This is a GOOD one! It was served at an event in my State at the State Capitol and was VERY popular!
I got the recipe from my sister.
You can also serve it with tortilla chips like a "nachos" type dip. Enjoy!
Vegetarian Chili Recipe
2 tbs. vegetable oil
1 large Maui onion, chopped
4 large cloves of garlic, minced
1 medium-size sweet red pepper, diced
1 medium-size sweet yellow pepper, diced
1 medium-size sweet orange pepper, diced
1 medium-size green pepper, diced
8 oz. mushrooms, chopped
3 tbs. chili powder
1/2 tbs. ground cumin
1/2 tsp. red pepper flakes
1/4 tsp. salt
1 can stewed tomatoes
1 can corn kernels, drained and 2 ears of corn
1 can kidney beans, rinsed and drained
1 c. water or 1 c. chicken stock
1/2 tbs. dried oregano
1 medium-size zucchini, diced
4 stocks celery
cilantro, chopped (optional)
1. Heat oil in deep pot over medium heat.
2. Add onion, garlic, and peppers. Saute for 5 min. to soften vegetables.
3. Add zucchini, corn, mushrooms, and celery. Cook, stiring until soft and vegetables give off liquid and start to brown around edges (about 6 min.)
4. Add chili powder, salt, and cumin. Cook, stirring until fragrant (about 30 sec.).
5. Add kidney beans and stir well.
6. Add stewed tomatoes and water/chicken stock. Stir well and bring to a boil.
7. Reduce heat to medium-low and simmer, stirring occasionaly (about 20 min.).
8. Remove from heat and stir in cilantro.
All done and ready to serve!
