Is anyone familiar with/using the paleo eating plan? I have tried it recently to aid in my fibro symptoms and just obtain better overall health and I really do notice a huge improvement. I am having great success with meals - stuffed peppers with cauliflower instead of rice, grass fed meats, lots of veggies, etc. My issue is snacks. I need a snack mid morning and mid afternoon but I am SO sick of nuts and other stuff! Is there anything you suggest for snacktime? I would even do something a little non healthy! =)

cucumber slices or lettuce leaves topped with tuna or shredded chicken (add spices and other veggies to taste)
hard boiled eggs
those sweet little peppers, plain
apples with almond butter
paleo truffles (basically you grind up raisins or dates, sunflower seeds and or cashews, almonds etc, cocoa powder or cacao nibs, cinnamon and roll em into little balls. I believe the recipe I used was at wholelifenutrition.com and it was super good, I see a lot of variations on Pinterest under "healthy truffles" or "paleo truffles"
I think you can sub coconut milk for cream (if coconut is on the paleo list) and make ice cream or popsicles, I have also made ice cream before by blending frozen bananas in the food processor and adding whatever flavors (berries, peanut butter, cocoa, etc.) it was pretty good and the banana flavor was very subtle.

Not sure if you're familiar with this site or not, but a friend of mine has been strictly Paleo for about 2 yrs now.
