Kids pedi keeps telling us how great wild salmon is for a healthy diet, problem is that I am the only one that actually likes salmon. Kids (two boys) and hubby don't like the taste. Not sure if kids really don't like it or are just following dad's example. Anyway, I need some good receipes that your kids/family like. I like eating salmon grilled with a little lemon but that is not going over well at our house. I would love to have a few different receipes that I can use so we can get more salmon in our diets. I like to buy cans of wild salmon and make it almost like
a tuna fish salad. Just mix it with a little mayonnaise
and some lemon pepper and it is great with crackers!
So, if the actual salmon doesn't go over well, try Carlson's for Kids Chewable DHA :) I take Carlson's Norweigan Salmon Oil myself...
I like to grill it with a little marinade of orange juice and soy sauce and fresh ginger. Sprinkle a little brown sugar on while it's on the grill and it gets a nice crusty glaze. I also like it poached and served cold (see Joy of Cooking) with a cucumber, dill, sour cream sauce.

Well... Riley J. was on top of this situation and has offered so much advice, I copied and pasted her response into a Word Doc., so I can refer to it again later!
I can't add much at this point, but here's my favorite marinade (this recipe is for 2 lbs. salmon filets, I don't usually make that much, so I decrease the ingredient proportions accordingly):
1/2 Cup of honey (or maple syrup)
1/4 Cup Soy Sauce
Juice of 1 Lime
1 Tbsp. Sesame Oil
1/4 tsp. hot red pepper flakes
1/4 tsp. crushed black peppercorns
Marinate for about 30 minutes, but keep in mind that the citrus juice is "cooking" the fish a bit while it marinates, so cooking time is limited. I usually broil it for about 6 minutes.

We are a salmon eating family. My three year old daughter claims "I love salmon". So here is what we do with it....and as a footnote this came from "Cooking with all things Trader Joe's"
You take 1 cup Soyaki (we actually get the Island one because it has pineapple juice in it, YUM) and about a tablespoon of Dijon mustard. Mix it up and pour it on. Leave while broiler is heating up. Then broil it. I serve it with the ready to go frozen organic brown rice TJ's has.
Also, for a semi- affordable way to buy Wild Salmon (do not buy farmed!) we buy the frozen bag at Costco. Inside is individual perfect serving size fliets.
Also, Nordic Naturals Children's DHA pills are the only ones I would trust and my daughter begs for them. I met a woman who travels to all the sites that do vitamins and supplements to make sure they are using top quality products and safe making.
Allrecipes.com did have a recipe my kiddos loved. I was a samon filet baked in the oven. Pour 1/2 to a cup of milk over the top, season w/ salt and pepper. Very simple yet it changes the color to LOOK like chicken. My kiddos will eat anything I let them dip in ketchup, so they asked for "more chicken". Just a thought if you have a chicken lover whom isn't keen on trying new foods.
Another thing I tried was read Dr. Seuess. One fish, 2 fish, red fish, blue fish....then we got excited to try RED fish for dinner. I unfortunately has to buy a GIANT RED SNAPPER and figure out how to deal with that, but you could take it a different route. Hope this helps!
Hello T. ~ I made salmon patties tonight for dinner
1 can of salmon (us can also use fresh)
1/4 cup mayo
1/4 cup bread crumbs
1/4 cup chopped green onions
1/4 cup onion
1/4 cup celery
1 tbsp dijon mustard
2 tbsp fresh lemon juice
1 egg
season salt to taste
I sauteed the green onions, onions & celery in a little evoo & tiny pat of butter
set it aside & in a bowl mix all the ingredients together then add the onion mixture. I threw everything together about 2 hours before I was ready (I have 2 little ones) let it sit in the fridge. When your ready take your mixture form patties & lightly dust w/flour...creates a nice golden brown crust on the outside....In a skillet heat 2 tbsp of evoo & fry 8-10 minutes. This made 3 medium size patties.
I used just plain bread crumbs...I didn't have any on hand so I just toasted 2 slices; threw it into my food processor..
allrecipes.com also has some good salmon recipes. I used the lemon sauce for salmon off of the allrecipes site that was pretty good served w/roasted broccoli & cauliflower.

