I need some help in the kitchen. My husband has requested more red meat for dinner. I cook mostly chicken and pork- I occasionally use some hamburger meat or make a roast. I need some new ideas for red meat- single dish, casseroles, crock pot- whatever you have! My husband will thank you for it.

Beef & Noodles with Fresh Vegetables
its so easy take about 25-30 min total time
1/4 cup KRAFT House Italian Dressing
1/4 cup soy sauce
1 lb. lean boneless beef sirloin steak, cut into strips
2 cloves garlic, minced
2 cups sugar snap peas, halved
1 yellow pepper, cut into strips
1 tomato, chopped
1/4 cup chopped cilantro or parsley
12 oz. thin spaghetti, cooked, drained
MIX dressing and soy sauce.
HEAT large nonstick skillet on medium-high heat. Add steak strips, garlic and 1 Tbsp. dressing mixture; cook 3 min. or until steak is barely pink in center. Transfer to plate; set aside.
ADD sugar snap peas, yellow pepper and remaining dressing mixture to skillet; cook and stir 3 min. until vegetables are crisp-tender. Return steak to skillet; stir-fry 1 min. Remove from heat; stir in tomato and cilantro. Serve over hot cooked pasta.

What about putting taco flavoring on ground beef and them making Nachos- my family LOVES that.

They have a Mozzerrella Meatloaf mix that makes fantastic meatloaf or meatballs. They Have a Sunday Roast packet that you put over your roast and veggies in the crockpot.... YUM!
Kroger has a Flat Iron Steak that I grill w/ a Southwest Rub (you can find them in the spice aisle)- I serve that as a stand alone dish w/ Mexican Rice and corn OR I slice it up and make fajitas- just sautee onions and green peppers in some olive oil and a bit of the SW seasoning.

I LOVE red meat and have tons of recipes!
Lasagne:
Boil Noodles
Cook 1 1/2 lbs ground beef. Add the following and simmer 10 minutes:
2 cans tomatoe sauce
1 can diced tomatoe
a little dried onion
1/3 bottle italian seasoning
In a bowl combine:
1 large container cottage cheese
1 T dried parsley
1/2 of the remaining italian seasoning
In dish layer:
1. small amount of sauce so noodles don't stick
2. noodles
3. more sauce
4. cottage cheese
5. mozerella cheese
repeat
Bake at 350 for 30 minutes until cheese bubbles.
Tator Tot Casarole
cook 1 1/2 lbs ground beef. Add 1 can cream mushroom soup ( or chicken ) and 1 can rotel. Put in dish and cover with grated cheese. On top of the cheese put 1 bag frozen tator tots and bake according to directions on tator tot bag. Serve with hot sauce or ketchup.
5 layer dish
cook beef. in a deep skillet layer:
sliced potatoes
beef
cooked minute rice
diced bell pepper
1 can diced tomatoes
Cover and simmer 30 minutes

A long time ago a good friend showed me this restaurant secret....(she's now owner & sometimes chef of Parigi's downtown). Take a good lean cut of beef (I prefer a filet or sirloin would be okay) and marinate it on each side for 30 minutes (no more!!) Mix equal parts extra virgin olive oil, soy sauce and red wine. After it's marinated, you need to sear it on both sides (don't try to cook it, just sear only) either on the grill on in a skillet. Then put it in the oven uncovered to finish it off. You'll be amazed how easy this is and how tender your beef and what a great flavor this is. If you're adventurous, take the leftover marinade and make a reduction sauce out of it. Put it in pot and almost bring to boil--don't boil--and just keep stirring and reducing and it will get thicker. It's really nice to pour over the meat or have on the side. good luck.
When you say red meat do you mean beef only, or does he like things like lamb and buffalo? I have a great recipe for buffalo burgers - they are a hit anytime I make them.
I have some great recipes for Lamb, and things like a fail proof pot roast recipe that's WAY easy.
let me know if you want the recipes, I see that lots of people gave you bunches of info too, so I didn't want to barrage you with stuff. Cooking is one of my favorite things to do, so I'm rather good at it, or at least that's what all my friends say. So let me know, and I'll send you some great easy recipes. Some of them are my own concoctions.

