Hello!
Would you please tell me is it OK to cook tofu which expiration date was 3 or 4 days ago? I've bought a package of organic superfirm tofu, put it in the fridge and forgot about it. Can it became bad?
Thanks
Thank you, ladies! It does not smell bad and I am going to use it right now 8-)

Check to make sure it's a real expiration date and not a 'best if used by date'. The 'best if used by date' is a ploy to make people think the product is not good and they will throw it out and buy new.
Win - win the company just increased their sales.
YES, it is fine.
Always store tofu, in water, in a container.
Or it will spoil.
Look at it. Smell it. If it isn't yellowed all around it should be okay. The expiration date is not inflexible. A few days extra in the frig should be okay but if it's been an extra week it can spoil.
You can freeze tofu. When you thaw it you can squeeze all the extra water out of it so it's rather dry and then you can bake it.
If it smells funny it is bad...if it smells like not much at all then it is fine.
Also I watch the liquid in the tub...if it is watery then it is more likely still good...if it is thicker or goopy more likely tofu is bad...but how it smells is the key.
I ran into the same problem just last week. Mine was 5 days past expiration. It had not been opened so I just opened the package, gave it a sniff and determined it was fine. Tasted great, no issues. I was willing to take the risk :)
Tofu is one of the most processed foods out there. (I don't mean that it's the same as Doritos, or something. Just that it has to be fermented and formed. Kind of like cheese. Cheese is generally good after the expiration date.) I don't think it goes bad easily, because of that. I think the expiration date, is more for a liability issue. I mean, they even put expiration dates on bottled water!! it's not like ground beef or something with all that bacteria, that can be really bad a few days after expiration. It can become bad, but I seriously doubt it's bad a few days late. I think it's safe to eat and it shouldn't cause any harm. If you are very worried, just toss it.