I'll take some salmon filets, sprinkle pepper and dill on them and cook them in a regular non-stick pan (approx 4 minutes per side). Take them out, cover and keep warm while you saute chopped onion in the same pan. When the onions are soft, mix in 2 cups peas and carrots frozen veg and 1 can of chicken broth. When the chicken broth is boiling, stir in 1 cup of whole wheat cous cous and turn off the heat. Let set for 5 minutes. I add in some more dill and lemon juice before serving. Serve the salmon with the cous cous/veg on the side.
You've gotten some great recipes! Trader Joe's also makes a chewable Omega3 vitamin (for kids or adults), that is pretty tasty. My kids love their "fish vitamins".
Food Network is also a great place to look for salmon recipes. I recently tried one from Giada de Laurentiis and loved it so much that I've made it several times. The only thing I did differently was that I baked it at 400 for 15 minutes and then I take it out of the foil packets and serve it on a plate with some sort of vegetable and rice. Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Place the foil packets on the hot grill and cook for 10 minutes for a 1-inch thick piece of salmon. Serve in the foil packets.
this is very easy - I use a teriyaki marinade - Lawry's has a good one. Marinate the salmon for 30 minutes or more and then grill it. My kids love it. even my 3 year old.
Hello, I have to be very careful about what I eat, due to the fact that I had a major heart attack a few years ago. While looking for grilling sauces for salmon, I found one that Von's sells. It is Kozlowski Farms brand and it comes in a few flavors. I like the Apricot and Mango Roasted Chipotle. It has a little bite (spicy) and is so tasty. It makes the salmon delicious. It is also low in calories (40 per serving) fat free, cholesterol free and very low sodium. I put a little lemon pepper on the first side of the salmon and broil (or grill) it. Then I turn the salmon and put more lemon pepper on it and brush the sauce on the second side.

I make this recipe for my husband (who is not a huge fish fan) and he loves it. Granted, it has brown sugar on it... Who doesn't like brown sugar??

1 (1 lb) salmon fillet
1/4 teaspoon salt

1 tablespoon reduced sodium soy sauce
4 teaspoons Dijon mustard
1 teaspoon rice wine vinegar
Directions
1. Cut salmon width-wise into 4 pieces; Place in a foil-lined(release foil works great)15x10x1-inch baking pan; sprinkle with salt & pepper. Bake uncovered at 425 degrees for 10 minutes.
2. Meanwhile, in a small saucepan, combine the brown sugar, soy sauce, mustard and vinegar. Stirring every minute or so, cook until sugar is dissolved
3. Brush (or pour) evenly over salmon; broil 6-inches from heat for 1 to 2 minutes or until fish flakes easily with a fork, enjoy.
I find that we like to blacken it slightly, which is more like 5-7 minutes under the broiler.
I agree with putting teriyaki sauce on the salmon! I dont even marinade the fish. Grill the fish like you normally. When the fish looks like its beginning to flake brush the sauce on. Just make sure you use a sauce that is thicker and coats the fish.
I don't really like salmon either but I had a grilled salmon dish one time that had olive tapenade spread on the top. It was delicious.
My son loves lox on his bagels and just out of the package. I know it's not fresh wild salmon. I also like to make a typical salad, using baby greens and tomatos and put flakes of the hard smoked salmon in it. Very yummy! Lastly, similar to the patties, we just shape the mixture into a loaf (salmon loaf). My son loves this. What about grilling the salmon and putting it in soft warm corn tortillas with some cabbage, cilantro and chopped tomato and onion? I might even make a sour cream/salsa sauce to go on it too.

I haven't read the answers yet, so sorry if I am repeating. Not too avoid eating salmon, but it could be an expensive meal if nobody is going to eat it! :)
How about just supplementing with fish oil? Nordic naturals makes a kid friendly oil, as well as chewables. It is a very reliable brand and it will give them the Omega-3s and fatty acid supplements they need.
I am a STRICT vegetarian, but do fish oil for me (I am nursing) and my 2 year old, as I think it is just such a good thing for their brain.
Just a thought...it's cheaper than throwing away salmon and easier than making two meals if your family doesn't like it. :)

T., here's a pasta dish with salmon that everybody is going to love.it's easy, it's Italian and it's a different take on salmon...buon appetito!
Make a sauce wtih mayonaise. I know, you think it sounds gross, but it's incredible. Mix mayo (like maybe 1 C) with a little bit of oyster sauce, cilantro or basil, fresh tomatoes, dash of lemon juice. Whatever you have in the fridge. Then cover the fillet with the mayo and bake at 400 for about 20 mins. Easy and the sauce keeps the fish moist.