I particularly favor Italian Beef Sandwiches, which can be made in the slow cooker.
Some obvious choices are tacos, adding ground beef to your spaghetti sauce and grilled steak like rib eye, sirloin or strip. I get most of my recipes from a website called recipezaar (www.recipezaar.com). It's my favorite recipe website.
If I cook at all, which isn't as often as it should be, I like things very easy - I'm definitely not a gourmet. I use "convenience" foods a lot. Here are two recipes that my husband enjoys that I didn't find on recipezaar:
Asian Grill Stir-Fry Vegetables with Beef (got recipe from Sam's when they were sampling it at the warehouse - says to visit www.samsclub.com and type "Meal Solution" into the search bar for access to all of their time-saving recipes)
Serves 4; prep time: 10 min.
Ingredients:
- 1/2 Large Bag Asian Stir-Fry Vegetables (I used Birds Eye purchased from Sam's so if you use smaller bag, you'll want to use the whole bag, not just half)
- 1-2 tbsp Extra Virgin Olive Oil
- Sea Salt
- 1-2 tbsp Tone's Asian Grill & Stir-Fry Seasoning according to taste (got mine at Sam's)
- 1 12oz. can Kirkland's Premium Brisket Roast Beef (only available at Costco but I'm sure you can get canned beef brisket from other stores too; this is just the only brand I've ever used and it's pretty good for how simple it is)
Directions:
Heat evoo in saute pan
Add vegetables, asian grill seasoning and sea salt to taste (I personally think there is enough salt in the 2 tbsp of grill seasoning so I don't add the additional salt)
Saute until hot throughout, tossing constantly to avoid burning.
The addition of the beef to this recipe was my idea so what I do is wait until the carrots are just beginning to get soft and I add one 12 oz can of the roast beef (drained) and continue to toss with the veggies until thoroughly heated and the veggies are as cooked as we like.
Serve immediately
There are tons of meatloaf recipes. This is one of my family's favorites (definitely not diet friendly):
Cheese-Stuffed Meat Loaf (from the Favorite Brand Name 4 Ingredient Cookbook)
Prep time: 20 minutes; Cook time: 1 hour; Serves 6
1 1/2 pounds ground beef
1 jar (26-28 ounces) Chunky Gardenstyle Pasta Sauce
1 large egg slightly beaten
1/4 cup plain dry bread crumbs
2 cups shredded mozzarella cheese (about 8 ounces)
1 tbsp finely chopped fresh parsley (you can use a little less of the dry if you don't have fresh)
Directions:
Preheat oven to 350. In large bowl, combine ground beef, 1/3 cup pasta sauce, egg and bread crumbs. Season, if desired, with salt and ground black pepper. In 13x9-inch baking dish or roasting pan, shape into 12x8-inch rectangle.
Sprinkle 1 1/2 cups cheese and parsley down center leaving 3/4-inch border. Roll, starting at long end (the 12 inch side, not the 8 inch side), jelly-roll style. Press ends together to seal. (TIP: Molding the meat mixture onto waxed paper helps make rolling easier. Just lift waxed paper to curl the meat over cheese filling then carefully remove meat from paper. Continue rolling in this manner until filling is enclosed in roll and meat is off paper. You can then reposition the meat to the center of the pan if needed before cooking.)
Bake uncovered 45 minutes. Pour remaining sauce over meat loaf and sprinkle with remaining 1/2 cup cheese (I usually add more cheese myself). Bake an additional 15 minutes or until sauce is heated through and cheese is melted. Let stand 5 minutes before serving.
I vary the meatloaf recipe by using 1 pound ground beef and 1 pound ground turkey. I up the cheese and pasta sauce a little to account for the extra 1/2 pound of meat, but the rest of the recipe I pretty much leave the same. I do add about 10-20 minutes cooking time as well though to make sure it's cooked thru.
Really, my best advice is go to www.recipezaar.com. You can do a search by ingredient (i.e., beef), and if you sort on "highest rated", you can rarely go wrong.

