sauce, mustard and ketchup. Put slices of bacon on top and bake! Yummy.
We are going to a bbq for my husbands brigade next week and we need to bring a side dish. We are having hamburgers and hotdogs, and the other platoons are bringing desserts, chips, and fruits/veggies. Oh, and its getting hot in Georgia, so whatever we bring needs to hold up well in the heat. Any ideas for fast and easy side dishes?

Potato salad. I know it has mayo, but it will ast the few hours in the sun, especially if you have it in the frig overnight and transport it in an ice chest. If you mix in mustard it will last longer because mustard and the vinegar in it is a preservative.
Chili beans. Makes great chili burgers or chili dogs.

Hawaiian Salad (tiny marshmallows, shredded coconut, pineapple tidbits, marashino cherry and Whipped Cream all mixed together takes about 5 minutes to throw together)
my go to bbq side is always macaroni salad .. i just keep the bowl its in in a larger bowl with some ice ... 2 boxes elbow macaroni, 3 or 4 cans of tuna fish chopped up well - your preference, mayo, and chopped carrots and celery .. i make it the night before let it sit in the fridge and then right before we leave i mix in more mayo.. the macaroni always soak it up in the fridge..
I would go with a pasta salad. it can be done with italian salad dressing so no worries about dairy and heat.
here is my recipe
1 box of pasta (I like penne) cooked according to directions / drain / cool
1 bottle italian dressing any kind
chopped up veggies (peppers, onion, grape tomatoes, broccoli , cauliflower
1 can sliced black olives
I chop the veggies and mix with the salad dressing and put in fridge. then after pasta is cooled off mix it all together in a big bowl. and wala your good to go

You can take potato or pasta salad and have the bowl sitting in ice. I have seen a dish somewhere, don't recall the brand that is specifically for keeping something cold at a buffet.

pasta salad that vinegar/oil as a dressing
i love the baked bean dish with all the different kinds of beans in it and some bacon....i could make a meal on just that side....one of my favorites!!!
Homemade coleslaw is delicious and quite hardy. I make it with red cabbage, green cabbage, and carrots, so it's very colorful too. Hand chopping takes a little time (not too much, actually, because the cabbage can be in small chunks), however if you have a food processor, the shredding or grating blade does the job well (with a little touchup from your knife for the big chunks). About a half head of each cabbage with about four carrots chopped into thin 1/2 inch long bits will fill a salad bowl. I use a vinagrette dressing instead of the usual cream/sweet one--combine a ratio of 2 parts oil to one part vinegar, add some mustard or mustard power (about a teaspoon for a a cup of dressing), some salt, caraway seed, and maybe some ground black pepper if you like it. Have fun!

Here's how I do it. Peel seed and thinly slice cucumbers into a colander in the sink. Sprinkle salt on every layer of cucs. Wait at least a half hour. Shake colander to get excess liquid off. Dump into big bowl. Slice one small red onion the thinnest you can, add to bowl. Don't add onions while your salting the cucs, all you'll taste is onions. Take your favorite vinegar (mine is red wine vinegar), pour it in till it mostly covers cucs. Take granulated sugar start adding a little at a time and keep tasting until the mix is how you like it. Add dill, fresh or dried is fine. Cover and put it in the fridge for a couple of hours or overnight, this stuff seems to keep forever (well not forever but the better part of a week if they last that long) so start whenever. Right before party strain liquid out of bowl. At this point I put in sour cream to taste or just serve it without sour cream it still tastes great. Add whatever seasonings you want. If you want to look all fancy add a couple pieces of fresh dill to the top to make it look pretty. This is super easy, I have never ever ever brought home any leftovers when I bring this to a party. Have fun!
Easy pasta salad: tri-colored rotini, italian dressing, chopped tomatoes, black olives. Scallions, if you like. Bonus- there's nothing to spoil in the heat, and it really is super easy to make. You probably have most of that in the house already.
cherry or grape tomatos sliced in half, fresh mozzarella balls (the small ones), bruised basil, a generous amount of spinach, tossed with balsamic vinegar, olive oil, kosher salt and pepper.
watermelon, feta, spanish onion salad, topped with that same balsamic combo above.
soba noodles, cilantro, thai peanut sauce, and julliened cuccumber.
carrot ginger salad. julliened carrots and ginger, sprinkled with cumin, curry, rice wine vinegar, salt and pepper, and a touch of brown sugar, and lemon.
"un-guac" avocado boats filled with diced tomato, cilantro, onion, cheese, sour cream, topped with lime juice, salt and pepper, and cayene if you are feeling spicy.
green olive and pimento salad, mixed with pumpernickle rye breadcrumbs.
not quite a side dish, but a fav app of ours is to take sopressata or salami sliced thin, and wrap around a teaspoon of ricotta and minced basil, secure closed with a toothpick, toast on the grill. this meat cheese combo is to die for.
BBQ onion stew- load up a crockpot with spanish onions, butter, boullion, and wine. stew till everything is happy 6+ hours. super awesome on top of burgers and dogs, or as a stand alone side.

3 Bean Salad:
l can cut green beans (or wax beans)
l can kidney beans
l can black beans
l small green pepper - chopped
l small onion - chopped
l/2 cup wine vinegar
l/2 cup olive oil
l/4 cup sugar
salt and pepper to taste
Mix and let sit for several hours
This is a coincidence because right now I have sitting on my counter cans of beans to make this salad this afternoon. Everyone loves this dish and it looks so pretty with the different colors and won't have to worry about refrigeration with this dish. God bless and thank your husband for his service to our country.