Careful of MSG and GMO corn syrup in some of the sauces, better to make your own. Dill and chopped up pickles and homemade mayo cause all is gmo soy oil now. Wild salmon is great but don't defeat the purpose with these non food and bad foods.
I cover a salmon fillet with dried dill, sprinkle salt and pepper, squirt lemon juice on top, and bake.
My husband is the biggest picky eater ever! He doesn't even like the taste of lettuce. Seriously?! Who doesn't like lettuce?! Anyways, I found one way that my husband will eat salmon...here it is:
On a large piece of tin foil I cover the salmon in teriyaki sauce and italian dressing. Then add bread crumbs and cheese of your liking (we add parmesan). Fold over the tin foil so that the salmon is sealed in then either cook it on the grill or throw it in the oven for about 25 minutes. There is absolutely no fishy taste with this easy recipe!

Our favorite way to eat salmon is to make salmon fajita burritos. Sounds complicated, but actually is pretty easy, just a bit of prep work for the guac and chopping veggies.
We sprinkle Lawry's fajita seasoning on the fish before baking (easy does it, or you can have some very salty fish), and bake at 400 until done.
In the meantime, make up some fresh guacamole (I usually do this BEFORE cooking the fish so it's ready and chilled in the fridge), open up a can of refried or black beans and cook on the stove, and also pan sautee some red and green bell peppers and onions.
We just throw it all into large tortillas and make burritos. We also have fritos on the side with more guacamole and beans. My kids love this meal. You can pretty much throw whatever mex toppings you want in it to suit your family's tastes, like shredded cheese, tomatoes, cilantro, chives, salsa, whatever, have fun with it!
We make these salmon burgers and miso salmon all the time and the kids eat them up!

mix equal parts honey and soy sauce, marinate the salmon in it for about a 1/2 hour, then broil on both sides.
I also put crushed red pepper flakes in that but you can leave that it if you're trying to please the kids.
Try putting the salmon in a pyrex dish with any type of teriyaki sauce (don't marinate it, just before putting it in oven) and a little sesame oil. Cook for 30 minutes max at 350 degrees. Very simple and very yummy!

Wow - there are a lot of great recipe ideas here! I'll be trying some myself. We often make a simple (and mild) horseradish cream sauce for salmon, which we just cook with olive oil, salt and pepper in a pan. I don't have the exact proportions but it is mostly sour cream (perhaps one cup), a small amount of mayo (maybe 1/2 TBl to a Tbl - taste and see what you like), a little bit of horseradish (we use a lot, but a tsp or two would do the trick), a dash of soy sauce and a dash of lemon sauce. You can just put it on top, or if your kids are into dipping things, on the side. There are also good dill-cream sauce recipes out there. Happy cooking!
I have to second the post about www.allrecipes.com - it's the best!! Also, another website I use a lot is www.supercook.com. This one is different in that you type in items you have on hand and the site displays recipes you can make with what you have. It's great for those nights when you are at a complete loss as far as what to fix for dinner.
I use Old Bay Seafood Seasoning on fish, al lot. This one is great for all fish.
*There is a recipe on allrecipes.com that is a pecan crusted salmon. I doubt your family would even know it was fish....so yummy. The maple glazed salmon is also wonderful. It has a sweeter taste, so the kids might really like that one.

