I used to live in Scottsdale and unless you have a HUGE vacation budget I'd avoid it. There's not much to do there aside from shopping and golf. And bars lots of bars.
I lived in Tempe for several years. Scottsdale would not be my choice for a vacation. I like to play tourist and found nothing to do in Scottsdale. It's high end and places to stay there are expensive. There are things to see in the area. There are mountains to climb if you don't mind the heat or if you go early in the day. There is a good museum. I don't remember it's name. But I'd stay outside Scottsdale.
I recommend Sedonna instead. It's perhaps a couple of hours further north. I'm not sure how far away it is. They have resorts. They are also expensive but the weather is cooler. The countryside is gorgeous while Scottsdale is in the midst of more cities and is definitely urban.
When I was in Mesa I would drive into Scottsdale and walk the art galleries. Here is my favorite hair stylist in Scottsdale. Funny thing is I needed a hair cut and found it was too expensive in Scottsdale. We drove up on Art when he was closing shop. I didn't want to ask so my husband did and he opened the shop back up for us. I was a little mad thinking he was a barber. It was the best cut I have ever had. He used to or may still cut for the stars. I have actually scheduled an appointment with him on a vacation. I wish I was still there to get a cut every once and a while.

Here is my favorite steak house in Tempe, close by.
I also enjoy Fudruckers there. Their meat is scooped out of the case at the cashier counter. It is such a tasty burger. We have Fudruckers here in Vegas, however the meet is frozen...no case.
If you are coming in from NY, you might enjoy seeing the millions of saguaro cactus. You may have to drive toward Apache Junction, but the sunrise/sunset against all the cactus are beautiful.
Back to your question, I went to a conference at Mountain Shadows in Scottsdale and it was a nice hotel, other than that I am not sure of any other suggestions. You might try Trip Advisor.
Why? There are far better and cooler (not hot) places to go. The Phoenix area is the last place I'd want to be in the summer.
We stayed at the Hyatt in Scottsdale while on a trip with my husbands company. Pool was nice, food great and rooms were refreshing clean and calming. I think they even had Aveda bath products. Although we didn't pay for the trip so not sure on price. Other times we have stayed at Hyatt we book online with Hyatt.com. They usually run a sunshine special where you get one night free.
