. There are also many tasty non-meat substitutes available. My sis-in-law has an allergy to all meats, (beef, poultry, pork, etc.) however she can eat fish and seafood. We use fish or seafood and the non-meat substitutes in recipes frequently. Much of the time you can't even tell the difference. These are MUCH better tasting than they used to be. Most larger grocery stores carry them and there are MANY options. Burgers, sausages, ground 'meat', hot dogs, corn dogs, etc...I'm not going to tell you that it will taste like beef, because it won't, but they do taste good (just different) and work well in many recipes. Good Luck!

Fettuccine Alfredo

1 TBS. margarine
2 small cloves garlic, minced
1 TBS all-purpose flour
1 1/3 cups skim milk
2 TBS light process cream cheese
1 1/4 cups freshly grated Parmesan cheese, divided
4 cups hot cooked fettuccine
2 tsp chopped fresh parsley
Freshly ground pepper

Melt margarine in a saucepan over medium heat. Add minced garlic, and saute 1 minute. Stir in flour. Gradually add skim milk, stirring with a wire whisk until mixture is blended. Cook, stirring constantly, 8 minutes or until mixture is thickened and bubbly. Stir in cream cheese; cook 2 minutes. Add 1 cup Parmesan cheese, stirring constantly until Parmesan cheese melts. Pour sauce over hot cooked fettuccine, and toss well to coat. Top with remaining 1/4 cup cheese, parsley and pepper.

Hi,
I know this isn't your question, but how did you know you were allergic? I'm having some weird body stuff when I eat red meat, and I suspect, but...?
Thank you,
A.

If you season ground turkey up it almost tastes the same.Turkey has less fat and calories and is a healthier option! Also they have vegetarian beef flavored stock, you can add that in since it has no actual meat in it( but it is dificult to find). Good Luck!

You can use the same recipes for ground beef with ground turkey. It's healthier for you and tastes pretty good, too. Ground turkey breast has the least fat.

It's probably the hormones in the red meat. You might try elk or buffalo, they taste a lot like beef. I know a man who can't do beef, but can do these.

There are many great cooking websites that you can search in various ways - ingredients, slow cooker, quick, etc. Or, go to your local library, or, if you need a break, head to a Barnes and Noble type book store with a writing pad!

Hi, My name is T.. If your family likes Italian you can make the following recipe.
Put one bag or box of pasta in baking dish or crock pot. Add jar of pizza sauce or pasta sauce to cover the pasta then add what ever you like on your pizza. Pineapple, black olives, green peppers, onions or anything. Add chunked chicken or turkey also if you desire. Add cubes of moz cheese and either bake at 350 for 35 to 55 min(til pasta cooked) or in crock pot for 4-6 hours. It is hard to mess this one up. As long as you add enough sauce the pasta cooks in it and taste better. Really easy to make how you like and taste great.

Anything you put ground beef into, you can put ground turkey or chicken. Honestly, I haven't made a chili or taco meal with anything but ground turkey in over ten years. You can also get meatless substitutes if you really crave the "beef" flavor but can't eat it. BUt I highly recommend ground turkey.

Just substitute ground turkey for whatever recipe you'd normally use ground beef in. Tastes almost exactly the same. You may have to add a bit of water when browning the turkey because it has far, far less fat.

We do not eat a lot of red meat in our family, maybe twice a month. We eat fish, chicken and turkey dishes, everything baked. Herbs and seasoning make big difference for changing up the flavors. Sautee'd veggies with wild/brown rice or couscous is a common meal in our home as are seasonal veggie soups/stews. Yes, it does take kids a bit to learn to enjoy the new flavors, but it's a good habit to get them in to.

Hi Roxanna,

You don't need to change up all your recipes. You can still eat the same things you had before, but instead of using ground beef, substitute it with ground turkey or ground chicken which is readily available in the supermarket these days. Also, if any other recipe calls for beef, just use chicken or turkey instead. If you normally make a ground beef casserole, use ground turkey instead.

You wrote that you were using ground beef alot. We have been using ground turkey for over 15 years. My husband has very high cholesteral. I use the ground turkey in sloppy joes, spagetti, all the helpers box meals, and to top pizza.
Then I found ground turkey sausage and peperoinie, sorry my spelling is bad. We use these in everything.
I buy turkey burgers premade, I am no good at fresh ones.
I can not seem to make a turkey meat loaf. My kids have asked that I stop trying, the mistakes fall apart and have no taste.

You can substitute ground turkey or ground pork in at least some of your tried and true recipes. I love chili made with ground turkey but never make it because my husband prefers the flavor of it with beef. On dishes you cook ahead and freeze, like chili or spaghetti sauce, you could make one batch with grd beef and another with grd pork or turkey, so your family doesn't feel deprived of red meat. -K.