my 18 month old LOVES smoked salmon! it's salty, so i feed it to her in moderation, but you might want to try that.
can you try it mixed in with pasta? with eggs? lox on a bagel? trader joe's sells a good wild smoked salmon.
look up some recipes online. and if they still don't like it, they don't like it. i went through a phase when i was a teenager when i didn't eat salmon, and now i love it!
They sell canned wild caught salmon at Trader Joes (They also sell it at Costco but it isn't wild caught... I'm not sure if it makes a difference). Mix it with mayonaise or cream cheese and serve it like tuna, on crackers or in a sandwich. I got two out of three anti-fish eaters on board, and I think that I can get the third if I can trick her into trying it. :) It's great!
This is very yummy - a lot of diff seasonings, so seems like a lot of work, but it's not really!
Indian Roasted Salmon
1 tsp each: ground cumin, ground coriander
1/2 tsp each: ground turmeric, dried thyme, crushed fennel seeds, black pepper
1/4 tsp ground cinnamon and 1/8 tsp ground cloves
4 (6-oz.) salmon fillets, about 1 1/4 inches thick
1/2 teaspoon salt
1 teaspoon olive oil
1/4 cup non-fat plain yogurt
4 lemon wedges
Preheat oven to 400 degrees. In a shallow dish, combine first 8 ingredients (cumin through cloves). Sprinkle fillets with salt then dredge in spice mixture. Heat the oil in a large skillet over medium-high heat; add fillets, skin sides up; cook for 5 minutes or until bottoms are golden. Turn fillets over. Wrap the handle of the skillet with aluminum foil wrap and bake for 10 minutes or until fish flakes easily when tested with a fork. Remove skin from fillets; discard skin. Serve with yogurt and lemon wedges.

slather the salmon filets in manly seasonings like a mixture of butter, worschestershire sauce, paprika, salt pepper, garlic powder, onion powder, etc.

I put canned salmon or tuna in with mac and cheese. Both my kids gobble it up!
I also give my kids Yummi Bear Omega 3 gummy bears vitamins everyday.
My husband and I did not like salmon and we never exposed our kids to it. Then, my husband, who likes to fish, took a trip to Alaska. He was most excited about fishing for halibut, but also came home with 100 pounds of salmon. Needless to say, we had to learn how to like it. With that said, I echo the responses for teriyaki salmon. My whole family loves it this way. I put the salmon in foil packets with teriyaki sauce (I most often make my own or I use JES brand), a little bit of red wine, and fresh parsley. We also like smoked salmon. Most often we'll "shred" the salmon, mix it with cream cheese and use it as a spread on crackers. We all now like salmon and have since branched out trying many varied recipes. Plus, my husband has returned to Alaska with similar results. I say, start with the teriyaki.
broil some salmon with nothing on it but a bit of olive oil then mix it in rice with soyaki sauce..(Trader Joe's) sit on the couch and eat it yourself and watch your toddler come and want to try some..that's how i sneak it into my son's diet..sweet sauces is the secret.

It sounds strange but is really good. Try putting orange marmalade on the salmon before baking. The orange taste cuts the fishy taste and it's not too sweet. My MIL prepared salmon this way for my 2 year old and she ate every bite on her plate.
A great way is to coat it in pure maple syrup & coat with bread crumbs or crushed cereal.
Or, a small amount of pure maple syrup just on the top changes the flavor.
Or, dip in plain yogurt as a sauce.
Or, put cheese on top.
I have a 2 year old who loves cheese & enjoys dipping her food. My husband still won't eat the salmon.
Also, be picky where you buy your fish. If it smells really fishy it is not fresh & will taste fishy.

