Beets, What to Do with Them?

They have been sitting in my fridge for a few weeks now. I get them in my CSA boxes and they usually end up waiting there for quite some time and then either cooked (roast or boiled) and added to a salad or they got all mushy and go to compost (I mean they get composted in the trash :-)) I tried soup, husband said I should not try again! :-) So what to do with them? Donate? Any simple recipes that would turn around no-beet-lovers?
I like pickled beets but I have never done pickling and it is a complicated process.

If the beets still have the tops on them snip off the tops leaving about 2 inches of stem. Wash them well, they are a root plant similar to potatoes. Then boil them whole until done. When they are done peel and slice or chop, add butter salt and pepper. Do not throw out the tops. Wash them and boil or steam them as you would spinich, add butter, salt and pepper. Really yummy.

I add them to my smoothies so I get some veggies. Other than that, I have no idea, I don't really care for them.

Sweet Beet Cookies (Makes about 50 – 1 inch square cookies)

1 Cup All Purpose Flour
1/2 Tsp Baking Powder
2 Tbsp Sugar
1/4 Tsp Salt
1/2 Cup Raw Beets, shredded fine*
2 Tbsp Oil

1. Preheat oven to 400 degrees.
2. Combine the first four ingredients and stir to combine.
3. Using your hands, add the beets to the flour mixture coating the beet pieces with the flour.
4. Add the oil and work with your hands to bring the dough together (the salt and sugar will fall to the bottom of the bowl so make sure you knead the dough well to combine everything — the outcome will be a smooth dough).
5. Form the smooth, sweet beet dough into a flat rectangular disk and roll it out 1/2 inch thick on parchment paper or a dry clean surface.
6. Using a knife, cut the dough into squares or use small cookie cutters to cut out shapes.
7. Bake on a Silpat or parchment-lined cookie sheet for 15-17 minutes.
8. Cool and serve.

This recipe is from Weelicious. Her website has a lot of awesome beet recipes that kids like. You also can google 'red velvet with beets' and there are a lot of recipes that use pureed beets instead of the red food coloring in cupcakes, pancakes etc. They make baked good very moist and delicious!

I used to HATE beets. But we got them in our CSA box too, and my husband found a recipe for a goat cheese beet salad with candied walnuts. It's like a light switched on - I think the candied walnuts was the key. It was sooo good. Now I can eat beets all the time, and not just in that salad. My son LOVES them. He eats them like candy.

Sorry, I don't have the recipe, but I know you can slice them very fine (with a mandolin) and put them in a single layer on a sheet pan, add a little salt and pepper to make beet chips. Serve with some yummy dip and I bet you could turn some of those non-beet lovers around! Enjoy!

Make pickled eggs and beets. Super easy if you like hard boiled eggs. Boil eight eggs and peel. Cook the beets. Reserve around a cup of the beet water and dissolve 1/2 a cup of sugar in it. Add 1/2 a cup of white vinegar. Mix the eggs, beets and liquid and chill for at least 4 hours. The eggs go well sliced over salads.

Roast them. 400 degrees for 45 minutes with rosemary and olive oil.

Clean with vegetable brush, do not peel, boil them. I usually cook carrots, beets and potatoes in whole. Serve them on the plate. I cut them into small pcs to make soup. Extremely nutritious, you skin will look younger, beautiful nails and complexion. I puree for my baby food, I also drink the beet juice.

I peel them and cook them in a mix of water, applejuice and cider vinegar. they taste great like that (sweet and sour) and for a variation (or leftovers) I will saute them afterwards with some salt, pepper and onions.

We LOVE beets! All I do is peel them and boil them and we eat them just like that! Or I have heard of some people making a simple salad out of them by boiling them, add chopped parsley, lemon juice and some chopped garlic with olive oil. But we just love them plain and simple...

Pickled beets easy peasy..........
Here's how I do pickled eggs and beets.
Hard boil eggs
3 cans beets (so if using fresh, boil, peel and slice first)
save some boiled water because I usually use the juice from the 3 cans of beets.
On stove:
beet juice
add 1-2cups of brown sugar
1-2 cups of vinegar
1-2 tbsp of cloves
*bring to slight boil to dissolve sugar.
I use a large glass pickle jar (I keep one just for this purpose)
toss in eggs, beets and pickling juice from stove. Put in fridge and wait at least 24 hrs. The flavor intensifies each day and they last (if not all eaten up) for 2wks or so.

Haven't tried this but it sounds good:

Toast 1/2 c chopped walnuts in skillet over med heat until fragrant, about 4 min.
Whisk together until thoroughly combined: 1tbs red wine vinegar, 2 tsp fresh lemon juice, 1 med minced shallot, 1 1/2 tbs minced fresh dill, and 6 tbs extra vigil olive oil. Add salt & pepper to taste.
Toss dressing, 1lb. sliced roasted beets, and walnuts together in bowl. Serve!

I also had an easy recipe for pickled beets and of course, can't find it. I seem to remember you heated white vinegar and sugar on the stove in a large saucepan, added the cooked beets and pickling spice, and let it simmer for a half hour or so. After it cooled, you stored it in the fridge. There may have been water in with the vinegar? Anyway, it was easy and I liked it.

shredd them and put them in chocolate cake. You can reduce the oil by a little bit. I have not done this in a while so you might want to google an exact amount but the cake I made this way was so moist, delicious.

I used them in a juicer (a long tie ago!) I bellieve it was 1 carrott, 2 beats and 1 green apple (core/ seeds removed). It was brite pink and DELICIOUS!!

Send them to me I love them!

I would just cook them and eat them. I'm the only one in my house who likes them so I just cook them and slice them and eat them myself as a side. If you like them, just make them for yourself as a snack or a dinner side. The greens make very nutritious salad greens too.

Love beets. Roasted beet & goat cheese salad w/ toasted pecans.
Roasted beast in pita sandwiches with baby greens, humus and goat cheese. Good combo with roasted bells.
Use them with kababs.

Use beet juice for food coloring projects.