Here are some easy recipes that I make using hamburger meat. 1. This is SO simple and quick. I brown hamb. meat in the skillet with seasonings (usually Season Salt, black pepper and Tony Cachere's Cajun seasoning, it's whatever you like) and at the same time make a box of Beef Rice-A-Roni. When the rice is done, add the meat (after draining the grease). It's really good. My daughter and I like to add steak sauce to it and my husband eats it as is or with Worchestire Sauce.
2. Beef Patties in soup. I make meat patties and place them in a greased skillet. Add seasonings and cook. Once finished then add one can of French Onion soup and half can of Beef Broth soup. With the other half mix in 1-2 tbsp. of Cornstarch, for thickness. Mix well. After adding remaining broth bring soup to a boil. Once boiling well, turn heat down to low and allow to simmer until soup thickens. Usually about 15-30 min. depending on your stove. Very good! Similar to Salisbury Steak but without the Mushroom soup.
3. Another easy one is my mom's version of Shepherd's Pie. It's much easier and faster, though. Brown 1 lb. hamburger meat with seasonings in skillet. While doing this preheat oven to 350 degrees. The make a batch of instant mashed potatos (fix according to number of ppl. eating) and 1-2 large cans of cream style corn. In medium-large deep casserole dish layer ingredients. Hamb. meat on bottom, potatos next and corn on top. You can add cheese if you like. Allow to bake in oven to warm completely, about 20 minutes.
I also make tacos pretty often and hamburger helper occasionally. Another thing you can do with hamburger is to make hamb. steaks. Cook patties in skillet with seasonings and in seperate small skillet, sautee green peppers, onion and mushrooms, if you like them. I usually make baked potatos with this. Hope this helps out. Simple and quick...ground beef of the type you prefer,
vegies and mashed taters...I do one dish meals.
Cook the meat. Add the liquid and vegies and let simmer
for about 10 minutes *I use frozen*...*I use instant Idaohan
or Betty Crocker flavored instant potatoes*. Add butter and
potatoes. Simple type of shepherds pie.
Beef ribs on the grill or oven...bbq sauce.
BBq season is here...let him grill up ribs, or hamburgers
or steaks.
The majority of our meals are beef. I have recipes for almost any cut of meat you can buy: flank steak, brisket, round steak, ground beef. Most of my recipes are not exact, I just throw them together. I will list just a couple here because of time and space constraints. If you want more, send me a message with your phone number or email and I will be glad to give you more.
Flank Steak (this is my husband's favorite):
Get a whole flank steak. Season with seasoned salt and garlic powder. Cover with enough soy sauce (I use light sodium soy sauce) to darken the meat, but not enough that it is completely soaking. Let sit in soy sauce for about 10 minutes or so. Cook on broiler pan on highest rack in oven on BROIL about 7-9 minutes on each side. If you'd rather, you can use an indoor grill. It works just as well. It is best if left just a little pink in the middle. When it is done, let it sit for a minute or two and slice with electric knife. Always slice with the grain. I serve it with mashed potatoes and a vegetable. It is also good dipped in a little horseradish.
Swiss Steak is really good too. You can get it in the Better Homes & Gardens or Betty Crocker Cookbooks.
The good think also is that I work full time, so most of my recipes are fairly quick or can be done in the crockpot.

Hey here are a couple
Pepper steak, good with mash tata's and rolls and a veggie.
Get cube steak, flour and season, lightly brown in a small amount of olive oil or veg oil, while the meat starts going you also stir in a small onion sliced in lenghts and a small green pepper like in a stir fry sort of way with the meat.
Drain off oil if there is any left and in same skillet add lrg a can of stewed diced tomatos juice and all, 2tbls soy sauce and 3tblsp woistershire sauce a little garlic seasoning or soul seasoning or whatever you like and about 1/4 cup water and turn down to low and cook about 30min or so.
This is really easy and good too.
I have even put it together with browning meat and onion/pepper then threw all in crock pot when not wanting to tend to and let cook hrs or in oven low for a couple of hrs.
another is beef ribs. just boil for about 3hrs med or so heat with onion and seaoning and all in it, take out and put in oven with bbq sauce and half cup water from boiling in bottom of meat but not on bbq sauce and foil about an hour or so on 250.
another, is beef fajaita's. They have a really easy one at brkshires that is good and easy already seasoned meat etc and tender just cook with onion and pepper and fast. The meat is good. They have a chicken and beef one. It is in sealed plastic like packaging.
beef smoked sausage and potatos
We do this fast and easy, cut the smoke sausage in oval like cuts kind of side ways like bbq place about 6sausages if like wienie kind. you could use a pkg of roll kind.
put them in a little olive oil to start browning and add a pkg of cut diced like frozen hash browns, we use the obrien kind with onion and pepper but also just plain ole potato kind without too. drizzle little oil around atop of them, not much and season with what you like. mix thru with the meat that is starting to cook and just do it like a home fried potato's kind of dish. It is so easy and everyone likes it. I cook ours with cayenne or pepper flakes since we like it spicy but some dont. Eat it with cornbread and beans. Good and simple. Just do can pinto and jazz up by draining juice and cook a couple of cans in a can of chicken broth and cut up a few diced pieces of the sausage and some chili powder and a hint of cinnamon, just a little dash and some garlic and other season to liking, I use soul seasoning . cook them about an hour on med/low and they are like homemade.

Our red meat dishes aren't really spectacular, but tacos, spaghetti, burgers, roast and beef stew are staples that we rotate through. Occasionally there's a beef stir-fry. And, now that summer is here, I'm sure there will be a steak on the grill every now and then. Check out www.allrecipes.com or cooks.com for recipes for marinades.
For roast, put it in the crock pot with beef broth and beef consomme (depending on the size of your roast and crock pot, use more or less). I usually do 2-3 cups of broth and a can of consomme, then add water til the roast is mostly covered. Throw in some halved potatoes and half a bag of baby carrots, maybe slices of onion, and dinner cooks itself.
For a creamy roast gravy, use a can of cream of anything soup instead of the consomme. We like cream of celery.