Mojo-Marinated Salmon Kebabs on Sugarcane

Method: direct grilling
Serves: 4 to 6 as an appetizer or 4 as a light main course
• 1/2 cup olive oil
• 8 large cloves garlic, thinly sliced crosswise
• 1 teaspoon ground cumin, or more to taste
• 1/3 cup fresh squeezed lime juice
• 1/3 cup fresh squeezed orange juice
• 1-1/2 teaspoons coarse (kosher or sea) salt, or more to taste
• 1/2 teaspoon freshly ground black pepper
• 1/2 teaspoon dried oregano
• 1/4 cup fresh cilantro or mint, chopped
• 1-1/2 pounds skinless salmon fillets or steaks, pin bones removed
• 2 large sweet onions, cut into 1/2 inch slices, each slice impaled on a bamboo skewer or toothpick
• 1 large navel orange, peeled, the membrane removed, and sectioned
You'll also need:
• 1 baton of fresh sugarcane, available at some markets or through www.melissas.com (or bamboo skewers, soaked for 1 hour and drained)
1. Prepare the mojo: Heat the oil in a deep saucepan over medium heat. Add the garlic and cumin and cook until the garlic is fragrant and a pale golden brown, 1 to 2 minutes. Do not let the garlic brown too much, or it will become bitter. Stir in the lime and orange juices, salt, pepper, and oregano, and 1/3 cup water. (Stand back. The sauce may sputter
when you add the water.) Bring the sauce to a rolling boil. Taste for seasoning, adding salt or cumin as necessary. Let cool to room temperature, then stir in the cilantro.
2. Trim the dry ends off the sugarcane baton and cut into 6-inch sections using a heavy cleaver or sharp chef's knife. Stand one of the sections on end. Cut downward to remove the tough outer skin. Then cut the cane into flat 1/4-inch thick strips. (The lengthwise cuts are much easier than the crosswise cuts because of the fibrous nature of the cane.)
Lay the strips flat on your cutting board, and cut lengthwise into 1/4-inch wide skewers.
Finally, make a sharp diagonal cut on the end of each skewer so the point will pierce the salmon more easily.
3. Cut the salmon into 1-1/2 inch chunks; try to keep them as uniform as possible. Arrange them in one layer in a nonreactive baking dish just large enough to hold them. Pour half the mojo over the salmon and let marinate, covered, in the refrigerator for 1 hour, turning the salmon chunks over so all sides marinate. Refrigerate the remaining mojo to serve as a sauce when the kebabs are cooked.
4. Thread the salmon chunks on the skewers.
5. Set up the grill for direct grilling and preheat to high.
6. When ready to cook, brush and oil the grill grate. Remove the salmon kebabs from the baking dish, reserving any remaining marinade. Brush the marinade on the skewered onion slices. Arrange the kebabs and onion slices on the hot grate. Grill, turning with tongs, until the salmon kebabs and the onions are nicely browned and the fish is cooked, 4 to 6 minutes per side, basting with the marinade until the last 3 minutes of cooking time.
7. Transfer the onions to a plate or platter, top with the salmon kebabs, and spoon the reserved mojo over them. (Discard any mojo used as a baste when the kebabs were grilling.) Garnish with the orange sections and serve at once.

i grew up on salmon patties & still love them (also raised my kids on them) but they are fried in oil. use canned salmon, eggs, water (or milk) bread crumbs (italian crumbs have more flavor) you can put chopped onion if you like & some pepper, mix together to make patties & fry, I also fry onion with it in the same oil while patties are frying & I make my own tartar sauce to go with it, mayonaise, relish, very finely chopped onion & some dill & pepper. you can also use this mix to bake a salmon loaf in the oven like a meatloaf, then its not fried. I have been making them so long so I don't know the exact measurements but you can google it. I get many recipes by googling.
Try a marinade of real maple syrup and whole peppercorn and marinade for a minimum of 2 hours or overnight in the refrigerator. Grill on indoor grill or cast iron skillet or broil in the oven.
I baste marinade while cooking to add the flavor and the kids love the sweetness, just make sure you don't put the peppercorns on the plates, not such a good taste.

We make a simple salmon pasta - the kids love it. The hard part is that it requires pea shoots, which you can find at Whole Foods (that's the only place I know in Long Beach that carries them, sometimes the farmers' markets). Brush the salmon with oil, salt and pepper and cook it until done (I usually cook it at 400-425).When done, flake or chunk the salmon, making sure to get any bones out. Meanwhile cook pasta - we use some sort of twisty pasta.
Put a couple handfuls of the pea shoots at the bottom of a large bowl. Add the cooked salmon. Add the pasta. Pour some cream over it all so it's covered, not drencehed. Squeeze some lemon juice over it all. Toss in parmesan cheese. Yum.

We take a large half or whole salmon and we cook it in the oven in foil. We stuff it with vegetables like onions and tomatoes (left over rice works too) and fresh herbs (rosemary, lemon, salt, pepper, garlic, lemon pepper). We bake until it starts to fall apart. For children we make sure it is deboned. This is an easy way to cook a simple healthy meal and serve with salad and a side dish of noodles, rice, potatoes etc. This works for any large fish including large trout. Also think about ceviche recipes and traditional bean soup with cod chunks, New England style.
