Hello Mama's, I am in need of a healthy yummy recipe for a "sustainable potluck" at my school next week. We are focusing on organic, locally grown foods that promote sustainablity. It' an Environmental Class- "Race to Save the Planet" and for our final we get to eat instead of take a test...so anyone have any good ideas??

So What Happened?

Thank you to everyone who gave suggestions for the potluck. I decided to make sweet potatoes with apples, prunes, and walnuts. Yummmmy!! I like the wild rice idea but someone in my class beat me to it. Thanks again!!

MANY years ago (I was in 8th grade), I had a class that sounds similar to the one you're taking. I made this recipe and it was GREAT! (Really don't taste the spinach at all!) (I got an A.)

However, you can check out "Diet for a Small Planet" at a library, too? That's where I got the original recipe from back then. However, if you choose this recipe, double the sauce...and add a bit more garlic. :)

Just the other day, I made a 'loaf' with one pound white northern beans and one pound sweet potato. I made the mistake of boiling my sweet potato in the same water as the beans, which made the sweet potato very wet so the loaf didn't stick together. I took a potato masher to mash the beans, and the sweet potato just easily fell apart. If it had been drier, it would have formed into the bread pan as a loaf. In Uganda they apparently use this as picnic and travel food. Beans are certainly a sustainable item, as are sweet potato. I got both organic at a coop. Just soak beans overnight, then bring to boil and then lower to simmer until your desired softness is reached (approximately 2 hours). I guess you can bake the sweet potato instead of boil. The cooking water from the beans/ yam was absolutely delicious - better than my mash in the end! I enjoy drinking it hot in the mornings.

Wow what an interesting line of study, I would like to learn more about that, I am currently starting a degree to be a dietitian and would like to eventually keep me job focus on natural diets.
Anyways I was thinking maybe some kind of wild rice dish as I believe there is a fair amount grown in Minnesota and its a fairly good crop as far as being easy on the environment, from what I have heard. I am sure Trader Joes or Whole Foods would have an organic, locally grown wild rice of some kind or perhaps any farmers markets that are still open this late in the season would have wild rice.

Whenever I need info or recipes on organic items I consult Lunds and Byerleys grocery stores. Another place would be the Whole Foods Market. There are two in the Twin Cities areas. Just google them.
