I have 3 good ones.
1) Rosemary polenta:
Make your own polenta or just buy pre-made. Cut into 1/2" slices. Spray a cookie sheet with cooking spray and put the polenta slices onto the sheet. Bake at 400 for about 10-12 minutes. Then turn the slices over and top with chopped fresh rosemary, garlic powder, black pepper (I do some without pepper for the kids), and grated parmesan cheese. Bake until the cheese melts, then throw the broiler on at the end for a minute to get a nice brown on the cheese. MMM
2) Rosemary salmon:
This is SO easy. Take 2 salmon fillets, put them into aluminum foil. You'll need the foil to be big enough to close completely around the salmon. Top the raw salmon with a whole sprig of rosemary, a few lemon slices, and a couple of pats of butter. Fold up the foil and bake about 12 minutes (just until you see the fat start to come out of the fish) at 375-400. Cut open the salmon in the middle to be sure it's fully cooked. If it's still too pink, bake another 2-3 minutes.
3) Edamame and bean salad with rosemary:
Ok it doesn't get any easier than this one! Take one package shelled edamame and pour into a large bowl. Drain and rinse a can of white kidney beans and add to the bowl. Saute 2 chopped cloves of fresh garlic in a couple of TBL of olive oil. Once you smell the garlic, turn off the heat and add 1-2 TBL chopped fresh rosemary and stir together. Let sit for a few minutes so the rosemary soaks up some of the garlic oil. Pour the garlic rosemary mixture into the bowl with the beans. Add some black pepper to taste and as much feta cheese as you like. Yum!!!
