I meant to oven roast my beets for a beet and goat cheese salad tonight, but forgot and now I'm out of time. If I peal and shred them in my food processor, will they taste good? I have little experience with raw beets. None actually.
For the record, they were delicious. I added fresh orange juice to them. I used my grater disc in the food processor, no worries there. Perfect shreds. As for staining my FP? haven't gotten that far yet.

I roasted beets the other day (in the crock pot) but I wish I would've just kept them raw. I remember eating shaved really thin, raw a while back and they were good. I bet they'd be good mixed with carrots! Roasted, they are pretty much the same as out of the can, blegh.
Next time try golden beets. They are actually a little sweeter, and they don't stain!
I have only had the pickled or roasted. Never thought to have them raw.
They can be used raw, but I wouldn't shred them in your food processor. I think they'll be too pulverized, and your food processor might be stained red forever.
They can be grated, but the best way to use them raw is to shave them or slice them super thin. Use a vegetable peeler, or the slicing side of a box grater or a mandoline. They'll be delicious. The thinner the better.
