I was wondering if anyone had any ideas for side dishes to take to my sons baseball pool party this weekend?
The weather is supposed to be very warm so I would also have to worry about about things staying cold because the whole party is taking place outdoors with limited shade.
The age group is from small children to adults.

This is great for cookouts as it does not require refrigeration!

Schwabian Potato Salad
12 medium-large potatoes
1 1/2 cups water
3 beef buillion cubes
1 medium red onion
2 tsp. salt
6 tblsp. oil
6 tblsp. vinegar
1 tsp. pepper
2 tblsp. parsley or chives
6 slices cooked bacon, crumbled
Boil unpeeled potatoes in saltwater for 30 minutes or until almost tender.
Make broth with water and buillion cubes. I put in microwave for 4 minutes
til cubes dissolve.
Peel potatoes and slice into large bowl. Add diced onions, salt and slowly
add warm broth to bowl.
Toss like a salad and add oil, vinegar, pepper and parsley. Toss again and
add bacon.
Toss before serving.
Serve at room temperature. DO NOT REFRIGERATE!!!
you could cut up some melon...watermelon, cantaloupe, honey dew etc. it is always refreshing on hot days! just place your serving platter or bowl in a larger container of ice.
last year for graduation parties, a friend created a type of salad bar situation. she used the clear deep lid from a storage container, filled it with ice and placed a variety of salads etc in colorful plastic bowls(cheap from walmart or dollar store) and placed a couple of towels underneath to catch the sweating of the plastic lid. this was a great salad-bar set up. everyone loved it and many of us copied it!

This is ALWAYS a party favorite- It's a heated dip so no need to worry about keeping it cold. You need:
(2) Philly Cream Cheese, (2) Hormel Chili (No Beans) And (1)shredded cheddar cheese-
Layer cream cheese in a glass dish or a cookie sheet, put chili on top of cream cheese and then put shredded cheese on top. Put in the oven at 350 just to melt cheese on top. Serve with Tostitos little round chips-
Let me tell you it is Delicious!

Most everyone likes 3 bean salad...wax beans, green beans and red kidney beans all drained. Chop and add 1/2 or more of an onion and the dressing is 1 cup sugar, 2/3 cup oil and 1/3 cup cider vinegar...(Use two cans each of the beans) Needs to sit in refrigerator several hours for flavors to blend. No need to worry about anything spoiling in the heat.
I would do things like pasta salad with no mayo - use olive oil, and fruit salad with sturdy fruits that hold up in the heat, like watermelon, honeydew melon, grapes, slices of apple with lemon juice on them (so they don't brown), things like that. Also Trader Joe sells an awesome veggie mix that comes frozen, it's called Soycutash or something like that - it's shelled edamame, corn, peas, and chopped red peppers - you could just microwave that before you go, then put it out when you get there. It's all veggies and contains nothing that would spoil within a few hours, so the hot weather won't affect it. Plus it looks really colorful and is super healthy too. Have fun!!
Sounds weird, but they are delicious. Fry up Bacon and then you can do 1/2 slices and wrap it around a water chestnut, hold this together with a toothpick, and then pour BBQ sauce over the tops of them, you can bake them to warm them up and then if they're out in the sun it's no big deal it'll actually be better it'd keep them warm.
Here are some simple things. I read that someone told you about ice in an outside bowl for dips.

Watermelon chucks or jello squares are always favorites. Kids just love them.
Maybe something with cherry tomatoes halved, red onion, and some kind of herb tossed with sea salt and olive oil? (I've done something along these lines with a little lime juice and black pepper thrown in.) Experiment and see how it tastes.
Refreshing yet the dish doesn't have to be refrigerated.
2 cans of corn (or more if needed)
de-seed and cut up tomatos
finely cube green pepper
a can of black beans if you want
a bunch of finely chopped cilantro
the juice of 2 limes and mix with about a half cup of white balsamic vinegar
and sprinkle crumbled feta cheese over before serving, if desired
I don't measure anything, I just cut and add so I'm sorry I don't have exact measurements but this is the general idea of what I make as a side dish for parties. It's healthy and won't get gross in the heat. Taco dip and all that is fun but not the best for us so I try to mix it up with veggies. Also, the old faithful veggie tray is always a hit. Lots of fresh cut up veggies with maybe blue cheese or ranch for dipping on the side.
To keep your side dishes cold, take a BIG bowl and fill it w/ice, then place a smaller bowl w/the side dish in the bigger bowl. The ice will keep the bowl w/the food cold and the food won't get soggy from the ice/water.
You could also take like a tub full of ice and put things that are packaged like gogurt and make a bouquet of food sticking out from the ice...that would be pretty looking.
A friend was just telling me about this last night and it can be served warm or cold (so somewhere in between should be good too).
Orzo salad
Cooked orzo, and whatever else you want to add (peas, red bell pepper, olives, feta, etc) and a Greek vinaigrette dressing. She makes it with only peas, but I think it could be really pretty with the right color combination. Just mix together and serve.
