I have a cupboard full of peanut butter! There is soooo much! I need an awesome pb cookie recipe (preferrably by tonight to surprise DH) and any other pb recipe/ideas you might have. Toddler friendly preferred, but I'll take anything as DH and I can enjoy afer babies go down at night. Thanks!!

*EDIT* Thanks for the concern - I have read about it like everyone else and looked up the ONE line of pb I buy before I posted. Also have read the ingredients and we're fine here.

No bake
Melt on stove 1 TBSP oil
1 cup PB
2 bags butterscotch chips

Add 5 cups CornFlakes
Stir together, drop on wax paper, let cool

My Grandma used peanut butter as frosting on chocolate cakes. It is also great with vanilla ice cream, apples, and celery (not all together). Here is a recipe for Peanut Butter Balls:
1/2 C Peanut Butter
3 TBS Margarine or butter (softened)
1 C Sifted Powder Sugar
8 oz Chocolate-flavored Confectioners' Coating

Stir together peanut butter and margarine or butter. Gradually add sugar, stirring until combined. Shape into 1" balls; place on waxed paper. Let stand till dry (about 20 minutes). Melt confectioners' coating. Cool slightly. Dip balls into melted coating; let excess drip off. Place on waxed paper; let stand till coating is dry. Makes about 30 pieces.

Readers, while there are no warnings to date for peanut butter sold in jars, please check out this FDA update for details about a CURRENT and growing salmonella outbreak in products made with peanut butter. The outbreak has sickened hundreds across the country and killed some:

This outbreak may turn out to be limited to processed foods made with peanut butter, so the jars in your cupboards might be fine. Particularly if your family has already eaten from open jars with no ill effects, there is probably no danger. But I'd be inclined to hold back on opening new jars until the full extent of this contamination is understood.

I love this recipe and it is even somewhat healthy besides the sugar. It is quick and easy and doesn't take hours and hours of baking either, you will love it. You can play with the sugar amounts a little bit but setting up takes a little longer the more you reduce the sugar. If you have trouble getting them to set up, put them in the refrigerator or freezer. My family's favorite cookies. :)

No Bake Chocolate, Peanut Butter, Oatmeal Cookies:

1/4 cup cocoa (unsweetened)
1 cup peanut butter
1/4 cup butter
1/2 cup milk (I use rice milk)
1/2 tsp salt
3 cups rolled oats
1 Tbsp vanilla
2 cups sugar

combine cocoa, salt, sugar in large sauce pan and mix together, add butter, peanut butter, and milk and bring to rolling boil on medium heat, stirring often. Boil at least 2 minutes, remove from heat, pour over oats, mix well, and stir in vanilla. Place by spoonfuls onto wax paper and cool.

It uses a lot more oats than peanut butter, but it doubles well, and will use up your peanut butter and be a protein filled and whole grain treat your family will love, and they freeze well. I was able to reduce the sugar by half a cup, it just doesn't set up quite as well, but is fine if you freeze them. It is also full of antioxidants from the chocolate. :)

Peanut butter pie- the easiest pie you can make. 1 jar of pb and 1 tub of whipped cream mix together ( the hard part lol ) then put into a pre-made grahm cracker crust and freeze for at least an hour.

My favorite no-bake pb recipe is a little hard to mix, but it's so good and has lots of healthy mama-milk-making fats in it!

1 cup peanut butter
1 cup honey
2 1/2 cups ground oats (dry oatmeal)
1/4 cup flax seed (ground or whole)
1/2 cup dry coconut
1/2 cup dried fruit like raisins or craisins or whatever

Mix and roll into 1" balls. Put in recycled quart-sized yogurt container. Separate layers with wax paper :) Store in fridge to harden. So good and good for you!

I have a good one for dinner.It takes about 5 minutes to make.

4 pkgs Chicken flavored Top Ramen
1 bag frozen mixed vegegables or edename peas

1/2 cup creamy peanut butter
1 tsp. sugar
1/8 tsp. crushed red pepper
3/4 cup hot water

In a large pot, bring 8 cups of water to a boil. Add noodles and vegetables and return to a boil.

In a small bowl, whisk the last ingredients together until smooth.
When the noodles and veggies are done, strain in collander. Pour back into pot and stir in the sauce. Mix well and serve. Serves 5.

Hi C.:) you're going to think i'm crazy, but I have the best pb cookie recipe EVER and it only has three ingredients. ONE cup sugar, ONE egg, and ONe cup of Peanut butter!
mix them, plop them, bake them. seriously! try it and let me know what you think. My mom and I make these at least once per week!

My husband loves No-Bake cookies (there are lots of alternative names for this one, Mountain bars, etc.)The greatest part, No BAKING! They are horribly sugar-filled, but delicious.

INGREDIENTS
2 cups white sugar
1/2 cup milk
1/4 cup butter
4 tablespoons unsweetened cocoa powder
1 cup peanut butter
3 cups quick-cooking oats
1 teaspoon vanilla extract

DIRECTIONS
In a medium saucepan, combine sugar, milk, butter, and cocoa. Bring to a boil, and cook for 1 1/2 minutes. Remove from heat, and stir in peanut butter, oats, and vanilla. Drop by teaspoonfuls onto wax paper. Let cool until hardened.

TIP: DO NOT add peanut butter till the end like directions say or the cookies won't set up. Also, make sure you use 1-minute quick-cook oats or they will be tuff. This stuff usually sets up pretty fast, so you have to work quick once you put in the peanut butter.

peanut butter snacks
mix peanut butter with dates, rasins, coconut flakes, Chocolate chips? and hemp seed or any other healthy stuff you like. Then roll into one inch balls and roll threw coconut.

Easy & Gooey!!!
Flour-less Peanut Butter Cookies

1 cup peanut butter
1 egg
1 cup sugar (you could use less!)

Mix peanut butter and sugar. Add egg

Drop by teaspoon on un-greased cookie sheet.
Bake @ 325 deg. for 10-12 minutes

Yummy dessert, breakfast or snack!

Blend bananas, peanut butter, honey & yogurt with berries in a blender. Stir in granola. Voila!!!

If you guys like spice, West African dishes frequently involve spices and peanutbutter (one PeaceCorps person I know didn't realize that the jars of peanut butter often came with spices ALREADY ADDED and made herself a pb+j ... ewwwwww!).

I had a great spinach+spicy peanut sauce dish once

Thai food also uses spices and peanuts, but that's a lot more complex to prepare

there should be some recipes on the web ('s where I get exotic recipes when I'm in the mood ;) ).
