Today is my dear husband's 34th birthday and I'm making him one of his favs, salmon cakes (panko crusted). I usually just make them by themselves but I want a whole family dinner tonight so I need a side that would be good with them. He's a bit of a foodie, so I want it to pair well.
In my pantry I have: white rice, basmatti rice, potatoes, jullienne potatoes (boxed), scallped potatoes, and some green beans. Any ideas?
I'm making a caesar salad too btw.
Men are so easy. Lol. He said that he wants baked potatoes and steamed broccoli. Thanks for all the suggestions! I'll have to get complicated on another day with all the yummy ideas you gave!

I just made a maranade last night for my green beans. Olive oil, dill, lemon juice, salt, pepper, chopped shallots - just add to taste, whisk it all together, and toss with steamed green beans. Yummy. I also like rice pilaf with fish.
How funny, my hubby's birthday was yesterday and I made him Salmon (grilled). For the side I did Spaghetti noodles and mixed with roasted tomatoes, roasted garlic, butter, chicken stock, and parmesan cheese. It came out really good. It calls for a pastry bag but I usually just use a ziploc bag with an edge cut out. I've also made these but instead of squeezing them out of the bag I put them in a casserole dish with cheese on top. They're really good!
when I make salmoln cakes I serve them with a salad of rocket or baby spinach, avocado, slivered almonds, shaved parmesan and a vinagrette, and brown rice. It all works together very nicely.
Maybe risotto or a couscous. I like Moroccan Couscous with sweet and spice. But maybe that woudl make the plate to carb heavy. How about something fruity, like a savory peach or mango chutney?
A always like a green vegetable on the side. My favorite is to blanche green beans, and saute shallots with salt and pepper and toss in the green beans. It makes the green beans really bright and slightly crisp, and the shallots are slightly sweet.
Of course, I don't like salmon, so you might want to totally ignore me :)
I was going to suggest cole slaw too. Yum! Now I want to make everyone's suggestions! I should not read things like this at lunch time!
risotto with asparagus if you can get to the store...otherwise I would saute the green beans. You could do your potatoes Dauphine style--here is one recipe I found but I am sure there are tons.

Sounds delish! Do you share recipes? ha ha...seriously though, a baked potato would be good or the Jullienne potatoes with the beans.

I always grew up having them with mashed potatoes and green peas. Don't ask me why, but most of the people I grew up with made the same thing! Weird.
I love diced red skinned potatoes tossed in olive oil, salt, pepper, and rosemary then roasted in the oven at 425 until they are crispy on the outside and soft in the inside. That would be great with salmon cakes and a green salad.
We always had grits when we had them, when I was growing up. Another stand by fish side is cole slaw.
Roast the potatoes with dried rosemary, salt, pepper and garlic
Saute the green beans in butter and seasonings with almonds if you have them!
