Adventure kids play care does birthday parties on Sunday. You get the whole place to yourself. Also Lifetime fitness does parties and you can do the rock wall and pool time. And you don't have to be a member either.
I'm out of ideas. Anyone know a good place for my son's 5th birthday party that is NOT Chucky Cheese, Planet Pizza, Pump it Up or Little Gym?

When my little one was 5 we had a party at the park. It was great because the kids could be as loud as they wanted, no worries about cake on the carpet, and they loved running around outside.
Consider a museum they do birthday parties, also the zoo something to this affect.
Adventure landing (the mini-golf place with racing cars). My kids went to a part there recently and had lot so fun. But it gets pricey fast.
Garlnd has Surf and Swim opening this week-end- it is a lot of fun. you can also have the Garland Parks and rec dept "do" a party for you. They are inexpensive.
Depending on logistics- you could buy a bunch of parent passes for DART and ride the rail (under 5 is free) to Parker Station in Plano. They have an AWESOME park right there- just right for a picnic and some playtime. I did this last year for my 4 y/o and he had a blast.
Instead of a whole bunch of kiddos just invite 2 or 3 of his bestest friends and go to the movies or a Friso Roughriders game or the Rodeo.
And FWIW, I don't think of you as older--- I was 6 weeks shy of 40 when I had #4 (who just turned 3) and hubby is Older :-)
