Hi moms! Ok, so I work at a residential facility and am responsible for all of the grocery shopping and menu planning in addition to my regular duties. I just started this part of my job a couple of weeks ago and was doing the meal preps as well. A cook will be joining our team but I have been asked to still do the grocery shopping and menu planning and he will go according to my plan. Up till now, I have been making most of the things that I make at home for my family and it has been going well but I need some new ideas. The meals need to serve 8 residents and usually 1 to 2 staff. The ages of my residents typically range from 21 to 50 so I have a wide range of taste buds to please. The recipes need to be fairly simple and not too expensive. Any recipes would be appreciated. Thanks moms!

Check out Kraft Foods website for great family-friendly recipes. I have recently started using it and have had great luck! For some of the recipes, they use Kraft products, making prep easy and cheap! It can be very inexpensive if you can use coupons from coupons.com.

For example, I made Speedy Chicken Stir-Fry for about $5 for four people. The dressing was approx $.50 after sale price and a coupon, chicken was on sale for $3.50 and added some fresh veggies.

There is also a section for budget cooking: http://www.kraftfoods.com/kf/Budget/dinner/BudgetRecipes....

Good luck!

Check out my website for recipes:

http://www.homemadegourmet.com/21659

Click on Easy Recipes, then you can do a recipe search. When you find a recipe that you like add it to your menu and when done you can print out the grocery list. Note that you can change the serving size and it will recalculate the recipe for you.

Let me know if you have any questions or need assistance.

Hey J.!!
One of my favorites is something light like Chicken Cashew SaladSadwiches!! I ususally do 2-4 cups chicken ( that has been baked for about 15 min so its not dry) A cup of cashews chopped coarsly a cup of celery chopped coarsly 1/2 cup onion ( we usually do yellow since they are sweeter) and mix with mayo to your desired liking!! I usually serve them on pita pockets or crossaints (sp) Then with someother light accomaniment like fruit or pretzels!! hope that helps!!

one of my families favorites is an alfredo bake.

to feed that many you will need

1 large box rotini noodles
1 smoked sausage ring
1 lb frozen california veggies (broccili, cailiflower, carrots)
2 jar alfredo sauce
1/4 cup milk

pre heat over to 350
cook the pasta and veggies according to package directions

slice sausage ring into about 1/4 inch pieces (then i cut those in half but i cook for kids) mix the pasta, meat, and veggies together then coat with the sauce. pour half the milk into each jar of sauce and shake to get the rest out, pour into mixture.

stir everything together and then pour into two 9x13 baking dishes or a baking pan that fits. cover with alumminum foil

Bake at 350 for 20 minutes
